Combined Insights from Leachate Structure and Microstructure Characteristics for Eating Quality of Convenience Rice Processed by Super-Heated and Pressurized Steam Technologies

Convenience rice has become widely popular due to its easy availability for cooking. This study investigated the starch structure and composition of leachate and the microstructure of reheated convenience rice using novel processing technologies: super-heated steaming(SHS), auto-electric cooking(AEC), and pressurized-steam cooking(PSC). Additionally, the effect of two different target water contents(58% and 63%) was also evaluated. The PSC_63% sample had the highest total solids and amylopectin amount in the leachate. The amylopectin amount in the leachate differed significantly based on the targeted water content. Morphological characterization revealed that the swelling of starch and the coated layer on the surface of rice grains were most pronounced in the PSC_63% sample due to the pressure processing. The textural hardness of the AEC_58% sample was much higher than that of the other samples. The PSC_63% sample had the highest textural adhesiveness value, which can be attributed to the highest amylopectin amount in the leachate. Sensory characterization showed that the PSC_63% sample had the highest glossiness, whiteness, moistness, and overall acceptability. The principal component analysis score plots presented substantial differences in the leachate and textural and sensory characteristics of reheated convenience rice among the different processing technologies.

Effects of increasing the degree of building height asymmetry on ventilation and pollutant dispersion within street canyons

Rational urban design helps to build sustainable cities with high ventilation capacity and pollutant removal ca-pacity,but the effect of building height on ventilation and pollutant dispersion inside asymmetric canyons has not been fully *** this paper,we studied the effect of increasing the degree of building height asym-metry(DBHA)on canyon ventilation and pollutant diffusion in shallow and deep asymmetric street canyons by considering six different building height ratios(BHR=3/4,1/2,1/3,4/3,2/1 and 3/1).The results show that increasing the DBHA in asymmetric canyons can improve the ventilation and pollutant removal *** step-up canyons,increasing the downwind building height is very useful to improve ventilation and pollutant *** shallow/deep step-up canyons with BHR=1/3,the air exchange rate(ACH)increased to 211.2%and 380.1%of the flat canyons,*** spatially-average pollutant concentration in the pedestrian zones(leeward Kavg∗ang windward Kavg∗)decreases significantly with the increase of DBHA,especially for the deep step-up canyon with BHR=1/3,the leeward Kavg∗and windward Kavg∗decrease to 15.3%and 3%,***,increasing the upwind building height can also improve the ventilation capacity in the step-down *** the deep step-down canyon with BHR=3/1,the leeward Kavg∗and windward Kavg∗decreased to 40.6%and 24.1%of the deep flat canyon,***,the ventilation capacity is very low for step-down canyons with BHR=4/3,and for step-down canyons with BHR≥2/1,the ventilation capacity and pollutant removal capacity increase significantly with the increase of ***,in urban planning,step-down canyons with BHR=4/3 should be avoided and designed to satisfy the condition of BHR≥2/*** findings will be a valuable reference for urban designers to build sustainable cities with high ventilation capacity.

RIP140, a Janus metabolic switch involved in defense functions

Since its discovery almost 15 years ago, the receptor-interacting protein RIP140has been determined to be a corepressor of various transcription factors and nuclear receptors. Mice lacking the RIP140 gene are lean, exhibit resistance to high-fat diet- induced obesity and have increased glucose tolerance and insulin sensitivity. In 2008, RIP140 was determined to be a coactivator of nuclear factor-~cB, a master transcriptional regulator of inflammation in immune cells, including macrophages. This year, it was reported that RIP 140 degradation is involved in the resolution of inflammation and in endotoxin tolerance. The general picture that had emerged indicates that RIP140 is a ]anus metabolic switch that convergently regulates metabolic pathways involved in defense func- tions through its pleotropic interactions with transcription factors.

Functional analysis of the acetylation of human p53 in DNA damage responses

As a critical tumor suppressor, p53 is inactivated in human cancer cells by somatic gene mutation or disruption of pathways required for its activation. Therefore, it is critical to elucidate the mechanism underlying p53 activation after genotoxic and cellular stresses. Accumulating evidence has indicated the importance of posttranslational modifications such as acetylation in regulating p53 stability and activity. However, the physiological roles of the eight identified acetylation events in regulating p53 responses remain to be fully understood. By employing homologous recombination, we introduced various combinations of missense mutations （lysine to arginine） into eight acetylation sites of the endogenous p53 gene in human embryonic stem cells （hESCs）. By determining the p53 responses to DNA damage in the p53 knock-in mutant hESCs and their derivatives, we demonstrate physiological importance of the acetylation events within the core domain （Kt20 and K164） and at the C-terminus （K370/372/373/381/382/ 386） in regulating human p53 responses to DNA damage.
