Relationship of chemical properties of different peanut varieties to peanut butter storage stability

This study examined the effect of peanut quality on the storage stability of peanut butter. The quality of 17 varieties of peanuts was analyzed, and each was used to prepare peanut butter. For different storage temperatures and durations, stability of the peanut butter was measured according to three indicators： peroxide value, acid value, and centrifugal rate. The correlation between peanut components and peanut butter storage stability was also investigated. The results indicated significant differences in fatty acid composition between different varieties of peanut. Peanut butter prepared with high oleic peanuts（Kainong 17-15） had a significantly longer shelf life than that of other varieties. The significant correlation between the stability of peanut butter and peanut quality suggests that oleic acid and linoleic acid were the main influencing factors on stability. This study finds that the high oleic peanuts（HOP） is the most suitable variety for making peanut butter, which can allow farmers and processors to choose the specific variety for better product and shelf life.

With the rapid growth of China＇s economy, rising demand for safety food has been accompanied by frequent food safety scandals. Given that China＇s farming is dominated by millions of small-scale farms, ensuring food safety is a major challenge facing the public and private sectors. The direct farm （DF） program, initiated in 2008, represents one of the government＇s major initiatives to modernize the distribution of fresh fruit and vegetables （FFV） and improve food safety. Under the DF program, participating national and international retailers are expected to establish more direct procurement relationships with farm communities. While it is often claimed that greater participation by retailers in the production and post-harvest processing implied the DF program will lead to improved quality, safety and traceability, systematic evidence remains elu- sive as existing studies are largely narrative, based on case studies, or theoretical inference. Little empirical evidence is available for a broader evaluation of the DF program. This paper aims to fill this gap by assessing the overall performance of a single retailer＇s DF experience with respect to the procurement and food safety of FFV. We use data from a survey of production managers of 35 DF production bases （PBs） spread across 11 provinces, 3 cities and 1 autonomous region in China. The results show a mixture of opportunities and challenges. On one hand, the DF program improves production practices and distribution channels of FFV produced on its PBs, thus facilitating the move of China＇s food system towards improved food safety compliance. On the other hand, significant heterogeneity in the traceability of food and the ability of DF to meet higher safety standards is evident both across major product categories and across household-operated vs. firm-operated PBs. The paper concludes with policy implications.

In the present context, the objective of this study was to synthesize and analyze the content of AA of macadamia protein and the impact of hydrogen ion concentration (pH) on AA composition. The determination of AA mainly by cation-exchange chromatography was also investigated. Reproducible and reliable techniques for quantification and identification of AA usually require derivatization. However, techniques such as AA analyzer are composed of cation-exchange chromatography and other components can sideline the derivatization with significant accuracy. The present analysis revealed a higher concentration of essential amino acids especially acidic AA, Glu and Asp and basic AA, Arg than other AA in macadamia protein. The study constitutes first report of use of bubble chart for evaluation of AA and explaination of AAS. The results may elaborate that the degradation of AA of macadamia protein for extraction of pH 11 is caused by the impact of pH. Moreover, the nutritional values of AA present in macadamia protein could change for the better by adjusting pH of extraction.

Global mapping of artificial surfaces at 30-m resolution

Urbanization is expected to accelerate with population growth and economic development at the global scale. The artificial surface is the main land cover form of urbanization. On the one hand, urbanization provides spaces for industry, economic activities and residence. On the other hand, artificial surfaces change the earth surface to a large extent, thus significantly affecting natural processes such as the heat exchange, hydrological processes and ecological balance. Therefore, the global mapping of artificial surfaces is valuable for both natural science and social science. This study produced the global artificial surface maps at 30-m resolution for two base-years using the satellite images acquired around 2000 and 2010. First, we proposed a new definition of "artificial surface" based on patch level with consideration of its geographic meaning and image features at 30-m resolution. Second, pixel-based and object-based image processing techniques were combined for the extraction of artificial surface patches. Finally, human editing and a quality control system were employed to guarantee the quality of global mapping. Independent accuracy assessments show that the user’s accuracy of this product is higher than 80%. It can be concluded that the product is the most reliable one among all the available global datasets of artificial surfaces(or related types). The data can significantly contribute to various research fields, such as urbanization and ecosystem assessment.

High-moisture extrusion technology should be considered one of the best choices for producing plant-based meat substitutes with the rich fibrous structure offered by real animal meat ***,the extrusion process has been seen as a“black box”with limited information about what occurs inside,causing serious obstacles in developing meat *** study designed a high-moisture extrusion process and developed 10 new plant-based meat substitutes comparable to the fibrous structure of real animal *** study used the Feature-Augmented Principal Component Analysis(FA-PCA)method to visualize and understand the whole extrusion process in three ways systematically and *** established six sets of mathematical models of the high-moisture extrusion process based on 8000 pieces of data,including five types of *** FA-PCA method improved the R^(2) values significantly compared with the PCA *** Way 3 was the best to predict product quality(Z),demonstrating that the gradually molecular conformational changes(Y^(n'))were critical in controlling the final quality of the plant-based meat ***,the first visualization platform software for the high-moisture extrusion process has been established to clearly show the“black box”by combining the virtual simulation *** the software,some practice work such as equipment installation,parameter adjustment,equipment disassembly,and data prediction can be easily achieved.

Fluid Dynamics Simulation of High Speed Jet under Distinct Initial Input Velocities

The aim of this study is to execute the fluid dynamics simulation of high speed jet under distinct input velocities (i.e., 114.1, 142.4, 165.6, 186.2 and 286.9 m/s). In particular, this study focuses on the impact velocity and velocity of two-phase flow (gas-liquid). Firstly, the three-dimensional geometric model of high speed jet is established on the basis of the actual operational conditions. Next, the unstructured grids of high speed jet are generated by means of ANSYS Fluent. Finally, the fluid dynamics simulation of high speed jet is implemented by using Fluent. The simulation results show that when the input velocity of the liquid increases, the impact velocity declines sharply, while according to the Bonuli law of conservation of energy, the impact effect on the device shows exponential growth with increasing input velocity. In addition, the relationship between the impact velocity and the input velocity and the relationship between the impact effect on the device and the input velocity are achieved, which could provide certain theoretical guidance for predicting the working pressure and velocity of high speed jet based on real input velocity.
