Detection of Gluten in Dishes Offered as Gluten-Free in a Gastronomic Area Located in San José, Costa Rica

Celiac disease, gluten sensitivity and gluten intolerance are health conditions that require consumers to avoid their gluten intake. In Costa Rica, Law 8975 regulates the amount of gluten permitted in prepackaged products labeled as “gluten-free”, but the parameters to be followed are not mandated for food service operations. This study investigated whether restaurants with gluten-free (GF) options in a gastronomic area of the city of San José, Costa Rica, achieved the requirements of the legislation that the dishes offered should contain less than 20 ppm gluten. Using data collected from five restaurants offering GF dishes, two provided dishes with quantities of gluten greater than 20 ppm (restaurant A, four samples and restaurant B, three samples);particularly dishes from the category “meat with sauce”. Although those dishes are naturally gluten-free, when they are handled in areas of shared production, they are exposed to the risk of cross contact, furthermore the adding of misscellaneous such as: marinades, sauces and condiments, which could contain traces of gluten or hidden gluten, a risk associated with the use of ingredients without certification GF (supplier’s practices and label declaration). Therefore improvements in food service procedures should be enforced. The findings of the present study emphasize the need to include restaurant foods in the relevant legislation to ensure that the gluten-intolerant sector of the population remains safe when eating out.

Antimalarial Activity of an Alkaloid Mixture Isolated from the Tender Leaves of the Nectandra membranacea （Laureaceae）

Despite the breadth of knowledge about malaria, its transmission, preventive measures and available treatments and its difficulty in controlling the vector and the rapid spread of resistance to current drugs, there is a stimulus to develop new research looking for active molecules. The phytochemical studies of the active extract confirmed the presence of alkaloids, flavonoids, coumarins, tannins, reducing compounds, anthocyanins, terpenes, triterpenes and steroids. In the present work, it was possible to isolate a mixture of isoquinolinic alkaloids from the tender leaves of Nectandra membranacea （Laureaceae） with antimalarial activity. The mixture composed of （-） - gliazovine and （＋） - aplogliazovine showed an IC50 value of 32.18 μg/mL against the P. berghei NK65 strain. It is important to continue with these studies and their chemical components isolated from N. membranacea that could be used as an alternative the treatment of malaria.

Background:MundoComm is a current NIH-funded project for sustainable public health capacity building in community engagement and technological advances aimed at improving maternal health *** to four teams are selected annually,each consisting of three healthcare professionals and one technical person from specific low and middle income countries(LMICs)including Costa Rica,Dominican Republic,Honduras,and other *** is a course with three parts:in-person workshops,online modules,and mentored community engagement *** annual 1-week on-site“short courses”convened in Costa Rica are supplemented with six monthly online training modules using the Moodle®online platform for e-learning,and mentored project *** year-long course comprises over 20 topics divided into the six modules-each module further segmented into 4 week-long assignments,with readings and assigned tasks covering different aspects of community-engaged *** content is peer reviewed by experts in the respective fields from University of Rochester,ucimed in Costa Rica,and faculty from Costa Rica and the Dominican Republic who maintain regular contact with the trainees to mentor learning and project *** purpose of this paper is to report the first year results of the MundoComm ***:Both quantitative and qualitative feedback(using online data capturing forms)assess baseline and posttraining knowledge and skills in public health project ***:The course currently has one team each in Costa Rica,the Dominican Republic,and Honduras for a total of 12 *** course and modules include best practices in information and communication technologies(ICTs),ethical reviews,community engagement,evidence-based community interventions,and e-Health *** maximize successful and culturally appropriate training approaches,the multi-media didactic presentations,flexible distance learning strategies,and the use of tablets for offline
