Preparation of lactic acid bacteria compound starter cultures based on pasting properties and its improvement of glutinous rice flour and dough

The effects of 5 lactic acid bacteria(LAB)fermentation on the pasting properties of glutinous rice flour were compared,and suitable fermentation strains were selected based on the changes of viscosity,setback value,and breakdown value to prepare LAB compound starter *** results revealed that Latilactobacillus sakei HSD004 and Lacticaseibacillus rhamnosus HSD005 had apparent advantages in increasing the viscosity and reducing the setback and breakdown values of glutinous rice *** particular,the compound starter created using the two abovementioned LAB in the ratio of 3:1 had better performance than that using a single LAB in improving the pasting properties and increasing the water and oil absorption capacity of glutinous rice ***,the gelatinization enthalpy of the fermented samples increased *** frozen glutinous rice dough stored for 28 days,the viscoelasticity of frozen dough prepared by compound starter was better than that of control dough,and the freezable water content was lower than that of control *** results indicate that compound LAB fermentation is a promising technology in the glutinous rice-based food processing industry,which has significance for its application.

Platelet-activating factor (PAF) exhibits a variety of biological activities and it be thought to involved in various pathophysiological process. In this paper, some studies were summarized about those roles of PAF in a variety productive processes of female of mammalian that include fertilization, implantation and parturition, and that was involved in the concentration, degradation and some assay methods of PAF. The relationship between PAF and early pregnancy factor(EPF was reviewed.

The aim of this study was to investigate carbohydrate metabolism in rice seedlings subjected to salt-alkaline *** relatively salt-alkaline tolerant(Changbai 9)and sensitive(Jinongda 138)rice cultivars,grown hydroponically,were subjected to salt-alkaline stress via 50 mM of salt-alkaline *** carbohydrate content and the activities of metabolism-related enzymes in the leaves and roots were *** results showed that the contents of sucrose,fructose,and glucose in the leaves and roots increased under salt-alkaline *** content increased in the leaves but decreased in the roots under salt-alkaline *** activities of sucrose-phosphate synthase,sucrose synthase,amylase,and ADP-glucose pyrophosphorylase increased whereas the activities of neutral invertase and acid invertase decreased in the leaves under salt-alkaline *** activities of sucrose-phosphate synthase,sucrose synthase,amylase,neutral invertase,and acid invertase increased in the roots under salt-alkaline *** conclusion,salt-alkaline stress caused the accumulation of photosynthetic assimilates in the leaves and decreased assimilation export to the roots.

As a sensitive biological indicator,earthworms are widely used to monitor various pollutants of soil and provide an early warning for soil ***,because many indices are involved in the exposure-induced oxidative stress response,practical applications of these indices are quite ***,it is appropriate to investigate the key monitoring index for use in early warning and pollution *** Eisenia fetida as an experimental model in an indoor simulation experiment,the mathematical modelling of the effect on oxidative stress in earthworms under cadmium(Cd)stress was *** test lasted 40 d,with the removal of one earthworm every 10 *** Cd2+concentration gradient was set as 0,1,10,20,100,200,400,and 800 mg kg^(-1) dry *** earthworms were divided into two sections from the clitellum for the determination of total protein(TP)and peroxidase(POD),superoxide dismutase(SOD),glutathione-S-transferase(GST),glutathione peroxidase(GPX),catalase(CAT),malondialdehyde(MDA),and acetylcholinesterase(AChE)*** showed that POD was the key index of oxidative stress in head tissues after 10 d of exposure,TP was the key index at 20 d,and POD became the key index again at 30 and 40 *** contrast,in tail tissues,MDA and SOD were the key indices at an exposure time of 10 d,GPX at 20 d,CAT and TP at 30 d,and POD and MDA at 40 *** results contribute to establishing a scientific method for ecotoxicological diagnosis and revealing the mechanism of soil Cd toxicity.

Rapidly solidified 2024 aluminium alloy powders were mechanically milled, then consolidated to bulk form. The microstructural changes of the powders in mechanical milling (MM) and consolidation process were characterized by X-ray diffraction analyses and transmission electron microscopy observations. The results showed that mechanical milling reduced the grain size to nanometer, dissolved the Al2Cu intermetallic compound into the aluminium matrix and produced an aluminium supersaturated solid solution. During consolidation process. the grain size increased to submicrometer, and the Al2Cu and Al2(Cu, Mg, Si, Fe, Mn) compounds precipitated owing to heating. Increasing consolidation temperature and time results in obvious grain growth and coarsening of second phase particles. The tensile yield strength of the consolidated alloy with submicrometer size grains increases with decreasing grain size, and it follows the famous HallPetch relation

Mechanically alloyed Al-4.9Ni-4.9Ti powders were prepared by milling mixed aluminium, titanium and nickel powders, and then consolidated by hot hydrostatic extrusion. The microstructures of milled powders and extruded bars were characterized by X-ray diffraction and transmission electron microscopy observation. The results show that mechanical alloying and consolidating processes have great effects on the microstructures and mechanical properties of extruded materials. Polycrystalline materials having an ultrafine grain size may be prepared by mechanical alloying. The strength and thermal stability are improved with the increasing of processing time of mechanical alloying, since grain size decreases and volume fraction of dispersoids increases as milling time increased.
