Using endogenous pigments to recolour roasted green tea

Roasted green tea exhibits undesirable dark green that can seriously affect sensory quality,market price,and consumer acceptance.The aim of this work was to propose a method of improving the appearanee of the roasted green tea.In this study,rehydration with freeze-drying.RFD)was used to recolour the tea leaves by redistributing the endogenous pigments.The results indicated that the colour of the roasted green tea changed from dark green to bright green after the RFD treatme nt,the values of L^(*)and b^(*)were significa ntly in creased(P<0.05),and the value of a^(*) was sigrdficantly decreased(P<0.05).In addition,the RFD treatment making the yellow-green pigments transfer onto the surface of the tea leaves also induced a change in pigment contents,including chlorophylls,carotenoids,and flavonoid glycosides.The well-defined optimum parameters for the rehydration process were moisture content of tea leaves at 35 per cent,water temperature 25℃,and a standing time of 1.5 h.

Ganoderma lucidum was widely used as medicine and food in China for over 2000 years because of its various pharmacological and physiological activities.Ganoderma lucidum polysaccharides was the main effective component in Ganoderma lucidum,a large amount of investigations reported that Ganoderma lucidum polysaccharides had pharmacological functions,including reducing blood glucose,blood lipid,anti-tumor,immunoregulation and antioxidation functions[1].However,the technology of extract polysaccharides from Ganoderma lucidum in previous study was not suitable for industrial application because of low solid-liquid ratio in extraction process and utilization of overmuch alcohol in alcohol precipitant process and low purity of yield,Therefore,it was necessary to conduct systematic study about extraction and purification of Ganoderma lucidum polysaccharides for industrial aplication.Water extraction was the most common method to extract polysaccharides from crude drugs,while the products usually contained a lot of impurities,hence,it was necessary to improve the purity of polysaccharides extracted from water for pharmaceutical utilize in the field of traditional Chinese medicine.Alcohol precipitant process could remove impurities which could dissolve in alcohol.In this study,secondary alcohol precipitant was used to further purification.The method of dialysis by flowing water was used to remove small molecular weight impurities such as pigments.freeze-drying.technology could provide loose product with excellent water solubility.In order to insure the accuracy of results,single factor tests and orthogonal test were used using yield amount and purity as index.
