Effect of Combining Ultrasound and Mild Heat Treatment on Physicochemical, Nutritional Quality and Microbiological Properties of Pineapple Juice

Increasing consumer awareness regarding the health benefits of different nutrients in food has led to the requirement of assessing the effect of food processing approaches on the quality attributes. The present work focuses on understanding the effects of ultrasound (US) processing, mild heat pasteurization (65°C for 15 min), thermal pasteurization (80°C for 15 min) and their combination on physicochemical, microbiological properties and nutritional quality of pineapple juice through 60 days of storage at room temperature. Ultrasound treatment showed significantly lower browning degree. Ultrasound followed by ultrasound combined with mild heat pasteurization (UMP) treatments was effective in retaining the total phenolic content of pineapple juice as compared to the thermal treatment or the untreated juice sample at room temperature during 60 days of storage. Thermal pasteurization (TP) followed by ultrasound combined with mild heat pasteurization (UMP) and ultrasound (US) treatment, in increasing order, was found to be effective in delaying microbial growth in pineapple juice. This study demonstrates that ultrasound combined with mild heat pasteurization treatments could be able to effectively inactivate the microorganisms and pectin methylesterase in pineapple juice whilst preserving relatively high amount of phenols.

Napoleonaea vogelii, Lecythidaceae family is a tropical evergreen shrub widely distributed in the coastal regions of West African countries including Benin. It is a medicinal plant whose leaves and bark are of great utility in traditional medicine. Despite its importance, it is little used in ethnoveterinary medicine and its pharmacological basis in this field and especially in the treatment of parasitic diseases caused by Haemonchus contortus is very little documented. This review aims to synthesise existing data on the chemical composition, pharmacological and zootechnical usefulness of N. vogelii and to identify the gaps of these works in order to propose research perspectives. Google Scholar database was used to gather the majority of useful information available on N. vogelii. The results showed that of the 23 publications included in the present study, 60.87% dealt distinctly with the pharmacological properties of N. vogelii. These properties include anthelmintic, antidiabetic, wound healing, antimicrobial, antibacterial, anti-inflammatory, antioxidant properties and N. vogelii contains many secondary metabolites including alkaloids, tannins, flavonoids, saponins, glycosides which give it its pharmacological properties. The Correspondence Factor Analysis performed for the variables extracts and chemical compounds showed that the presence of a given chemical compound is not dependent on the type of extract. This work has gathered information on N. vogelii and found that the species has powerful therapeutic potentials but very little use in traditional veterinary medicine. Chromolaena odorata L (Asteraceae) is a bad invasive plant, found in the humid tropics and sub-tropics worldwide. It is used against dysentery, diarrhea, malaria, wound healing, headache and toothache in traditional medicine. In the present study, we investigated the antibacterial activities of different leaves extracts of Chromolaena odorata L. (cyclohexane, dichloromethane, ethyl acetate and butanol) against four clinical diarrheal strains (Klebsiella oxytoca, Salmonella enterica, Shigella sonnei and Vibrio cholera). We demonstrated that C. odorata leaves extracts show an antibacterial activity between 0.156 and 1.25 mg/mL. Bioassay-guided chromatography by bioautography with iodonitrotetrazolium-based colorimetric assay allowed the isolation and identification of two active compounds. After the combination of RP-HPLC, mass spectrometry analysis, 1D and 2D-NMR spectroscopy, we isolated and characterized two active molecules corresponding to 3’,4’,5,6,7-Pentamethoxyflavone (Sinensetin) and4’,5,6,7-Tetramethoxyflavone (Scutellareintetramethyl ether).
