Study on Biogenic Amines in Various Dry Salted Fish Consumed in China

This study was carried out to investigate the biogenic amines(BAs), physicochemical property and microorganisms in dry salted fish, a traditional aquatic food consumed in China. Forty three samples of dry salted fish were gathered from retail and wholesale markets and manufacturers, which had been produced in various regions in China. Cadaverine(CAD) and putrescine(PUT) were quantitatively the most common biogenic amines. About 14% of the samples exceeded the histamine content standards established by the FDA and/or EU. The highest histamine content was found in Silver pomfret(Pampus argenteus)(347.79 mg kg^(-1)). Five of forty three samples exceeded the acceptable content of TYR(100 mg kg^(-1)), and 23.26% of dried-salted fish contained high contents of biogenic amines(above 600 mg kg^(-1)). In addition, species, regions, pickling processes and drying methods made the physicochemical property, microorganisms and biogenic amines in dry salted fish to be different to some extents. The total plate count(TPC) was much higher than that of total halophilic bacteria in all samples. The biogenic amines, physicochemical property and microbiological counts exhibited large variations among samples. Furthermore, no significant correlation between biogenic amines and physicochemical property and TPC was observed. This study indicated that dry salted fish may still present healthy risk for BAs, depending on the processing methods, storage conditions among others.

We investigated the Fe^(2+)chelating properties and the mechanism of improving Fe^(2+)bioavailability of the Fe^(2+)chelating peptide(GLPGPSGEEGKR,peptide-G-R).Fe^(2+)was chelated with the carboxyl oxygen atom of the Glu-Glu residue in the form of monodentate and bidentate chelating *** chelation,peptide-G-R was folded and aggregated to form spherical particles with increasing particle ***-G-R could increase the Fe^(2+)transport/retention/uptake rate and the relative expression levels of divalent metal transporter 1(DMT1)in the Caco-2 cells monolayer ***-G-R could reverse the inhibition of phytic acid on the Fe^(2+)utilization in the Caco-2 cells monolayer *** dynamics simulation showed that peptide-G-R interacted with DMT1 in the form of intermolecular hydrogen *** transport mechanism of the peptide-G-R-Fe^(2+)complex included endocytosis(main pathway),paracellular pathway(auxiliary way),and DMT1(potential pathway).Thus,peptide-G-R derived from tilapia skin collagen could be used as a dietary iron supplement.

The emerging Au-assisted exfoliation technique enables the production of a wealth of large-area and high-quality ultrathin two dimensional(2D)***,damage-free,and reliable determination of the layer number of such 2D films can greatly promote layer-dependent physical studies and device ***,an optical method has been developed for simple,high throughput,and accurate determination of the layer number for Au-assisted exfoliated MoS_(2)and WS_(2)films in a broad thickness *** method is based on quantitative analysis of layer-dependent white light reflection spectra(WLRS),revealing that the intensity of exciton-induced reflection peaks can be used as a clear indicator for identifying the layer *** simple yet robust method will facilitate fundamental studies on layer-dependent optical,electrical,and thermal properties and device applications of 2D *** technique can also be readily combined with photoluminescence(PL)and Raman spectroscopies to study other layer-dependent physical properties of 2D materials.

Adaptations of ciliates to hypoxic environments have arisen independently several *** on mitochondrion-related organelle(MRO)metabolisms from distinct anaerobic ciliate groups provide evidence for understanding the transitions from mitochondria to MROs within *** deepen our knowledge about the evolutionary patterns of ciliate anaerobiosis,mass-culture and single-cell transcriptomes of two anaerobic species,Metopus laminarius(class Armophorea)and Plagiopyla ***(class Plagiopylea),were sequenced and their MRO metabolic maps were *** addition,we carried out comparisons using publicly available predicted MRO proteomes from other ciliate classes(i.e.,Armophorea,Litostomatea,Muranotrichea,Oligohymenophorea,Parablepharismea and Plagiopylea).We found that single-cell transcriptomes were similarly comparable to their mass-culture counterparts in predicting MRO metabolic pathways of *** patterns of the components of the MRO metabolic pathways might be divergent among anaerobic ciliates,even among closely related ***,our findings indicate the existence of group-specific functional relics of electron transport chains(ETCs).Detailed group-specific ETC functional patterns are as follows:full oxidative phosphorylation in Oligohymenophorea and Muranotrichea;only electron-transfer machinery in Armophorea;either of these functional types in Parablepharismea;and ETC functional absence in Litostomatea and *** findings suggest that adaptation of ciliates to anaerobic conditions is group-specific and has occurred multiple *** results also show the potential and the limitations of detecting ciliate MRO proteins using single-cell transcriptomes and improve the understanding of the multiple transitions from mitochondria to MROs within ciliates.

Volatile organic compounds are important indicators of the characteristic flavor of traditional fermented fish products. In the present study, gas chromatography-ion mobility mass spectrometry (GC-IMS) and gas chromatography-mass spectrometry (GC-MS) were used to identify and quantify the volatile organic compounds (VOCs) in fermented sea bass. Thirty-six and 104 VOCs were identified by GC-IMS and GC-MS, respectively. Aldehydes were the principal contributors to the formation of the overall flavor of fermented sea bass. The characteristic VOCs in fermented sea bass were identified based on loading plots. GC-IMS and GC-MS, along with variable influence on projection (VIP), identified six and four VOCs as biomarkers, respectively, in fermented sea bass. This investigation demonstrated that GC-IMS could rapidly detect VOCs in a simple manner in fermented sea bass. The results of the present study also provide a theoretical basis for determining flavor formation in fermented sea bass.

Here， we aimed to study the changes in proteome of golden pompano fillets during post-mortem storage. TMT-labeled quantitative proteomic strategy was applied to investigate the relationships between protein changes and quality characteristics of modified atmosphere packaging (MAP) fillets during superchilling (-3 ℃) storage. Scanning electron microscopy was used to show that the muscle histology microstructure of fillets was damaged to varying degrees， and low-field nuclear magnetic resonance was used to find that the immobile water and free water in the muscle of fillets changed significantly. Total sulfhydryl content， TCA-soluble peptides and Ca2+-ATPase activity also showed that the fillet protein had a deterioration by oxidation and denaturation. The Fresh (FS)， MAP， and air packaging (AP) groups were set. Total of 150 proteins were identified as differential abundant proteins (DAPs) in MAP/FS， while 209 DAPs were in AP/FS group. The KEGG pathway analysis indicated that most DAPs were involved in binding proteins and protein turnover. Correlation analysis found that 52 DAPs were correlated with quality traits. Among them， 8 highly correlated DAPs are expected to be used as potential quality markers for protein oxidation and water-holding capacity. These results provide a further understanding of the muscle deterioration mechanism of packaging golden pompano fillets during superchilling.

From the discussion above, the 3G choice of China is difficult to makerapidly because of multiple complicated factors. Either delay or impulsion will be costly. So theChinese government regulators need intensive and careful study on key factors before making a rightdecision. But the following policy trends can be inferred: (1)The regulator will not use the auctionlike Europe to issue 3G licenses; (2)Three 3G standards will co-exist in China mobile market withmultiple 3G services competition; (3)The 3G licenses schedule of China will inevitably be associatedwith the market demand and standard mature.
