An effective risk management system covering the whole process of food production from “farm to fork” is required by the food industry in order to assure that the food provided to consumers is safe. Food safety and quality assurance begins with the design and development of food products starting with product conceptualisation and continuing with the selection, purchasing, and evaluation of raw materials and with the specifications for processing, packaging and distribution. Within a larger quality management framework a number of tools have been developed by the food industry, which when used in an integrated fashion facilitate the management of food safety. These include good manufacturing practice (GMP), good hygiene practice (GHP) and HACCP (hazard analysis critical control point) as well as quality systems which allow the verification that all factors affecting the safety of a product are under control. Finally, regulations and systems can only function if they are applied. Everyone, from the farmer, the line operator in the manufacturing plant, to the person handling the food in distribution and sales, needs to be aware of his influence with regards safety. The effectiveness of safety awareness programs specific to each area is key to an industry approach to risk management.

Design and Synthesis of α, β-Epoxyketones as New Anticancer Agents

As epoxy functional group has high anticancer activity, α, β-epoxyketones were designed and synthesized as new anticancer agents, and their structures were confirmed by UV, 1H NMR, IR, MS technigeces and elemental analysis. Their in vitro anticancer activities were evaluated by MTF method and the results showed that the compound 4c exhibited good activity with IC50 of 17.8, 22.0 and 24.1 μg/mL against A-549, Hela and HepG2 cells, respectively. The dose of LD50 of the mice by intragastric administration was 1864.4 mg/kg. Therefore, the α, β-epoxyketones could potentially provide as new anticancer agents.

Modeling the THz spectrum of the bentazon

Terahertz （THz） spectra of bentazon are determined within the range of 0.3 2.4 THz at room *** functional methods are used to compute the THz spectra using three different programs：Gaussian03 for isolated-molecule form,DMol 3 and CRYSTAL09 for solid-state *** the three,the computed THz spectrum of CRYSTAL09 shows better bond length and angle agreements with Xray experimental results,and corresponds with observed THz experiment spectral *** isolated-molecule vibrational mode values are less by half than those derived from solid-state *** last five peak positions of the two solid-state computations coincide with each ***,all the experimental THz absorption peaks are assigned by utilizing CRYSTAL09.

In order to understand the genetic basis for Zeleny sedimentation value （ZSV） of wheat, a doubled haploid （DH） population Huapei 3 × Yumai 57 （Yumai 57 is superior to Huapei 3 for ZSV）, and a linkage map consisting of 323 marker loci were used to search QTLs for ZSV. This program was based on mixed linear models and allowed simultaneous mapping of additive effect QTLs, epistatic QTLs, and QTL x environment interactions （QEs）. The DH population and the parents were evaluated for ZSV in three field trials. Mapping analysis produced a total of 8 QTLs and 2 QEs for ZSV with a single QTL explaining 0.64-14.39% of phenotypic variations. Four additive QTLs, 4 pairs of epistatic QTLs, and two QEs collectively explained 46.11% of the phenotypic variation （PVE）. This study provided a precise location of ZSV gene within the Xwmc 93 and GluD1 interval, which was designated as Qzsv-1D. The information obtained in this study should be useful for manipulating the QTLs for ZSV by marker assisted selection （MAS） in wheat breeding programs.

To investigate the spoilage characteristics of Jinhua ham,sensory scores,volatile compounds,biogenic amine,physicochemical parameters and microbial counts were evaluated between normal and spoiled *** results showed that off-odors of spoiled hams were dominated by rancid,sour,sulfide and ammonia odors derived from these compounds including butanoic acid,methanethiol and dimethyl *** content of biogenic amine in spoiled hams was significantly higher(more than 10-fold)compared with normal hams,and putrescine,cadaverine and histamine were the key components of biogenic amine of spoiled *** salt content,and higher moisture,TVB-N and thiobarbituric acid reactive substances(TBARS)values were observed in spoiled hams compared with normal *** populations of Enterobacteriaceae and Enterococcus of spoiled hams were obviously higher than that of normal *** moisture and low salt content caused the abnormal growth of Enterobacteriaceae and Enterococcus in spoiled hams,which contributed to the spoilage of Jinhua ham.

Time domain averaging(TDA) is essentially a comb filter,it cannot extract the specified harmonics which may be caused by some faults,such as gear ***,TDA always suffers from period cutting error(PCE) to different *** improved TDA methods have been proposed,however they cannot completely eliminate the waveform reconstruction error caused by *** order to overcome the shortcomings of conventional methods,a flexible time domain averaging(FTDA) technique is established,which adapts to the analyzed signal through adjusting each harmonic of the comb *** this technique,the explicit form of FTDA is first constructed by frequency domain ***,chirp Z-transform(CZT) is employed in the algorithm of FTDA,which can improve the calculating efficiency *** the signal is reconstructed in the continuous time domain,there is no PCE in the *** validate the effectiveness of FTDA in the signal de-noising,interpolation and harmonic reconstruction,a simulated multi-components periodic signal that corrupted by noise is processed by *** simulation results show that the FTDA is capable of recovering the periodic components from the background noise ***,it can improve the signal-to-noise ratio by 7.9 dB compared with conventional *** are also carried out on gearbox test rigs with chipped tooth and eccentricity gear,*** is shown that the FTDA can identify the direction and severity of the eccentricity gear,and further enhances the amplitudes of impulses by 35%.The proposed technique not only solves the problem of PCE,but also provides a useful tool for the fault symptom extraction of rotating machinery.

Concentration levels of disinfection by-products in 14 swimming pools of China

Swimming has become a popular exercising and recreational activity in China but little is known about the disinfection by-products （DBPs） concentration levels in the pools. This study was conducted as a survey of the DBPs in China swimming pools, and to establish the correlations between the DBP concentrations and the pool water quality parameters. A total of 14 public indoor and outdoor pools in Beijing were included in the survey. Results showed that the median concentrations for total tfihalomethanes （TTHM）, nine haloacetic acids （HAA9）, chloral hydrate （CH）, four haloacetonitriles （HAN4）, 1,1- dichloropropanone, 1,1,1-trichloropropanone and trichlor- onitromethane were 33.8, 109.1, 30.1, 3.2, 0.3, 0.6 pg＇L-1 and below detection limit, respectively. The TTHM and HAA9 levels were in the same magnitude of that in many regions of the world. The levels of CH and nitrogenous DBPs were greatly higher than and were comparable to that in typical drinking water, respectively. Disinfection by chlorine dioxide or trichloroisocyanuric acid could sub- stantially lower the DBP levels. The outdoor pools had higher TTHM and HAA9 levels, but lower trihaloacetic acids （THAA） levels than the indoor pools. The TTHM and HAA9 concentrations could be moderately correlated with the free chlorine and total chlorine residuals but not with the total organic carbon （TOC） contents. When the DBP concentration levels from other survey studies were also included for statistical analysis, a good correlation could be established between the TTHM levels and the TOC concentration. The influence of chlorine residual on DBP levels could also be significant.

Applying real-time control to enhance the performance of nitrogen removal in CAST system

A bench-scale reactor（72 L） red with domestic sewage, was operated more than 3 months with three operation modes： traditional mode, modified mode and real-time control mode, so as to evaluate effects of the operation mode on the system performance and to develop a feasible control strategy. Results obtained from fixed-time control study indicate that the variations of the pH and oxidation-reduction potential（ORP） profiles can represent dynamic characteristics of system and the cycle sequences can be controlled and optimized by the control points on the pH and ORP profiles. A control strategy was, therefore, developed and applied to real-time control mode. Compared with traditional mode, the total nitrogen（TN） removal can be increased by approximately 16% in modified mode and a mean TN removal of 92% was achieved in real-time control mode. Moreover, approximately 12.5% aeration energy was saved in real- time control mode. The result of this study shows that the performance of nitrogen removal was enhanced in modified operation mode. Moreover, the real-time control made it possible to optimize process operation and save aeration energy.

Flavonoids play essential roles in human ***(Malus domestica Borkh.),one of the most widely produced and economically important fruit crops in temperate regions,is a significant source of flavonoids in the human diet and is among the top nutritionally rated and most widely consumed fruits *** studies have shown that the consumption of apples,which are rich in a variety of free and easily absorbable flavonoids,is associated with a decreased risk of various ***,apple production is challenged by serious inbreeding *** narrowing of the hereditary base has resulted in apples with poor nutritional quality and low flavonoid ***,there have been advances in our understanding of the roles that Malus sieversii(Ledeb.)*** has played in the process of apple domestication and *** this study,we review the origin of cultivated apples and red-fleshed apples,and discuss the genetic diversity and construction of the core collections of *** also discuss current research progress and breeding programs on red-skinned and red-fleshed apples and summarize the exploitation and utilization of *** in the breeding of high-flavonoid,and red-fleshed *** study highlights a valuable pattern of horticultural crop breeding using wild germplasm *** future challenges and directions of research on the molecular mechanisms of flavonoid accumulation and high-flavonoid apple breeding are discussed.
