Indomie Noodle Healthy Formulae Instead of the Commercial Formula

This investigation was carried out to evaluate some different seasoning made of onion, garlic, red chili, oregano, marjoram, basil, rosemary, cumin and black pepper to give light and healthy formulae to add to instant indomie noodle. Antioxidants were assessed in raw materials and their formulae, also sensory properties were evaluated in different instant indomie noodle seasoning formulae. The results in raw materials explored that the seasoning contains large amounts of antioxidants content, total carotenoids, volatile oil and antioxidant activity compared with the commercial formula. Corn oil was used as a carrier for the commercial formula and separated three tested spice formulae in ratio 1:100 w/w. Three chosen tested formulas;onion, garlic, red chili 1);oregano, marjoram, basil 2) and rosemary, cumin, black pepper 3) were used in the research. The results indicated that formula 3 has higher antioxidant activity (119.00%) than formula 1 and 2 (83.33% and 62.33%, respectively). Meanwhile, the results from sensory evaluation showed that no significant difference appeared from the different spice formulae. Biological experiment was carried out for these formulae and measured the liver reduced glutathione (GSH), superoxide dismutase (SOD), malonaldehyde (MDA), serum liver enzymes aspartate and alanine aminotransferases and alkaline phosphatase (AST, ALT and ALP), serum total protein, albumin and globulin also, renal function (uric acid, urea and creatinine) in rats fed on basal diet including oil carried the commercial formula or instant indomie noodle tested seasoning formulae. The results illustrated that the different instant indomie noodle seasoning formulae gave better results than the commercial formula in liver and renal functions. It could be recommended that consuming the suggested different seasoning formulae instead of the commercial questioned one as sodium glutamate prevent many harmful effects. The Impact of Hydrothermal Treatments on Technological Properties of Whole Grains and Soriz (<i>Sorghum oryzoidum</i>) Groats

Cereals and cereal products are the basic element in ensuring the food security of the population. Most cereal-based foods contain gluten. nutritional therapy is the only treatment for people with gluten-related disorders. No gluten-free products are manufactured in the Republic of Moldova, and the imported ones are sold at very high prices. In this context, Moldova is an unexplored field and research is required. The paper investigated the impact of hydrothermal treatments on whole grains and sorghum groats. It was found that whole grains and sorghum groats have a cooking time of about 130 and 40 minutes, respectively, which can be reduced by about 2 times by prior hydration in water. Hydration media and their concentrations (NaCl solutions;sol. NaHCO3 and C6H8O7 concentrations 0.5%;1.0% and 2.0%) differently influence the cooking time, mass, volume and firmness of the grains.

Heterocapsa bohaiensis ***.(Peridiniales:Dinophyceae):a novel marine dinoflagellate from the Liaodong Bay of Bohai Sea,China

A small armed dinoflagellate bloomed in the aquaculture ponds off the coast of Liaodong Bay, Bohai Sea of China, resulting in heavy mortalities of the cultured prawns （Penaeusjaponicus） and larvae of Chinese mitten handed crabs （Eriocheir sinensis）. The bloom-forming species was successfully isolated, and cellular morphology of the specimen was consequently investigated through light, fluorescent and electron microscopy. The small （（14.4±1.6） μm in length） ellipsoid cells show typical Heterocapsa thecal plate arrangement （Po, cp, 5′, 3a, 7″, 6c, 5s, 5′″, 2″″）. The episome is evidently bigger than the hyposome. One to three spherical pyrenoids are located above or beside the large elongated nucleus. The body scale is characterized by a triangle basal plate with one central upright and nine peripheral spines. Above all, Heterocapsa bohaiensis could be distinguished from other Heterocapsa species by the combination of the cell size, morphology, cellular structure and body scale. Sequence analyses of both ITS and LSU regions reveal the significant genetic divergence between H. bohaiensis and other established species in this genus, further supporting novelty of this species. Noticeably, different sample treatment methods resulted in morphological variation of the apical pore complex （APC） of H. bohaiensis, which needs to be taken into account in future study.

Rheological Modeling of the Effects of Adulteration on Nigerian Honey

Honey was serially diluted with different percentages of glucose, fructose and water and each was analysed rheologically at room temperature of 27°C. Pure honey exhibits thixotropic time-dependent rheological behaviour, the behaviour of glucose and fructose solutions in water (a Newtonian solvent) tends towards near Newtonian. The rheological profiles of pure and adulterated honey samples were determined using RV DV-III Ultra Programmable Rheometer at low rates of share. A Structural Kinetic Model was developed which provided good correlations with the rheological data. The new model was used to classify samples using their average molecular weights as one of the distinguishing parameters. Also the order of the kinetics in the new model suggests the number of active components in the “honey” undergoing deformation as 3. Carreau-Yasuda model was also improved upon to provide an independent assessment of average molecular weight of samples.

miR-137 inhibits melanoma cell proliferation through downregulation of GLO1

Late-stage melanoma is refractory to current therapies. MicroRNAs (miRNAs) can modulate many physiological and pathological processes of melanoma. Studies have demonstrated that miR-137 acts as a tumor suppressor by inhibiting the proliferation of melanoma cells through targeting multiple mRNAs. The glyoxalase system member glyoxalase 1 (GLO1) is the principal scavenging enzyme of methylglyoxal (MG), a toxic byproduct of glycolysis. Using 35S in vivo/vitro labelling analysis for dynamic proteomics (SiLAD), we found that miR-137 downregulated the expression of GLO1 in melanoma *** analysis predicted that GLO1 is a direct target of miR-137. This was validated by dual luciferase reporter *** RT-PCR (qRT-PCR) and western blot analysis indicated that miR-137 could decrease endogenous GLO1 ***, siRNA targeting of GLO1 mimicked inhibition of melanoma cell proliferation caused by miR-137 ***-expression of GLO1 was able to restore miR-137-mediated suppression of melanoma cell proliferation. Therefore, these results suggest that miR-137 inhibits the proliferation of melanoma cells by targeting GLO1.

Diabetes and Hypertension in a Santhal Tribe in Bangladesh: A Population Based Study

BACKGROUND: Santhal (Santals) tribe is one of the oldest and largest aboriginal pre Aryan populations in India and Bangladesh. There was no published report on the prevalence of diabetes and hypertension. OBJECTIVE: To determine the prevalence of type 2 diabetes mellitus (T2DM) and hypertension in a Santhal tribe of Bangladesh. RESEARCH DESIGN AND METHODS: Eight villages inhabited largely by Santhal tribe were purposively selected. All Santhals aged 20 years or more were considered eligible and enlisted for the study. Investigations included socio-demographic information (age, sex, education, income), clinical history (general illness), anthropometry (height, weight, waist-girth, hip-girth) and blood pressure. Body mass index (BMI) and waist-to-hip ration (WHR) were calculated. Blood samples were collected for fasting plasma glucose (FPG), total cholesterol (Chol), triglycerides (TG), urea and creatinine. RESULTS: Thirteen hundred eligible Santhals were enlisted. Of them, 1049 (80.7%) participated in the study. The male and female participants were 40% and 60%, respectively. The prevalence of T2DM was 0.6% and hyperglycemia (FPG > 5.5 mmol/l) was 10.0%. The prevalence of systolic hypertension (sHTN) was 24.4% and diastolic hypertension (dHTN) was 24.6%. Compared with the males the females had significantly higher prevalence of sHTN (OR, 2.20 with 95% CI, 1.62 - 3.02) and dHTN (OR, 1.81 with CI, 1.34 - 2.0);whereas, the prevalence of T2DM and IFG did not differ. Regarding obesity 45% of the participants had BMI 23.1. Logistic regression estimated that the increasing age, female sex, higher FPG (>5.5 mmol/l) and higher Chol (>160 mg/dl) had independent risk for sHTN and dHTN. CONCLUSIONS: The Santhals had less risk for diabetes but increased risk for hypertension. The Santhal females had excess risk of hypertension. Advancing age, female sex, hyperglycemia and hypercholesterolemia were found to have significant risk for hypertension. Obesity had no effect on diabetes

Effects of nanoparticles on devitrification and recrystallization of aqueous glycerol and PEG-600 solutions

Nanoparticles in solution offer unique electrical, mechanical and thermal properties due to their physical presence and interac- tion with the state of dispersion. This work is aimed to study the effects of hydroxyapatite （HA） nanoparticles on the behavior of devitrification and recrystallization of glycerol （60% w/w） and PEG-600 （50% w/w） solutions during warming. HA nano- particles of different sizes （20, 40, 60 nm） and concentrations （0.1%, 0.5%, w/w） were incorporated into solutions, and were studied by calorimetric analysis coupled with cryomicroscopy. The presence of HA nanoparticles has little effect on the devit- rification end temperatures, but affects the devitrification onset temperatures of glycerol and PEG-600 solutions. The investi- gation with the cryomicroscope observed that the ice morphologies of glycerol and PEG-600 solutions are dendritic and spher- ic respectively. The ice fraction of glycerol solution containing 0.1% HA with the size of 60 nm decreased to 2/5 of that of the solution without nanoparticles at -45℃. The ice fractions of PEG-600 solutions increased signifcantly between -64℃ and -54℃, and the ice fraction of PEG-600 solution without nanoparticles increased by 92% within the temperature range. The findings have significant implications for biomaterial cryopreservation, cryosurgery, and food manufacturing. The complexity of ice crystal growth kinetics in nanoparticle-containing solutions awaits further study.
