Methionine(Met)is an essential and first limiting amino acid in the poultry diet that plays a significant role in chicken embryonic development and *** present study examined the effect of in ovo injection of DL-Met and L-Met sources and genotypes on chicken embryonic-intestinal development and *** eggs of the two genotypes,TETRA-SL layer hybrid(TSL)—commercial layer hybrid and Hungarian Partridge colored hen breed(HPC)—a native genotype,were randomly distributed into four treatments for each *** treatment groups include the following:1)control non-injected eggs(NoIn);2)saline-injected(SaIn);3)DL-Met injected(DLM);and 4)L-Met injected(LM).The in ovo injection was carried out on 17.5 d of embryonic development;after hatching,eight chicks per group were sacrificed,and the jejunum was extracted for *** results showed that both DLM and LM groups had enhanced intestinal development as evidenced by increased villus width,villus height,and villus area(P<0.05)compared to the *** DLM group had significantly reduced crypt depth,glutathione(GSH)content,glutathione S-transferase 3 alpha(GST3),occludin(OCLN)gene expression and increased villus height to crypt depth ratio in the TSL genotype than the LM group(P<0.05).The HPC genotype has overexpressed insulin-like growth factor 1(IGF1)gene,tricellulin(MD2),occludin(OCLN),superoxide dismutase 1(SOD1),and GST3 genes than the TSL genotype(P<0.05).In conclusion,these findings showed that in ovo injection of Met enhanced intestinal development,and function,with genotypes responding differently under normal *** also influenced the expression of intestinal antioxidants,tight junction,and growth-related genes.

Dry-fermented sausages are a good source of bioactive peptides,whose stability against gastrointestinal(GI)digestion determines their *** study focused on evaluating the effect of peptide extracts from sausages fermented with Staphylococcus simulans QB7 during in vitro simulated GI digestion,including peptide profiles and antioxidant and anti-inflammatory *** present in sausages were degraded during digestion,with molecular weight reduced from>12 kDa to<1.5 ***,the content of amino acids increased from 381.15 to 527.07 mg/g,especially tyrosine being found only after GI *** anti-inflammatory activities were increased after GI digestion,however,the changes in antioxidant activities were the opposite.A total number of 255,252 and 386 peptide sequences were identified in undigested,peptic-digested and GI-digested samples,***,BIOPEP-UWM and admetSAR were used to further predict the functional properties and intestinal absorption of the identified peptide sequences from GI ***,18 peptides were discovered to possess either antioxidant or anti-inflammatory capacities.

Desiccation and osmotic resistance mechanism of Cronobacter spp. isolated from powdered infant formula

Cronobacter spp. has strong resistance to desiccation and high permeability in Enterobacteriaceae， and powdered infant formula (PIF) is one of the main contamination routes. In recent years， the contamination of Cronobacter spp. in PIF incidents occur from time to time， causing infant serious diseases or death. In this investigation， matrix-assisted laser desorption/ionization time of flight mass spectrometry was used to identify the phenotypes of 35 Cronobacter strains isolated from PIF and its processing environment. Subsequently， the isolates were evaluated for drying and osmotic pressure tolerance. The results showed that the deactivation rate of the strains ranged from 9.01% to 77.57%， and the highest osmotic pressure condition the strains could tolerate was 6% NaCl. In addition， there was a positive correlation between biofilm formation ability and desiccation resistance. Combined with transcriptomics， Cronobacter spp. can activate biofilm synthesis， produce more trehalose， accumulate betaine and electrolytes to stabilize intracellular structure under the two treatment conditions. 31 and 43 genes were found related to desiccation and permeability resistance， respectively. And some genes (cysM， thuF， ycjO， et al) were found to be associated with two tolerances for the first time.

Tropane alkaloids(TAs)are a kind of plant secondary metabolite that mainly originate from *** have potent anticholinergic activity,and are well-known anticholinergic drugs,but have also been reported as plant *** studies have been conducted on TAs,but no scientometric research has been *** study aimed to expound the knowledge network and development of the feld of TAs and predict the emerging development topics based on *** particular,this research combined VOSviewer and CiteSpace for visualization and covered 1,298 related scientifc publications(1953–2022).The research on TAs is rapidly developing,with the participation of 86 countries,1,129 research institutions,and 4,087 ***,the university of Geneva,and *** are the most productive country,institution,and researcher,***,the main research topics on TAs include biosynthesis,in vitro synthesis,chemical synthesis,and determination *** 2018,the monitoring of TAs in food related to human health has shown citation burst characteristics,which is considered an emerging development trend in the *** fndings of this study will enable researchers to quickly tap into the knowledge background/structure of TAs from massive data to provide a reference for further research.

Metabolite acetyl-L-carnitine participates in Bifidobacterium animalis F1-7 to ameliorate atherosclerotic inflammation by downregulating theTLR4/NF-κB pathway

This study aimed to explore the effect of Bifidobacterium animalis F1-7 on the improvement of atherosclerotic *** model ApoE^(-/-)mice were orally administered with *** F1-7 for 12 *** probiotic intervention reduced the plaque areas in aorta and the accumulation of macrophages,and downregulated the expression of toll-like receptor 4(TLR4)/nuclear factorκB(NF-κB)pathway to reduce the levels of inflammatory *** widely-targeted metabolomics analysis showed that acetyl-L-carnitine(ALC)in the intestine of atherosclerotic mice was significantly increased after *** F1-7 *** analysis proved that ALC was associated with atherosclerotic inflammatory *** using oxidized low density lipoprotein induced macrophage foam cells,we further verified that ALC could reduce lipid accumulation and inflammatory response in foam cells by downregulating the TLR4/NF-κB ***,our results revealed that *** F1-7 upregulated the metabolite ALC to downregulate the inflammatory responses,leading to the reduction of plaque accumulation of atherosclerosis.

Rosmarinic acid regulates lipid accumulation through lipid metabolism and anti-inflammatory

Obesity caused by poor eating habits has become a global public health issue and harms human health. Rosmarinic acid (RA) is a natural active substance with many biological functions like antioxidant. However， the function of RA’s lipid-lowering effect and mechanism are not entirely clear. This study aimed to explore the effect of RA on obesity and its action mechanism in Caenorhabditis elegans. RA not only alleviated intestinal inflammation and change the composition of unsaturated fatty acid， but also decreased fat storage and adjusted the size and quantity of fat droplets without threatening development and reproduction or affecting energy intake. In addition， RA improved the integrity of intestinal barrier function in C. elegans. RNA sequencing and qRT-PCR comprehensively revealed that the lipid-lowering mechanism mediated by RA might involve lipid metabolism and anti-inflammatory pathways. Among them， RA regulates lipid metabolism by reducing fat synthesis through SBP-1and increasing fatty acid β-oxidation via NHR-49. Furthermore， the anti-inflammatory pathway was associated with RA’s enhancement of the ratio of unsaturated fatty acid and alleviation of inflammatory reactions caused by PAO1. Therefore， RA regulated lipid metabolism and relieved inflammation， which had the potential for dietary supplements or functional foods.

This study investigated the effects of salt(3%and 6%,m/m)and rice flour(10%and 20%,m/m)addition in sour meat,a traditional Chinese fermented *** was found that salt has greater effect than rice flour addition in spontaneous ***-salt groups had lower pH and higher titratable total *** the low-salt groups,the dominant genera were Lactobacillus and Lactococcus,whereas Staphylococcus,Weissella,and Tetragenococcus were dominant in the high-salt *** total free amino acids and essential amino acids,organic acids,hexanoic acid ethyl ester and octanoic acid ethyl ester were found in the low-salt *** RDA analysis revealed that Lactococcus was closely related to product quality,with the S3F10(3%salt and 10%rice f lour)group outperforming the others in the sensory ***,3%salt and 10%rice flour were considered more appropriate for the production of healthy and tasty fermented sour meats.

Application of nondestructive techniques combined with image processing techniques has been increasing in investigating the internal structure of food *** resonance imaging(MRI)is one of these *** aim of this research is to investigate the effect of coating formulation on structural properties of turkey nugget samples(turkey nugget with typical batter,tragacanth-containing batter and tragacanth)by *** revealed that the changes caused by the batter formulation could also be examined using the tomographic *** results also indicated that the brightness of the MRI images of the nugget core and crust decreased during *** core of the nugget with the tragacanth-containing batter was brighter revealing its higher moisture ***,the nugget core was less reduced in this sample compared with the other *** research aimed to present a valuable knowledge about nugget frying pertaining to quality evaluation.

Hydrothermal treatment of pearl millet grains:Effects on nutritional composition,antinutrients and flour properties

Pearl millet(Pennisetum glaucum)is one of the major millets with high nutritional *** crop exhibits exceptional resilience to drought and high ***,the processing of pearl millet poses a significant challenge due to its high lipid content,enzyme activity,and presence of ***,it becomes imperative to enhance the quality and prolong the shelf life of pearl millet flour by employing suitable *** treatment in the food industry has long been seen as promising due to its potential to reduce microbial load,inactivate enzymes,and improve nutrient *** study aims to investigate the effects of hydrothermal treatment on the quality characteristics of pearl *** independent variables of the study were soaking temperature(35,45,55℃),soaking time(2,3,4 h),and steaming time(5,10,15 min).Treatment conditions had a statistically significant effect on nutrient *** antinutrients like tannins and phytates were reduced by 0.99% to 5.94% and 0.36% to 6.00%,respectively,after the *** activity decreased significantly up to 10% with the treatment *** findings of this study could potentially encourage the use of pearl millet flour in the production of various food items and promote the application of hydrothermal treatment in the field of food processing.
