Fermentation characteristics and flavor properties of Hericium erinaceus and Tremella fuciformis fermented beverage

This study evaluated and compared the fermentative and flavor properties of Hericium erinaceus and Tremella fuciformis fermented beverage(HTFB)produced by four commercial lactic acid bacteria(LAB),i.e.,***,***,*** or *** *** four strains showed the probiotic potential of utilizing Hericium erinaceus and Tremella fuciformis as fermentation *** four LAB,*** produced significantly highest concentrations of total acids(76.16 g/L),while the viable count of HTFB inoculated with *** was the highest(7.18 log CFU/mL).The contents of bioactive components such as polyphenols and triterpenoids significantly increased after fermentation regardless of the *** fermentation process enriched the volatile profile and reduced the unpleasant flavors such as nonanal and *** to the relative odor activity values and PLS-DA analysis,a total of 8 volatile organic compounds were identified as markers with odor ***,the olfactory characteristics of the four beverages could be clearly distinguished by electronic *** electronic tongue results showed that the fermentation process increased the sourness and decreased the bitterness and astringency of the beverage,resulting in an improved taste *** sensory evaluation finally confirmed that HTFB inoculated with *** was the most acceptable product to consumers with high overall flavor ***,this work provided valuable information for the selection of premium fermentation strains to produce fermented edible fungi beverages with better nutritional and sensory qualities.

Extensive elucidations focusing on the efficient health promoting properties and high nutritional values of mushrooms have been expanded dynamically from the past few *** to its high quality of proteins,polysaccharides,unsaturated fatty acids,mineral substances,triterpenes sterols and secondary metabolites,mushrooms have always been appreciated for their vital role in protecting and curing various health problems,such as immunodeficiency,cancer,inflammation,hypertension,hyperlipidemia,hypercholesterolemia and ***,investigations in recent years have revealed the correlations between the health-promoting benefits and gut microbiota regulating effects induced by the mushrooms *** on the immense role in the nutritional and health benefits displayed by mushrooms have become an emergent task to *** present article overviewed and compiled the latest information correlated to the health benefits and underlying functional mechanisms of mushroom nutraceuticals,and concluded that the supplementation of mushrooms as a dietary composition could become a natural adjuvant for the prevention and treatment of several health diseases.

Effect of ultrasonic modification on the protective activity of Flammulina velutipes polysaccharide to prevent ethanol-induced injury on GES-1 cells

Flammulina velutipes(***)polysaccharides were modified by ultrasound at the rated power of 150 W and 900 *** monosaccharide composition,ultraviolet-visible,and Fourier transform infrared spectral characteristics of *** polysaccharides(FVP)and their ultrasonic modification products(U-FVPs)were *** protective effects of FVP and U-FVPs on human gastric mucosal cells GES-1 were confi rmed for the first *** mole ratios of glucose and galactose were decreased and the mole ratio of mannose was increased after ultrasonic *** with the original FVP and the FVP modifi ed by ultrasound of 150 W(U-FVP1),the FVP modifi ed by ultrasound of 900 W(U-FVP2)could better prevent ethanol-induced damage to GES-1 *** increasing ultrasound intensity,the protective effect of FVPs on GES-1 cells was significantly enhanced by more effective prevention of intracellular reactive oxygen species(ROS)production and more promotion of expression of triglyceride factor 2(TFF2),prostaglandin E2(PGE2),epidermal growth factor(EGF),and transforming growth factorβ1(TGF-β1)*** ultrasonic modifi cation might be an effective way to develop novel *** polysaccharides that could effectively resist the gastric injury caused by excessive alcohol consumption.

Auricularia polytricha possesses hypolipidemic effects and decreases lipid accumulation,leading to potential food additives for functional food *** this research,we explored the potential effects of *** noodles on hyperlipidemia and gut microbiota dysbiosis,and elucidated their possible regulatory mechanisms on lipid metabolism in high-fat diet(HFD)*** n oodles treatment signifi cantly(P<0.05)reduced body weight gain,hyperlipidemia and liver fat ***,*** noodles decreased the levels of serum total cholesterol(TC),total triglyceride(TG)and low-density lipoprotein cholesterol(LDL-C)compared with the HFD ***,*** noodles could enrich the diversity of gut microbiota by decreasing the ratio of Firmicutes to Bacteroidetes as well as the relative abundance of Deferribacteres and increased the relative abundance of Verrucomicrobia,which might contribute to the prevention of *** study indicated that *** noodles could modulate the gut microbiota and prevent hyperlipidemia and liver fat accumulation induced by HFD.

The purpose of the present study was to investigate the effect of participation in a health motivation-based intervention program on college students’smoking *** hundred and seventy smokers(mean age=19.0 years,151 males)from nine colleges and universities in Chengdu,China were randomly assigned to one of 5 groups that received between one and four sessions of the intervention,or no *** intervention sessions included sequential activities based on the stages of the process model of health *** group completed questionnaires assessing health motivation and smoking behaviors at pre-test,immediately post-intervention,and at one month *** indicated that the intervention program did improve participants’health motivation,and that was associated with reduced levels of smoking relative to *** greater the number of sessions,the greater the reduction in smoking.

Evaluation of physicochemical and functional properties of protein isolates from 5 edible mushroom species

Edible mushroom proteins are the promising ones with the advantages of complete essential amino acid profile and multiple functional activities. To reinforce their applications in functional food development， this study comprehensively evaluated the physicochemical and functional properties of protein isolates from 5 mushroom species， i.e.， Pleurotus eryngii (PEP)， Pleurotus ostreatus (POP)， Lentinula edodes (LEP)， Flammulina velutipes (FVP) and Hypsizygus marmoreus (HMP). Results showed that PEP， LEP， FVP， POP and HMP exhibited better protein solubility (PS)， water holding capacity (WHC)， emulsifying capacity (EAI)， and foaming capacity (FC) than those of soybean protein and pea protein isolates. PEP (51.95%) and POP (49.15%) had a higher amount of β-sheet structure. Principal component analysis and correlation analysis showed that the seven proteins could be divided into 3 clusters， and WHC， EAI and FC were significantly positively correlated with PS and β-sheet. The least gelation concentration of PEP (16%) and FVP (16%) at pH 6.0 and 7.0 was similar to PPI， and PEP showed better hardness， springiness and rheological properties than other proteins gels. Overall， our study showed that 5 edible mushroom proteins possessed excellent functionalities (except for gelling capacity)， which provided novel insights on unexploited sources of mushroom proteins used as protein-based foods in the food industry.

目的:探讨从可行性、合理性及公正性的角度利用关键业绩指标法构建手术室绩效二次分配方案,体现薪酬优劳优得,多劳多得,公平透明,激励护理人员积极性,为医疗机构手术室二次绩效分配提供参考。方法:组建科室绩效分配方案小组,查阅相关文献,结合本科室临床实际的绩效分配方案,利用关键业绩指标法构建手术室绩效二次分配方案初稿,通过焦点小组讨论,形成手术室绩效二次分配方案终稿。观察手术室绩效管理前后护理质量的满意度及手术室护理人员对新二次绩效方案的缺陷率。结果:实施绩效改革前后护理人员对绩效改革的满意度由60.9%升高到95.7%,差异有统计学意义(P<0.05);实施新绩效分配方案前后护理质量的缺陷率由13.0%降低到3.4%,差异有统计学意义(P<0.05)。结论:基于KPI手术室绩效分配方案后,手术室实施护理人员岗位绩效分配方案后可以提高护理质量、护理人员工作积极性及护理人员对绩效分配的满意度。
