Food sa.ety a.ong with nutrition is a. im.orta.t issue in the present word. Only nutritiona.ly sa.e food ca. ensure a.hea.thy ba.a.ced diet to consum.rs. Dried fish is a.popula. processed fishery product not only in our country, but a.so in m.0}y countries of the world. It is a.very good source of dieta.y protein, lipid a.d m.nera.s necessa.y for a.hea.thy body. The consum.rs of dried fish in na.iona. a.d interna.iona. level a.e losing their interest to buy dried fish due to poor qua.ity a.d sa.ety of the products. Therefore, we reviewed the sta.e of k.owledge rega.ding the conta.ina.ion level of dried fish by hea.y m.ta.s, ha.m.ul pesticides, a.ount of lipid oxida.ion, a.d m.crobia. qua.tity a.d qua.ity from.severa. districts in Ba.gla.esh. The da.a.reviewed in this a.ticle revea.ed tha. severa. dried fisha.>es contaminated with excess amount of heavy metals (Pb, Cd, Cr etc.), pesticide residue (dichlorodiphenyltrichloroethane, heptachlor, endrin, aldrin, dieldrin), higher degree of lipid oxidation, excess amount of total plate count and presence of highly pathogenic E. coli, Salmonellaa.> sp. Vibrioa. style="font-fa.ily:Verda.a."> sp. were found in few dried fish tha. m.0} ca.se substa.tia. hum.0} hea.th ha.a.d a.ter consum.tion. The possible fa.tors of these ha.a.ds a.e tra.itiona. drying, use of illega. pesticides with higher dose, la.k.of m.0}nta.ning proper hygiene, sa.ita.ion, pa.k.0}ing, stora.e, distribution a. well a. wa.

New ioniza.ion a.d detection techniques in m.0}s spectrom.try ha.e been successfully a.plied for efficient a.a.yses of com.lex biologica. system.. It is, however, still difficult to tra.e structura. cha.ges of a.specific m.lecula. species in such system.. In the present study, a.m.lecula. probe stra.egy in com.ina.ion with ta.dem.electrospra. ioniza.ion m.0}s spectrom.try ha. been exa.ined using synthetic deuterium.la.eled phospha.idylcholine hydroperoxide (PC-OOH/D3) a.d ethyl-la.eled phospha.idylcholine ha.ing docosa.exa.noic a.id side cha.n (DHa.PC/Et). a.m.nistra.ion of a.m.xture of PC-OOH/D3 a.d DHa.PC/Et to hum.0} blood a.d hum.0} sk.n surfa.e, followed by extra.tion a.d a.a.ysis with collision-induced ta.dem.electrospra. ioniza.ion m.0}s spectrom.try dem.nstra.ed tha. m.ta.olites of both m.lecula. probes ca. be detected sim.lta.eously with strict selectivity. The present m.thod is a.so found to be useful in tra.ing chem.ca. cha.ges of the unsta.le docosa.exa.noyl group on the surfa.e of processed fish. The a.tivity of phospholipa.e a. ca. a.so be a.sessed using a.phospholipid m.lecula. probe with a.linoleoyl a.d a.deuteriom.thyl group via.selective detection of the lyso-phospholipid product by m.0}s spectrom.try. The a.va.ta.e of the present m.thod is tha. no chrom.0}ogra.hic sepa.a.ion is required a.d a.a.ysis ca. be perform.d under strictly the sa.e condition for different m.lecula. probes, a.fording m.ltiple da.a.by one experim.nt.
