本文综述了肌内脂肪在肉品风味中的作用.首先阐述了肌肉的脂肪组成及引起其变化的主要因素,随后分两部分分别综述了肌肉中脂肪的水解和氧化变化,最后主要阐明了脂肪氧化产物与美拉德反应之间的相互作用,重点指出了熟肉制品中典型风味化合物及蒸煮后肉品氧化中风味化合物的形成.肌肉中的磷脂是脂肪水解和氧化的主要底物.人们对肌肉组织中的脂肪水解了解得一直很少,其在氧化中的作用也有待于探明.尽管人们已经描述过很多脂肪氧化的机理,但在肌内脂肪氧化中一直未能建立氧化模型.脂肪通过其氧化产物影响美拉德反应,该反应会减少杂环化合物的形成,尤其是含硫杂环化合物的形成.熟肉的香气成分取决于脂肪氧化与来自美拉德反应产生的化合物之间的平衡.本文在结论中还指出了目前仍需要进一步研究的内容.

The early Paleogene is critical for understanding global biodiversity patterns in modern ecosystems. During this interval, southern Hemisphere continents were largely characterized by isolation and faunal endemism following the breakup of Gondwana. Africa has been proposed as an important source area for the origin of several marine vertebrate groups but its Paleogene record is poorly sampled, especially from sub-saharan Africa. To document the early Paleogene marine ecosystems of Central Africa, we revised the stratigraphic context of sedimentary deposits from three fossil-rich vertebrate localities: the Landana section in the Cabinda exclave(Angola), and the Manzadi and Bololo localities in western democratic Republic of *** provide more refined age constraints for these three localities based on invertebrate and vertebrate faunas, foraminiferal and dinoflagellate cyst assemblages, and carbon isotope records. We find an almost complete absence of Danian-aged rocks in the Landana section, contrary to prevailing interpretations over the last half a century(only the layer 1, at the base of the section, seems to be Danian). Refining the age of these Paleocene layers is crucial for analyzing fish evolution in a global framework, with implications for the early appearance of scombridae(tunas and mackerels) and Tetraodontiformes(puffer fishes). The combination of vertebrate fossil records from Manzadi and Landana sections suggests important environmental changes around the K/Pg transition characterized by an important modification of the ichthyofauna. A small faunal shift may have occurred during the selandian. More dramatic is the distinct decrease in overall richness that lasts from the selandian to the Ypresian. The Lutetian of West Central Africa is characterized by the first appearance of numerous cartilaginous and bony fishes. Objective: To investigate if an exaggerated peak exercise systolic blood pressure (peak EsBP) is associated with alteration of cardiometabolic risk factors and predict future resting hypertension in middle aged women. Methods: Data analysis was performed in 95 healthy normotensive premeno-pausal women at baseline and 84 after 5-year follow-up (age, 49.9 ± 1.9 years;BMI, 23.3 ± 2.2 kg/m2;resting BP, 117/73 ± 11.8/7.6 mmHg). Blood pressure was measured at rest and during a progressive exercise test on treadmill. Women were divided into two groups according to their peak EsBP s. ≥190 mmHg. Other outcome measures were: cardiorespiratory fitness (VO2 peak), body composition, body fat distribution and fasting plasma lipids, glucose and insulin levels. Results: 15% and 27% of women presented an exaggerated peak EsBP response (≥190 mmHg) at baseline and year 5 respectively. Linear mixed model repeated measures analysis revealed higher values of fasting glucose, resting systolic and diastolic BP in women with an exaggerated peak EsBP (≥190 mmHg) compared to women with a peak EsBP (no significant difference was observed between the two groups for VO2 peak, body composition and body fat distribution indices and other cardiometabolic risk factors. Finally, baseline peak EsBP was not a significant risk factor for future resting hypertension (OR: 2.96, 95%CI [0.48 - 18.12];P = 0.24). Conclusion: Our results, despite being non significant, are of great interest because in healthy and active premenopausal women, exaggerated peak EsBP is not predictive of future hypertension after 5-year follow-up throughout menopause transition.

The paper goal is to analyze the variability of foF2 at African equatorial stations and the effect of dip angle on this variability. The gap between the dip angle of Dakar and Ouagadougou is superior to that between Djibouti and Ouagadougou. The trend of the dip angle at Ouagadougou and Dakar decreases while that of Djibouti increases. The relative position of the station with respect to the equator and the trend sign explains the difference observed in foF2 variability at Dakar station and at the two other stations. At Djibouti and Ouagadougou, foF2 exhibits noon bite out profile during all solar cycle phases while at Dakar observed profile is dome or plateau during the maximum and the predominance afternoon peak for the other solar cycle phases.

The present study compared eight breeds of cattle differing in gender （heifers, buls and steers） to determine associations between muscle characteristics and meat sensory qualities of theLongissimus thoracis muscle. Animal types differed in al the muscle characteristics and sensory qualities. Many correlations among muscle characteristics and among sensory qualities were consistent for most animal types. Isocitrate dehydrogenase （ICDH） activities alowed discrimination of muscles with respect to myosin heavy chain （MyHC）-I proportions for al animal types. Lactate dehydrogenase （LDH） and phos-phofructokinase （PFK） activities were positively correlated for most animal types. Overal liking was correlated with beef lfavour and abnormal lfavour in al animal types and with global tenderness for al animal types except for Charolais cross breed steers. For al animal types except for Angus×Friesian heifers, beef lfavour and abnormal lfavour were negatively correlated. Overal liking was not correlated with juiciness. PFK, ICDH and citrate synthase （Cs） activities were strongly associated with tenderness, beef lfavour and overal liking when average values for al animal types were used. However, associations between muscle characteristics and sensory qualities within animal types were weak and inconsistent.
