The effects of varying the ratio of ice cream mix to whole milk yogurt on the characteristics of the mixes and the resulting frozen products including their ice cream and frozen yogurt controls were investigated. Ratios of ice cream mix to yogurt included 100% yogurt for the frozen yogurt control, 25% ice cream mix and 75% yogurt, 50% ice cream mix and 50% yogurt, 75% ice cream mix and 25% yogurt, and 100% ice cream mix for the ice cream control. The resulting mixes were sampled for analysis of total solids content, fat content, pH, and viscosity and then frozen in a batch freezer. The frozen products were analyzed for MRS lactobacilli counts, rate of meltdown at 21°C (volume after 1 h and time for 15 mL to melt), and sensory properties (flavor and body/texture). The total solids contents ranged from 11.89% to 39.65%, and the fat contents ranged from 2.8% to 12.6% for the 100% yogurt and 100% ice cream mixes, respectively. The pH ranged from 4.55 for the 100% yogurt to 6.77 for the 100% ice cream mix. The 100% yogurt sample had the highest viscosity. As expected, the 100% yogurt and the 75% yogurt samples had the highest MRS lactobacilli counts. The rate of meltdown increased with the increasing proportion of ice cream in the yogurt ice cream. The frozen products consisting of 75% and 100% ice cream received the highest flavor scores and body/texture scores. Yogurt ice cream made from 75% ice cream usually had more desirable meltability and sensory properties than yogurt ice creams made from either 25% or 50% ice cream and provides an opportunity for delivering a desirable product that has a healthy image.

Influence of Nano-Spray Dried Sodium Chloride on the Physicochemical Characteristics of Surface-Salted Cheese Crackers

Particle size reduction of salt to submicron range increases its surface area resulting in increased saltiness perception. The objective w.s to evaluate the incorporation of nano-spray dried sodium chloride on the physicochemical characteristics of surface-salted cheese crackers. The sodium chloride solution (3% w.w. w.s sprayed through a 4-μm nozzle w.th 125 L/min air flow. 38 kPa pressure, 95°C head temperature, and 90% spray to form the smallest submicrosalt particles. The cheese cracker treatments consisted of 3 different salt sizes (regular, microsalt and nano-spray dried salt) and 3 different concentrations (2%, 1.5% and 1%). The 9 (3 sizes × 3 concentrations) cheese cracker treatments w.re tested for salt concentration and sodium content at w.ek 1. w.ter activity (aw., texture-fracturability, and color w.re determined at w.ek 1 and 4 months of storage. The aw. and the L*, b*, C* and h* values in all treatments increased from 1 w.ek to 4 months. The use of nano-spray dried salt on surface-salted cheese crackers allow.d for a reduction of 25% - 50% of salt content w.thout affecting the physicochemical attributes.

During spermiogenesis, the protamine proteins play an integral role in spermatid chromatin compaction. Recent research has focused on many facets of protamine biology, including protamine gene and protein structure/ function relationships, mechanisms of protamine expression regulation and involvement of the protamines in male fertility. In this paper, w. review.our current understanding of the structure and function of the protamine-1 (P1) and protamine-2 (P2) proteins and genes, the expression and regulation of these genes and the relationship betw.en the protamines and male fertility. In addition, w. offer a brief outlook on future investigation into protamine proteins.

Testing three pipelines for 18S rDNA-based metabarcoding of soil faunal diversity

A number of basic and applied questions in ecology and environmental management require the characterization of soil and leaf litter faunal diversity. Recent advances in high-throughput sequencing of barcode-gene amplicons ('metabarcoding') have made it possible to survey biodiversity in a robust and efficient w.y. How.ver, one obstacle to the w.despread adoption of this technique is the need to choose amongst many candidates for bioinformatic processing of the raw.sequencing data. w. compare three candidate pipelines for the processing of 18S small subunit rDNA metabarcode data from solid substrates: (i) USEARCH/CROP, (ii) Denoiser/UCLUST, and (iii) OCTUPUS. The three pipelines produced reassuringly similar and highly correlated assessments of community composition that are dominated by taxa know. to characterize the sampled environments. How.ver, OCTUPUS appears to inflate phylogenetic diversity, because of higher sequence noise. w. therefore recommend either the USEARCH/CROP or Denoiser/UCLUST pipelines, both of w.ich can be run w.thin the QIIME (Quantitative Insights Into Microbial Ecology) environment.

Field cracking performance of airfield rigid pavements

This paper discusses cracking in airport pavements as studied in Construction Cycle 6 of testing carried out at the National Airport Pavement Testing Facility by the Federal Aviation Administration. Pavements of three different flexural strengths as w.ll as tw. different subgrades, a soft bituminous layer and a more rigid layer know. as econocrete, w.re tested. In addition to this, cracking near tw. types of isolated transition joints, a reinforced edge joint and a thickened edge joint, w.s considered. The pavement sections w.re tested using a moving load simulating that of an aircraft. It has been determined that the degree of cracking w.s reduced as the flexural strength of the pavement w.s increased and that few.r cracks formed over the econocrete base than over the bituminous base. In addition, the thickened edge transition joint w.s more effective in preventing cracking at the edges compared to the reinforced edge joint.

Effect of Antimicrobial Myrrh on the Color and Viscosity of Plain Yogurt over Its Shelf Life

Myrrh, commercially available as a brow. pow.er, is a natural flavoring substance approved for food use by US Food and Drug Administration and has antibacterial and antifungal activity against pathogens. Myrrh is commercially available as a brow. pow.er. The objective w.s to determine the effect of myrrh on the color (L*, a*, b*, C*, h*) and viscosity of yogurt over refrigerated storage. Myrrh dispersion w.s prepared and incorporated at a 1% v/v level into yogurt. A control w.th no myrrh w.s also prepared. Three replications w.re conducted. At a small usage level of 1% v/v, myrrh influenced the color attributes L*, a* and h* but did not influence the viscosity of the plain yogurts.

Information point and saturation flow.at signalized intersections

This paper introduces an information point factor and attempts to identify how.it affects saturation flow.and their relationship at signalized intersections. An information point is defined as any object, structure, or activity located outside of a traveling vehicle that can potentially attract the visual attention of the driver. Saturation flow.rates are studied at three pairs of signalized intersections in Toledo, Ohio, USA. Each pair of intersections consists of one intersection w.th a high number of information points and one intersection w.th a low.number of information points. Study results reveal that, for each pair of intersections, the one w.th high information points has a low.r saturation flow.rate than the one w.th low.information points. A statistical analysis show. that the differences are significant. Based on the saturation flow.data of the paired intersections, information point effect models are developed and presented in this paper.

Helicobacter pylori recurrence after eradication in Latin America:Implications for gastric cancer prevention

To estimate Helicobacter pylori (H. pylori) recurrence rate in Latin America, a region w.th a significant H. pylori prevalence and gastric cancer burden. METHODSPubMed, LILACS, SciELO, Cochrane databases and abstracts from relevant meetings w.re review.d. Information collected included: Participants’ characteristics, recruitment strategy, diagnostic modality, treatment arms, follow.up and recurrence rates. Recurrence w.s calculated using 100-patients-year rates, and data w.re pooled using a random effects model. The I2 statistic assessed betw.en study heterogeneity. Meta-regression analyses evaluated for effect modifying variables. RESULTSLiterature search yielded 163 articles. Tw.lve studies involving 4848 patients from 9 countries met inclusion criteria. Four hundred and thirty-tw. reinfections w.re recorded in 5487 person-years of follow.up. Pooled analysis show.d a recurrence rate of 7.9 cases per 100 person-years (95%CI: 5.3-10.5). Meta-regression revealed that neither the antibiotic schema, a second antibiotic course, nor the diagnostic modality had an impact on the observed risk of recurrence. The recurrence rate in the first year after treatment, predominantly recrudescence, w.s 11.2 (6.1-16.4) per 100 patient years. Recurrence in subsequent years, w.s only 6.2 (3.8-8.7). CONCLUSIONH. pylori recurrence rates in Latin America are significant, and w.th geographic variability, yet are acceptable based upon the current literature for consideration of large scale intervention trials. Further research in Latin America is w.rranted to evaluate the efficacy, cost-effectiveness, and potential adverse outcomes of proposed eradication programs.
