Enzymatic hydrolysis,isolation,and purification might make a great deal of difference in antioxidant activity and antigenicity of peptide *** study aimed to isolate and purify antioxidant peptide components from Antarctic krill and evaluate their allergenicity of *** paramagnetic resonance(EPR)spectroscopy results indicated 3-10 kDa Antarctic krill hydrolysates(AKHs)had higher DPPH and·OH radical scavenging *** the second component(N2-2)purified 3-10 kDa hydrolysate showed better ability to scavenge DPPH and·OH radicals(P<0.05),which were(47.43±2.18)%and(34.33±1.25)%,***,indirect-ELISA results revealed that N2-1 had a weaker ability to bind specific IgE and that N2-2 had a lower binding capability to specific IgG1(P<0.05).And N2-2 had a higher EC50 value of(5.29±0.95)ng/mL(P<0.05)in cell degranulation assay,which was about 13.80 times that of Antarctic ***,N2-2 might be the potential source of the antioxidant peptides with lower allergenicity.

The antineoplastic activity of polysaccharide was investigated in Stichopus chlorontus, Isostichopus badionotus, Stichopus horrens and Holothuria lessoni massin. Crude polysaccharide was prepared with enzyme hydrolyzation method and purified by anion exchange chromatography using DEAE-sepharose fast flow column. The effect of polysaccharide on cells apoptosis of SiHa and U87 was examined with cell counting kit-8 colorimetry method. Western blotting was used to analyze related proteins of cellular apoptosis including p53 and Bcl-2. Results showed that there were two main components in each sea cucumber polysaccharide, which could be eluted down by 1.0 mol/LNaCl solution. The four types of polysaccharide in the second component were named as SC-2, IB-2, HLM-2 and SH-2, respectively. They were used for comparing the antineoplastic activity. Results showed that SC-2, IB-2, HLM-2 and SH-2 could promote apoptosis of U87 and SiHa cells. SH-2 and HLM-2 were selected for the subsequent experiment to explore the additional effect of U87 and SiHa cells, The protein expressions of Bcl-2 and p53 decreased considerably with the increase of polysaccharide concentration in U87 cells. In SiHa cells, protein expressions of Bcl-2 and high dosage group of p53 decreased significantly, whereas no obvious decrease was observed in other groups. The polysaccharides are more effective in promoting apoptosis of U87 and SiHa cells from S. horrens and H. lessoni massin than from the rest species.

Optimization of Osmotic Drying Parameters for Button Mushroom (<i>Agaricus bisporus</i>)

Response surface methodology was used to investigate the effect of brine concentration (10% - 20%) solution temperature (35℃ - 55℃), and duration of osmosis (30 - 60 min) with respect to water loss (WL) and salt gain (SG). The solu- tion to sample ratio of 5/1 (w/w) was used. The Box-Behnken design of three variables and three levels including seventeen experiments formed by five central points were used for optimizing input parameters. Linear, quadratic and interaction effects of three variables were analyzed with respect to water loss and solid gain. For each response, second order polynomial models were developed using multiple regression analysis. Analysis of variance (ANOVA) was per- formed to check the adequacy and accuracy of the fitted models. The response surfaces and contour maps showing the interaction of process variables were constructed. The optimum operating conditions were: solution temperature 44.89℃, brine concentration of 16.53 per cent and duration of osmosis of 47.59 min. At this optimum point, water loss and salt gain were predicted to be 44.55 per cent and 2.98 percent respectively.

The Manchurian walnut(Juglans mandshurica Maxim.) is rich in proteins, whereas this resource has not been used efficiently. The antifatigue, antioxidative and immunoregulatory effects of Manchurian walnut hydrolysate peptides(MWHPs)were evaluated in this study. MWHPs with a degree of hydrolysis of 32.23% were ultrafiltered and divided into three fractions,namely, high(> 10 k Da), medium(3–10 kDa), and low molecular weight(second and fourth weeks of MWHP administration. Results showed that low-molecular-weight MWHPs exerted significant antifatigue(prolonging swimming time, elevating liver glycogen contents, and reducing lactic acid contents), antioxidative(enhancing superoxide dismutase(SOD), GSH-Px, and catalase(CAT) activities and reducing malondialdehyde(MDA) content), and immunoregulatory(raising the immune-organ index and promoting T-lymphocyte proliferation and s Ig A secretion in the intestinal tract) effects. This research indicates that MWHPs have potential applications in health care and may be developed as a base for new functional foods.

Polypropylene samples with fullerene C60, fullerenol C60（OH）24, 1010, C60/168, C60-OH/168 and 1010/168 as antioxidants were prepared by extrusions. MFR, YI, TGA and OIT of all the samples were tested. According to the results of MFR, during the melt extrusion, fullerene showed excellent stability effect on PP. The antioxidative ability of fullerene was comparable to the traditional antioxidant 1010. The antioxidative ability of fullerenol was not significant in the first extrusion and it accelerated the degradation of PP in the second and the third extrusions. TGA and OIT tests showed that the stability effects of fullerene and fullerenol were slightly lower than antioxidant 1010. In the first time, antioxidant 168 was reported to show great synergistic effects with fullerene and fullerenol as antioxidants, which sussested a simple way to enhance the antioxidative abilities of fullerene and fullerenol.

To investigate the effects of different calcium salts on the physicochemical properties of myosin,the intermolecular interactions,particle size,surface hydrophobicity,reactive sulfhydryl group content and rheological properties of sliver carp myosin with the addition of four different kinds of calcium salts (CaCl_(2),calcium citrate (CC),nano-hydroxyapatite (HAP),tricalcium phosphate (TCP)) during gel processing were *** results showed that the addition of CaCl_(2) promoted the unwinding of α-helix,the increase in hydrophobic interactions,the formation of disulfide bonds of myosin,and increased the viscoelasticity of ***,the addition of calcium citrate (CC) enhanced the hydrophobic interaction between myosin molecules,and the viscoelasticity of CC-added myosin was second only to the CaCl_(2)-added *** the contrary,the addition of HAP and TCP interfered with the hydrophobic interaction between myosin molecules,and greatly reduced the viscoelasticity of *** summary,calcium with high calcium release rate can improve the physicochemical properties of myosin,HAP and TCP with a very low calcium release rate interfered with the formation of myosin *** it could be concluded that the calcium ions played a leading role in the physicochemical properties of myosin,the more calcium ion that the calcium salt can release,the better physicochemical properties the myosin *** work may provide an insight into the phenomenon why different kinds of calcium salts differ from each other on affecting the physicochemical properties of myosin during gel processing.

Fructo-oligosaccharide （FOS） is a type of dietary fiber. It can not be digested by enzymes in the body. It also helps to improve a digestion in the intestine, an excretion system and prevent the cancer. Jerusalem artichoke is scanned and analyzed by High Performance Liquid Chromatography （HPLC） for quantity of FOS. They are selected for extraction and drying process. Studies on the extraction for a powder making, the conditions are optimum for maximum yield. Experiments manage using a factorial real 2 × 4 × 6 in 2 blocks of Randomized Complete Block Design （RCBD） models. The first factor studies on two types of solvent. The second factor is the four levels of temperature in the extraction with water at 25 ℃, 35 ℃, 50℃ and 60℃ for 30 min. The third factor is the ratio of sample per solvent as 5, 6, 10, 15, 20 and 30 times. The data and comparison of average is analyzed by Duncan＇s New Mutiple Range Test at the significant level 0.05. The concentrated extracts are processed to powder by freeze drying, a hot air and vacuum drying. Optimal conditions control the temperature and time by heating in both vacuum and conventional oven. The results of temperature on the extraction are significantly different at a = 0.05. In drying process with high temperature, the color of product is more yellow （b） and less white （L）. The difference of color value is statistically significant at level a = 0.05. The sensory evaluation of food products are added the extracted powder and attribute by panelist. High level acceptance of product is aspectual about texture and flavor. FOS is the trend of functional foods for health. It is focus on low energy and on obesity including increasing the absorption of calcium.

Hippophae rhamnoides ***(Rha)and ***(Tib)are two species of sea buckthorn which distribute in Qinghai-Tibet *** results showed that both sea buckthorn leaf exhibited high total phenolic and flavonoid content,and Rha leaf showed much higher *** addition,66 phenolic compounds were detected,belonging to classes of benzoic acid derivatives,flavonols,flavanols,flavanones,and so *** of benzoic acid derivatives and flavonols were most abundant,among them ellagic acid and rutin were the most and second abundant ***,methyl gallate,2,6-dihydroxybenzoic acid,4-hydroxybenzoic acid,gentisic acid,narcissin,astragalin,nicotiflorin,prunin,procyanidin B3,cyanidin 3-O-rutinoside chloride,delphinidin 3-glucoside,gallocatechin,taxifolin,aromadendrin and trans-3,3′,4′,5,5′,7-Hexahydroxyflavanone were the first time to be identified in SBT ***,significant free radical scavenging effects of ABTS and DPPH,ferric reducing antioxidant ability,cellular antioxidant properties and anti-proliferation activity against HepG2 cells were observed in the aqueous ethanol extracts of sea buckthorn *** Rha showed stronger inhibitory effects,which might due to the higher content of total phenolic and flavonoid *** finding clearly supported that Rha leaf as a wild and non-pollution plant could be a better choice as a healthy food resource.
