Trypsin,a novel superoxide scavenger,significantly enhances the storage quality of Hylocereus undatus(***).To elucidate the preservation mechanism of trypsin on ***,a widely targeted metabolomic analysis,and transcriptomics analysis were ***,a total of 453 metabolites were identified,with organic acids and their derivatives constituting the largest proportion(25%).Amino acids and their metabolites,prominent among organic acids,were further *** them,73 metabolites were associated with amino acids,and 37 exhibited significant *** most enriched Kyoto Encyclopedia of Genes and Genomes(KEGG)pathway was arginine biosynthesis(map00220),with polyamine metabolites showing the most pronounced differences,particularly spermine(FC=1.7594).Compared with the control group,4-hydroxy-2-oxoglutaric acid was significantly upregulated(FC=2.117)in the process of spermine ***,the results of Gene Ontology(GO)and KEGG enrichment analysis of the *** transcriptome profile revealed that trypsin treatment led to 187 differentially expressed genes associated with *** GO and KEGG analyses exhibited significant enrichment in the spermine biosynthetic process(GO:0006597)(map:00220)within the arginine biosynthesis ***,most enzymes and metabolites within the spermine biosynthesis pathway in *** were *** results of the PPI network highlighted that ADC,SPDS,and SAMDC,among others,were pivotal proteins involved in trypsin-regulated arginine metabolism and spermine *** study revealed that trypsin could significantly delay postharvest senescence of *** at room *** effect might be attributed to trypsin triggering the synthesis of 4-hydroxy-2-oxoglutaric acid in the fruit peel,thereby promoting the biosynthesis of spermine and other polyamines.

Hole-Doped Nonvolatile and Electrically Controllable Magnetism in van der Waals Ferroelectric Heterostructures

Electrical control of magnetism in van der Waals semiconductors is a promising step towards development of two-dimensional spintronic devices with ultralow power consumption for processing and storing ***, we propose a design for two-dimensional van der Waals heterostructures(vdWHs) that can host ferroelectricity and ferromagnetism simultaneously under hole doping. By contacting an In Se monolayer and forming an InSe/In_(2)Se_(3) vd WH, the switchable built-in electric field from the reversible out-of-plane polarization enables robust control of the band alignment. Furthermore, switching between the two ferroelectric states(P_↑ and P_↓)of hole-doped In_(2)Se_(3) with an external electric field can interchange the ON and OFF states of the nonvolatile magnetism. More interestingly, doping concentration and strain can effectively tune the magnetic moment and polarization energy. Therefore, this provides a platform for realizing multiferroics in ferroelectric heterostructures,showing great potential for use in nonvolatile memories and ferroelectric field-effect transistors.

Untargeted metabolomic profiling， nutritional composition and enzyme changes on Bigeye tuna(Thunnus obesus) during cold storage by HPLC-MS coupled with logistic regression

Bigeye tuna is a protein-rich fish that is susceptible to spoilage during cold storage， however， there is limited information on untargeted metabolomic profiling of bigeye tuna concerning spoilage-associated enzymes and metabolites. This study aimed to investigate how cold storage affects enzyme activities， nutrient composition， tissue microstructures and spoilage metabolites of bigeye tuna. The activities of cathepsin B， H， L increased， while Na+/K+-ATPase and Mg2＋-ATPase decreased， α-glucosidase （AG） and β-1，4-N-acetylglucosaminidase （NAG）， lipase and lipoxygenase first increased and then decreased during cold storage， suggesting that proteins undergo degradation and ATP metabolism occurs at a faster rate during cold storage. Nutrient composition （moisture， protein， and lipid content）， free amino acids， total amino acids decreased， suggesting that the nutritional value of bigeye tuna was reduced. Besides， a logistic regression equation has been established as a food analysis tool and assess the dynamics and correlation of the enzyme of bigeye tuna during cold storage. Based on untargeted metabolomic profiling analysis， a total of 484 metabolites were identified as significantly differential metabolites in the bigeye tuna contained several spoilage metabolites involved in lipid metabolism （1-Acyl-sn-glycero-3phosphocholine， Glycerophosphocholine， Choline phosphate）， amino acid metabolism (L-Histidine， 5-Deoxy-5'-（methylthio）adenosine， 5-Methylthioadenosine)， carbohydrate metabolism （D-Gluconicacid， beta-D-Fructose 1，6-bisphosphate， D-Glyceraldehyde 3-phosphate）. The results of tissue microstructures of tuna showed a looser network and visible deterioration of tissue fiber during cold storage. Therefore， metabolomic analysis and tissue microstructures provide insight into the spoilage mechanism investigations on bigeye tuna during cold storage.

A healable, mechanically robust and ultrastretchable ionic conductive elastomer for durably wearable sensor

The ionic conductive elastomers show great promise in multifunctional wearable electronics,but they currently suffer from liquid leakage/evaporation or mechanical *** ionic conductive elastomers integrating non-volatility,mechanical robustness,superior ionic conductivity,and ultra-stretchability remains urgent and ***,we developed a healable,robust,and conductive elastomer via impregnating free ionic liquids(ILs)into the ILs-multigrafted poly(urethane-urea)(PUU)elastomer networks.A crucial strategy in the molecular design is that imidazolium cations are largely introduced by double-modification of PUU and centipede-like structures are obtained,which can lock the impregnated ILs through strong ionic *** this system,the PUU matrix contributes outstanding mechanical properties,while the hydrogen bonds and ionic interactions endow the elastomer with self-healing ability,conductivity,as well as non-volatility and *** fabricated ionic conductive elastomers show good conductivity(3.8×10^(-6) S·cm^(-1)),high mechanical properties,including tensile stress(4.64 MPa),elongation(1470%),and excellent healing ability(repairing efficiency of 90%after healing at room temperature for 12 h).Significantly,the conductive elastomers have excellent antifatigue properties,and demonstrate a highly reproducible response after 1000 uninterrupted extension-release *** work provides a promising strategy to prepare ionic conductive elastomers with excellent mechanical properties and stable sensing capacity,and further promote the development of mechanically adaptable intelligent sensors.

Salted egg white derived-peptides VF-4 and DR-8 improve DSS-induced colitis in mice by inhibiting NF-κB/MAPK/PI3K-AKT signaling pathways and modulating gut microbiota composition

Inflammation underlies many chronic diseases， and inflammatory bowel disease (IBD) is a condition characterized by long-term inflammation of the gut. Egg whites have been shown to contain many beneficial active substances. Therefore， we obtained two peptides from salted egg white: Val-Val-His-Phe (VF-4) and Asp-Thr-Gln-Ala-Met-Pro-Phe-Arg (DR-8). The sodium dextran sulfate (DSS)-induced mice colitis model was used to evaluate its regulatory effect on colitis in vivo. The results showed that VF-4 and DR-8 improved the clinical symptoms of DSS-induced colitis， attenuated colon tissue damage， inhibited the activation of NF-κB/MAPK/PI3K-AKT signaling pathways， and inhibited the expression of inflammatory cytokines. 16S rRNA gene sequencing showed that VF-4 and DR-8 administration increased the relative abundance of intestinal beneficial bacteria including Lactobacillus， Blautia， and down-regulated the relative abundance of inflammation-related bacteria including Acinetobacter， Lachnospiraceae＿NK4A136＿group， Klebsiella. Moreover， the degree of correlation between pro-inflammatory cytokines and microbiota was as follows: IL-6 > TNF-α > IL-1β > IFN-γ. In conclusion， this study suggests that salted egg white peptides VF-4 and DR-8 have a significant anti-inflammatory effect in vivo. It also provides a strategy for the treatment of inflammatory bowel disease and a new way for the high-value utilization of salted egg white.

Silicon Mitigates Aluminum Toxicity of Tartary Buckwheat by Regulating Antioxidant Systems

Aluminum (Al) toxicity is a considerable factor limiting crop yield and biomass in acidic soil. Tartary buckwheatgrowing in acidic soil may suffer from Al poisoning. Here, we investigated the influence of Al stress on the growthof tartary buckwheat seedling roots, and the alleviation of Al stress by silicon (Si), as has been demonstrated inmany crops. Under Al stress, root growth (total root length, primary root length, root tips, root surface area, androot volume) was significantly inhibited, and Al and malondialdehyde (MDA) accumulated in the root tips. At thesame time, catalase (CAT) and ascorbate peroxidase activities, polyphenols, flavonoids, and 1,1-diphenyl-2-picrylhydrazyl(DPPH) and 2,2′-azinobis-(3-ethylbenzthiazoline-6-sulphonate) (ABTS) free-radical scavenging abilitywere significantly decreased. After the application of Si, root growth, Al accumulation, and oxidative damage wereimproved. Compared to Al-treated seedlings, the contents of ·O2− and MDA decreased by 29.39% and 25.22%,respectively. This was associated with Si-induced increases in peroxidase and CAT enzyme activity, flavonoidcompounds, and free-radical scavenging (DPPH and ABTS). The application of Si therefore has positive effectson Al toxicity in tartary buckwheat roots by reducing Al accumulation in the roots and maintaining oxidationhomeostasis.

Changes and correlation of microorganism and flavor substances during persimmon vinegar fermentation

To investigate the microbial diversity and the change of the flavor substances during the traditional natural persimmon vinegar fermentation,two group samples from alcohol fermentation stage(A)and acetic acid fermentation stage(B)were *** results showed that Burkholderia,Lactobacillus,Acetobacter,Komagataeibacter were the main bacteria,and the major fungi were Saccharomyces,Hanseniaspora,Hortaea,and Cladosporium at the genus *** contents of flavonoids and polyphenols in B increased by 17.91%and 26.59%compared with A,*** superoxide anion scavenging activity significantly increased by 20.15%.The contents of total free amino acids were 5709.99±410.36 mg/L and 5736.16±472.02 mg/L,and the total contents of 9 organic acids were 19.89±1.20 g/L and 33.77±2.49 g/L in samples A and B,*** correlation analysis showed that 11 flavor compounds were related to Lactobacillus and Leuconostoc;8 and 10 compounds were respectively related to Komagataeibacter and Acetobacter;13 and 19 flavor compounds were respectively associated with Saccharomyces and *** Partial Least Square(OPLS)model showed that the contents of Leu,Lys,and lactic acid were mainly associated with fungi,andγ-aminobutyric acid(GABA)content was correlated with Lactobacillus,Acetobacter,Leuconostoc,and *** study revealed the relationship between microbial diversity and flavor compounds in persimmon vinegar produced by spontaneous *** results can provide a theoretical support for the safety and health assessment of persimmon vinegar.
