To deepen the understanding in the effect of potassium lactate on the sensory quality and safety of Rugao ham,sensory attributes,physicochemical parameters,total volatile basic nitrogen(TVBN),microorganism community and biogenic amines of Rugao ham manufactured with different potassium lactate levels(0%,0.5%,1%,2%)were investigated;the relationship between microbial community and the formation of TVBN and biogenic amines was further *** the increase of potassium lactate from 0%to 2%,the increased sensory scores and the decreased total aerobic bacterial count and TVBN were observed;the abundance of Staphylococcus increased,while the content of Halomonas *** effect size(LEf Se)and correlations analysis showed that Staphylococcus equorum and Lactobacillus fermentum could be the key species to improve sensory scores and decrease biogenic amines and *** pathway analysis further showed that amino acids metabolism and nitrogen metabolism were mainly involved in decreasing TVBN and biogenic amines in the treatment of 2%potassium lactate.

[Objectives]This study was conducted to compare the effects of different curing processes on the characteristics of marinated beef.[Methods]Marinated beef was obtained by two curing processes:static curing and injection and vacuum tumbling *** effects of the two curing processes on the production rate,curing absorption rate,water content,soluble protein content,amino acid nitrogen content,texture characteristics and microstructure of the product were compared.[Results]Compared with static curing,the production rate of marinated beef increased by 10%,the curing absorption rate increased by 28%,the texture and microstructure were improved,and the water content increased,while the soluble protein content *** a result,the sensory score was *** was no significant difference in the content of amino acid nitrogen,but it decreased compared with raw *** sum up,injection and vacuum tumbling curing is more conducive to the processing of marinated beef.[Conclusions]This study provides a theoretical basis for the industrial production of marinated beef,and lays a foundation for in-depth exploration of injection and vacuum tumbling curing technique of marinated beef.

With the accelerated pace of life and the demand for dietary diversification,more and more people begin to pay attention to the convenience and health of diet,and the prepared dishes market is getting more and more attention and favor because of its characteristics of convenient and *** order to understand the acceptance of college students' to the prepared dishes market,this paper aimed to collect college students' views and suggestions on the prepared dishes market by means of a questionnaire *** analyzing the results of the survey,we found that college students' generally have a positive attitude towards prepared dishes markets,and they believe that prepared dishes provides convenient,fast and diversified dietary ***,some college students' have some concerns about the quality and food safety of the prepared dishes market,such as adding too many food additives and *** the research on college students' acceptance of the prepared dishes market,we can reveal the demand and potential problems of college students' for the prepared dishes market from the consumer s point of view,so as to provide a reference for the future development of the prepared dishes market.

Impact of Low-temperature Storage on Volatile Flavor Compounds in Prepared Pork Products

[Objectives]This study was conducted to explore the dynamic changes of volatile flavor compounds in prepared pork during storage at different low-temperature conditions.[Methods]Prepared pork was stored at 4,-4 and-18℃.The volatile flavor compounds of prepared pork were determined by solid-phase microextraction-gas chromatography-mass spectrometry(SPME-GC-MS)at days 0,7,14,21 and 28,and relative odor activity value(OAV),principal component analysis(PCA)and cluster analysis(CA)were combined to analyze changes in volatile flavor compounds of prepared pork during storage.[Results]The total number of volatile flavor compounds gradually decreased with the prolongation of the storage period,and OAV analysis identified 22 key flavor compounds(OAV≥1).The results of PCA and CA showed that 2-methyl-1-butanol,1-octen-3-ol,linalool,cineole,hexanal and nonanal were the main key flavor components,and the degree of flavor degradation was low under both superchilling and freezing *** 28 days of storage,the alcohol content in the chilling group was significantly higher than other two groups,and the overall content of volatile flavor compounds was also significantly higher than other two groups,indicating that the-4℃chilling storage was more favorable for maintaining the overall flavor of prepared pork.[Conclusions]This study provides a theoretical basis for finding a better storage method for prepared meat products.

Wide-bandgap(>1.7 eV)perovskites suffer from severe light-induced phase segregation due to high bromine content,causing irreversible damage to devices ***,the strategies of suppressing photoinduced phase segregation and related mechanisms have not been fully ***,we report a new passivation agent 4-aminotetrahydrothiopyran hydrochloride(4-ATpHCl)with multifunctional groups for the interface treatment of a 1.77-eV wide-bandgap perovskite film.4-ATpH^(+)impeded halogen ion migration by anchoring on the perovskite surface,leading to the inhibition of phase segregation and thus the passivation of defects,which is ascribed to the interaction of 4-ATpH^(+)with perovskite and the formation of low-dimensional ***,the champion device achieved an efficiency of 19.32%with an open-circuit voltage(V_(OC))of 1.314 V and a fill factor of 83.32%.Moreover,4-ATpHCl modified device exhibited significant improved stability as compared with control *** target device maintained 80%of its initial efficiency after 519 h of maximum power output(MPP)tracking under 1 sun illumination,however,the control device showed a rapid decrease in efficiency after 267 ***,an efficiency of 27.38%of the champion 4-terminal all-perovskite tandem solar cell was achieved by mechanically stacking this wide-bandgap top subcell with a 1.25-eV low-bandgap perovskite bottom subcell.

A novel chaotic stream cipher and its application to palmprint template protection

Based on a coupled nonlinear dynamic filter （NDF）, a novel chaotic stream cipher is presented in this paper and employed to protect palmprint templates. The chaotic pseudorandom bit generator （PRBG） based on a coupled NDF, which is constructed in an inverse flow, can generate multiple bits at one iteration and satisfy the security requirement of cipher design. Then, the stream cipher is employed to generate cancelable competitive code palmprint biometrics for template protection. The proposed cancelable palmprint authentication system depends on two factors： the palmprint biometric and the password/token. Therefore, the system provides high-confidence and also protects the user＇s privacy. The experimental results of verification on the Hong Kong PolyU Palmprint Database show that the proposed approach has a large template re-issuance ability and the equal error rate can achieve 0.02%. The performance of the palmprint template protection scheme proves the good practicability and security of the proposed stream cipher.

Embedding adaptive arithmetic coder in chaos-based cryptography

In this study an adaptive arithmetic coder is embedded in the Baptista-type chaotic cryptosystem for implementing secure data compression. To build the multiple lookup tables of secure data compression, the phase space of chaos map with a uniform distribution in the search mode is divided non-uniformly according to the dynamic probability estimation of plaintext symbols. As a result, more probable symbols are selected according to the local statistical characters of plaintext and the required number of iterations is small since the more probable symbols have a higher chance to be visited by the chaotic search trajectory. By exploiting non-uniformity in the probabilities under which a number of iteration to be coded takes on its possible values, the compression capability is achieved by adaptive arithmetic code. Therefore, the system offers both compression and security. Compared with original arithmetic coding, simulation results on Calgary Corpus files show that the proposed scheme suffers from a reduction in compression performance less than 12% and is not susceptible to previously carried out attacks on arithmetic coding algorithms.
