摘      要:Mastitis is an inflammatory immune reaction of the mammary *** is the most economically devastating disease affecting the world’s dairy *** of somatic cell count(SCC)is commonly used for monitoring the disease and also the quality of raw *** mastitic milk the concentration of blood serum albumin,immunoglobulin and lactoferrin increase whereas the content of lactose,casein and fat *** activity increases during mastitis because of higher activity of plasmin as the main proteolytic enzyme in mastitic milk, cathepsin B,cathepsin D,cathepsin G,elastase and the other *** main purpose of this research was to determine the effects of elevation in somatic cell counts on proteolysis of raw milk. Raw milk samples were collected from the dairy cattle in three different levels of ***, medium and high SCCs were considered as lower than 200000,200000 to 800000 and more than 800000 SCC,*** SCC,total nitrogen(TN),non casein nitrogen(NCN),casein nitrogen(CN),CN/TN were analyzed,and also casein proteolysis products were determined by gradient polyacrylamide *** study revealed that there wasn’t any significant difference between total nitrogen content in the raw milk with high and low SCC,but elevated SCC is associated with an increase in the concentration of NCN and a decrease in CN/TN. Electrophoresis study showed that bovine mastiffs increases the proteolytic activity of milk resulting in decreased amounts of α- casein and β-casein due to enzymatic *** can be concluded that by elevating the enzymatic activity in mastitic milk,hydrolysis of milk proteins, especially casein in high somatic cell milk samples occurs.
