This study aimed to explore the effect of Bifidobacterium animalis F1-7 on the improvement of atherosclerotic *** model ApoE^(-/-)mice were orally administered with *** F1-7 for 12 *** probiotic intervention reduced the plaque areas in aorta and the accumulation of macrophages,and downregulated the expression of toll-like receptor 4(TLR4)/nuclear factorκB(NF-κB)pathway to reduce the levels of inflammatory *** widely-targeted metabolomics analysis showed that acetyl-L-carnitine(ALC)in the intestine of atherosclerotic mice was significantly increased after *** F1-7 *** analysis proved that ALC was associated with atherosclerotic inflammatory *** using oxidized low density lipoprotein induced macrophage foam cells,we further verified that ALC could reduce lipid accumulation and inflammatory response in foam cells by downregulating the TLR4/NF-κB ***,our results revealed that *** F1-7 upregulated the metabolite ALC to downregulate the inflammatory responses,leading to the reduction of plaque accumulation of atherosclerosis.

food allergy (FA) is an aberrant immune response triggered by the ingestion of a food antigen. Ovalbumin (OVA)-sensitized and challenged BALB/c mice were orally administered heat-killed (HK)-L. paracasei JY56. In this work， HK-L. paracasei JY56 alleviated the FA-induced decrease in body weight and rectal temperature and reduced the allergy score. Serum analysis showed that HK-L. paracasei JY56 reduced the levels of specific antibodies (OVA-sIgE and OVA-sIgG) and allergic mediators (histamine and mast cell protease) in FA mice. In addition， HK-L. paracasei JY56 also could alleviate OVA-induced FA by suppressing Th2 and Th17-type immune responses， which was evidenced by the regulation of splenic lymphocyte subpopulations and associated cytokine secretion. Moreover， jejunal histological analysis and intestinal barrier function related gene expression measurement were performed to verify the intestinal barrier repair of HK-L. paracasei JY56. Meanwhile， the TLR4/NF-κB inflammatory pathway activation was inhibited by HK-L. paracasei JY56 at gene and protein levels. Finally， HK-L. paracasei JY56 was performed to modulate the gut microbiota structure and increase the levels of short-chain fatty acids. In conclusion， HK-L. paracasei JY56 could alleviate OVA-induced FA in multiple ways， and this study provides a theoretical basis for the application of inactivated probiotics in functional foods for FA.

Pseudomonas (P.) fragi and P. lundensis have been reported as key spoilage bacteria in aerobically-stored chilled meat. However， the co-spoilage effect of these bacteria has not been effectively evaluated. This study evaluated the spoilage potential of P. fragi， P. lundensis and P. fragi + P. lundensis in vitro and in situ at 4 ℃. The results showed that P. fragi + P. lundensis performed the highest growth rate and displayed larger decomposition zone diameters on Raw-pork juice agar (RJA) plates. P. fragi + P. lundensis inoculants exhibited the strongest proteolytic activity， which resulted in the highest values of trichloroacetic acid (TCA)-soluble peptides， total volatile basic nitrogen (TVB-N) and myofibril fragmentation index (MFI) in chilled pork. Moreover， the inoculated samples showed different pH and sensory changes. Notably， increased amounts of volatile organic compounds (VOCs)， such as octanal， nonanal， 2-nonanone， 1-propanol， 1-octanol， isopropyl acetate， and 2，6-dimethylpyazine， were observed in inoculated P. fragi + P. lundensis samples， hinting their potential use as spoilage markers for spoilage monitoring of co-cultures. This study would provide a deeper understanding of meat spoilage and serve as a reference for future studies to inhibit meat spoilage.

Trypsin,a novel superoxide scavenger,significantly enhances the storage quality of Hylocereus undatus(***).To elucidate the preservation mechanism of trypsin on ***,a widely targeted metabolomic analysis,and transcriptomics analysis were ***,a total of 453 metabolites were identified,with organic acids and their derivatives constituting the largest proportion(25%).Amino acids and their metabolites,prominent among organic acids,were further *** them,73 metabolites were associated with amino acids,and 37 exhibited significant *** most enriched Kyoto Encyclopedia of Genes and Genomes(KEGG)pathway was arginine biosynthesis(map00220),with polyamine metabolites showing the most pronounced differences,particularly spermine(FC=1.7594).Compared with the control group,4-hydroxy-2-oxoglutaric acid was significantly upregulated(FC=2.117)in the process of spermine ***,the results of Gene Ontology(GO)and KEGG enrichment analysis of the *** transcriptome profile revealed that trypsin treatment led to 187 differentially expressed genes associated with *** GO and KEGG analyses exhibited significant enrichment in the spermine biosynthetic process(GO:0006597)(map:00220)within the arginine biosynthesis ***,most enzymes and metabolites within the spermine biosynthesis pathway in *** were *** results of the PPI network highlighted that ADC,SPDS,and SAMDC,among others,were pivotal proteins involved in trypsin-regulated arginine metabolism and spermine *** study revealed that trypsin could significantly delay postharvest senescence of *** at room *** effect might be attributed to trypsin triggering the synthesis of 4-hydroxy-2-oxoglutaric acid in the fruit peel,thereby promoting the biosynthesis of spermine and other polyamines.

Salt stress inhibits plant growth and affects the biosynthesis of its secondary *** are natural compounds that possess many important biological activities,playing a significant role in the medicinal activity of Eucommia ulmoides(***).To investigate the mechanism by which salt stress affects the biosynthesis of flavonoids in ***,a comprehensive analysis of metabolomics and transcriptomics was *** results indicated that salt stress led to the wilting and darkening of *** leaves,accompanied by a decrease in chlorophyll levels,and significantly induced malondialdehyde(MDA)and relative electrical *** salt stress,most metabolites in the flavonoid biosynthesis pathway of *** were upregulated,indicating that flavonoid biosynthesis is likely the main induced pathway under salt *** them,secondary metabolites such as 6-Hydroxyluteolin and Quercetin are likely key metabolites induced by salt *** correlation analysis of transcriptomics and metabolomics revealed that EuSHT is a hub gene induced by salt stress,promoting the production of flavonoids such as *** co-expression network showed a strong positive correlation between EuSHT and the biosynthesis of 6-Hydroxyluteolin and Quercetin,while it exhibited a negative correlation with Catechin *** branches leading to Luteolin and Dihydroquercetin are likely the main pathways for flavonoid compound biosynthesis in the plant stress response during salt *** results of this study provided a preliminary mechanism of secondary metabolites such as flavonoids in the medicinal plant *** induced by salt stress and provided new theoretical support for discussing the mechanism of plant stress *** also provided useful information for subsequent exploration of resistance genes in ***.

Hyperuricemia is a metabolic disorder caused by abnormal purine metabolism,resulting in abnormally high serum uric *** this study,a novel Levilactobacillus brevis PDD-5 isolated from salty vegetables was verified with the function of alleviating *** relevant effects of *** PDD-5 in lowering uric acid were analyzed by in vitro and in vivo *** results showed that the *** PDD-5 has(68.86±15.46)%of inosine uptake capacity and(95.75±3.30)%of guanosine uptake capacity in *** administration of *** PDD-5 to hyperuricemia rats reduced uric acid,creatinine,and urea nitrogen in serum,as well as decreased inosine and guanosine levels in the intestinal contents of *** of relevant markers in the kidney by ELISA kits revealed that *** PDD-5 alleviated oxidative stress and ***,the gene expression of uric acid transporter 1(URAT1)and glucose transporter 9(GLUT9)was down-regulated,and the gene expression of organic anion transporter 1(OAT1)was up-regulated after treatment with *** *** blot analysis showed that *** PDD-5 alleviated hyperuricemia-induced kidney injury through the NLRP3 *** se findings suggest that *** PDD-5 can lower uric acid,repair kidney damage,and also has the potential to prevent uric acid nephropathy.

This cohort study was designed to explore the relationship between maternal dietary patterns(DPs)and bone health in Chinese lactating mothers and *** recruited 150 lactating women at 1-month *** estimated bone mineral density(eBMD)of subjects’calcanei and the information on dietary intake were *** 5-month follow-up,the eBMD of mothers and their infants were measured *** analysis was applied to determine maternal *** linear models were used to evaluate the association between maternal DPs and maternal eBMD loss or infants’*** all potential covariates adjusted,Factor 2(high intake of whole grains,tubers,mixed beans,soybeans and soybean products,seaweeds,and nuts)showed a positive association with the changes of maternal eBMD(β=0.16,95%CI:0.005,0.310).Factor 3(high intake of soft drinks,fried foods,and puffed foods)was inversely correlated with the changes of maternal eBMD(β=-0.22,95%CI:-0.44,0.00).The changes of maternal eBMD were positively associated with 6-month infants’eBMD(β=0.34,95%CI:0.017,0.652).In conclusion,Factor 2 might contribute to the maintenance of eBMD in lactating women,while Factor 3 could exacerbate maternal eBMD ***,the changes of maternal eBMD presented a positive correlation with 6-month infants’eBMD.

Elaidic acid(EA)stimulation can lead to endoplasmic reticulum stress(ERS),accompanied by a large release of Ca^(2+),and ultimately the activation of NLRP3 inflammasome in Kupffer cells(KCs).Mitochondrial instability or dysfunction may be the key stimulating factors to activate NLRP3 inflammasome,and sustained Ca^(2+)transfer can result in mitochondrial *** focused on KCs to explore the damage to mitochondria by *** EA stimulation,cells produced an oxidative stress(OS)response with a significant increase in ROS *** experiments and the addition of inhibitors revealed that the increase in the level of intracellular Ca^(2+)led to Ca^(2+)accumulation in the mitochondrial matrix via mitochondria-associated membranes(MAMs).This was accompanied by a significant release of m ROS,loss of MMP and ATP,and a significant increase in mitochondrial permeability transition pore opening,ultimately leading to mitochondrial *** findings confirmed the mechanism that EA induced mitochondrial Ca^(2+)imbalance in KCs via MAM,ultimately leading to mitochondrial ***,EA induced OS and the decrease of MMP and ATP in rat liver,and significant lesions were found in liver *** of the inner mitochondrial cristae and mitochondrial vacuolization occurred,with a marked increase in lipid droplets.

Objectives:Folic acid is a vitamin that is not highly soluble in water and is sensitive to the ***,it is important to find suitable *** study aimed to exemplify the interaction of folic acid with zein in alkaline aqueous solutions and shed light on how zein can be used as a carrier for folic *** and Methods:Zein and folic acid were separately dissolved in NaOH solutions with a PH of *** solution and folic acid solution were combined in specific *** methods including multi-spectroscopy,dynamic light scattering,and electron microscopy combining with molecular dynamics simulations were used to study the interaction mechanism between zein and folic acid in alkaline aqueous ***:Fluorescence spectroscopy showed that the quenching of zein by folic acid was mainly static,and the main driving force behind this interaction was van der Waals forces and hydrogen *** formation of zein–folic acid complexes was confirmed by ultraviolet–visible spectroscopy,Fourier transform infrared spectroscopy,and circular dichroism *** results also showed that the structure of zein changed when it interacted with folic *** light scattering analysis revealed that the addition of folic acid caused proteins to *** aggregates of the complexes had an irregular shape and were large,as observed by scanning electron microscopy and transmission electron *** simulation was used to further investigate the interaction *** to these findings,the folic acid molecule interacted with zein in a shallow recess near the protein *** dominant forces at play in the zein–folic acid interaction were van der Waals forces and electrostatic forces,including hydrogen ***:The zein alkali-soluble system is very suitable for folic acid delivery.
