The quality of infant flours used during the weaning age is of great importance in that it conditions the nutritional health of infants and young children. This study aimed to assess the nutritional and sanitary quality of infant flours produced in the city of Ouagadougou. This was a cross-sectional study including 11 out of 25 infant flour production units that gave their consent to partake in the study. In total, 25 infant flour samples have been collected from July to September 2021. The physicochemical and microbiological parameters were determined according to standard methods. The ANOVA analysis of variance showed significant differences between the means of the physico-chemical and the means of the microbiological parameters respectively. The results showed that 60% of proteins and 80% of lipid and total carbohydrate contents were below the authorised limits. The energy values were below the authorised limit in 88% of the cases. All instant infant flours had microbiological loads compliant with Burkinabè standards. As for infant flour to be cooked, 63.64% and 81.82% had satisfactory numbers of total coliforms and faecal coliforms respectively. Staphylococcus aureus and Escherichia coli were detected in these samples with 86.36% of infant formulae having results below the recommended limit. These results show that the infant flours produced in Ouagadougou were somehow of acceptable quality. However, there is a need to improve the formulae for macronutrient contents, energy values and sanitary quality to comply with the recommendations.

Metal trace elements (MTE) are among the most harmful micropollutants of natural waters. Eliminating them helps improve the quality and safety of drinking water and protect human health. In this work, we used mango kernel powder (MKP) as bioadsorbent material for removal of Cr (VI) from water. Uv-visible spectroscopy was used to monitor and quantify Cr (VI) during processing using the Beer-Lambert formula. Some parameters such as pH, mango powder, mass and contact time were optimized to determine adsorption capacity and chromium removal rate. Adsorption kinetics, equilibrium, isotherms and thermodynamic parameters such as ΔG˚, ΔH˚, and ΔS˚, as well as FTIR were studied to better understand the Cr (VI) removal process by MKP. The adsorption capacity reached 94.87 mg/g, for an optimal contact time of 30 min at 298 K. The obtained results are in accordance with a pseudo-second order Freundlich adsorption isotherm model. Finally FTIR was used to monitor the evolution of absorption bands, while Scanning Electron Microscopy (SEM) and Energy Dispersive X-ray Spectroscopy (EDS) were used to evaluate surface properties and morphology of the adsorbent.

This work studies the variability of the relationship between relative permittivity and compaction parameters as a function of certain geotechnical properties for different laterite types. This study allows to purpose the dielectric permittivity as a third compaction parameter allowing to obtain a non destructive control méthod. Preliminary studies on Diack laterite had shown a good correlation. Additional investigations are carried out to verify the possibility of generalizing this correlation to three new laterite careers: Ngoudiane, Yéba and Fandene. To proceed, particle size analysis, Atterberg limits, specific weight tests and compaction according to the modified Proctor test were performed on laterite samples. Using the radar method, experimental permittivities are determined for laterite samples by the point method of propagation times and confirmed by the diffraction hyperbole method. The geotechnical and radar data obtained allowed correlations between permittivity and water content on the one hand and between permittivity and dry density on the other. The results show that the maximum dry density as a function of permittivity corresponds with the optimum Proctor, which confirms the results previously obtained on Diack laterite.

Enteric viral pathogens are responsible for numerous epidemics associated with the consumption of fresh fruit and vegetable, whether raw or minimally processed. The aim of the present study was to assess agricultural practices and the presence of adenovirus (AdV) in fruits and vegetables, manure and irrigation wastewater sampled in the urban and peri-urban perimeters of Ouagadougou. A total of 286 samples including 30 lettuces, 42 tomatoes, 30 carrots, 30 strawberries, 74 manures and 80 wastewater samples were collected from four market garden sites in and around Ouagadougou. Nested PCR was performed with specific primers to detect adenoviruses (AdVs). A face-to-face survey was carried out using a questionnaire on market garden production practices. Overall, adenoviruses prevalence was 5.9% [IC95, 3.2% - 8.7%] in all samples analyzed. It was specifically 7.14% (3/42) from tomatoes, 6.7% (2/30) from lettuces, 20% (6/30) on strawberries and 7.5% (6/80) in irrigation water. The survey showed that irrigation water came from untreated sources (dam, well, canal) and then 52% of farms used untreated manure. No farms have implemented measures to limit access by domestic and wild animals. This work shows the presence of human adenoviruses in surface irrigation water and fresh produce, which is of concern when fresh produce is consumed raw. To reduce the public health risks associated with consuming these foods, it is essential to follow good hygiene and cultivation practices.

Microbial Quality and Molecular Identification of Enterotoxigenic Staphylococcus Strains Isolated from Dried, Smoked, and Braised Fish Sold in Ouagadougou Markets

Background: The investigation of toxin genes in strains involved in staphylococcal food poisoning contributes to food safety. The aim of this study was to isolate and identify enterotoxigenic Staphylococcus strains from dried, smoked, and braised fish sold in Ouagadougou markets. Methodology: Staphylococci were isolated using standard microbiology methods. Staphylococcus strains were identified using API Staph kit (Reference # 20500, BioMerieux S.A., Marcy l'etoile, France). The molecular identification of isolated Staphylococcus aureus strains was specifically confirmed by PCR using the Staur4 and Staur6 primers. The genes encoding enterotoxins, enterotoxin-like toxins, exfoliative toxins, and TSST-1 toxin were detected by multiplex PCR using specific primers from Inquaba Biotec West Africa Ltd, Africa's Genomics Company. Results: The results of the microbiological quality assessment indicated that most of the samples analyzed were found to be of unsatisfactory microbiological quality according to the Staphylococcus aureus microbiological criteria (m = 102). Overall, only 12.55% of samples were satisfactory, while 97.45% were unsatisfactory. The STAPH API gallery allowed the identification of the following species: Staphylococcus aureus, Staphylococcus xylosus, Staphylococcus lugdunensis, Staphylococcus hominis, Staphylococcus haemolyticus, Staphylococcus lentus, Staphylococcus sciuri and Staphylococcus capitis. Of the 108 Staphylococcus isolates, 81 (75%) showed at least one (1) toxin gene. Among the 21 toxin genes tested in this study, 20 genes were detected in all strains analyzed. The staphylococcal toxin genes detected were present in both Staphylococcus aureus and the other coagulase-negative strains isolated in this study. In addition, these genes are found individually or in association in certain strains. Physicochemical investigations were performed on seeds of Nymphea lotus and N. micrantha consumed in the Senegal River valley. They revealed a composition similar to that of cereals. In order to estimate their intrinsic quality, the determination of their amino acid, fatty acid and monosaccharids profiles was done. The results indicate that monosaccharides are represented specifically by saccharose (7%) and glucose (0.67%);a predominance of stearic acid and linoleic acid as unsaturated acids (24.86%);arachidic and palmitic acids as the only saturated acid found (11.12%);a good ratio of unsaturated/saturated acid (2.23);a lack of oleic acid, linoleic, palmitoleic, myristic, caprylic acids;a poor-quality index protein due to low quantity amino acids. Nevertheless, all essential amino acids are present in the seeds. The Nymphea sp grains consumed by the populations around the Senegal River valley offer an interesting nutritional quality linked to fatty acids and carbohydrates.

Predictive Study of Trace Metal Pollution of Gold Panning Sites in Birimian Formations: Case of the Yaouré Furrow (Côte d’Ivoire)

The present study was carried out on small-scale gold mining sites in the Yaouré region of Côte d’Ivoire. This region is geologically representative of the Birimian formations (2.1 Ga) of West Africa. The aim is to determine the potentially toxic trace metals (TMEs) generated by these sites, with a view to preventing possible contamination and/or metal pollution of the waters that provide fish products for local populations. To this end, a sampling campaign was carried out, resulting in the collection of 20 mining waste samples analyzed by X-ray fluorescence spectrometry (XRF) and 10 by X-ray diffractometer (XRD). The XRF analysis detected 06 predominant TMEs: arsenic, chromium, copper, nickel, zinc and vanadium. Statistical analysis was carried out to determine the distributions and correlations between these etMs. To assess contamination and/or pollution levels, the following indices were calculated on the basis of reference concentrations of upper continental crust MTEs: Enrichment Factor, Geo-accumulation Index, Concentration Factor, Degree of contamination and those related to ecological risks. The results of statistical analyses and indices have shown that arsenic and chromium are the most predominant and can be, depending on the chemical form, potentially more toxic. The results of the DRX analysis show the occurrence of several minerals carrying these two MTEs, especially that of a rare mineral, Stenhuggarite, an arsenic oxide linked to hydrothermal veins. The majority of gold mining operations in West Africa are located in the birimian zone, hence the need for environmental monitoring by the relevant authorities, to prevent potential ecological risks to water and possibly health risks via the food chain.
