The natural flavonoids in foods of plant origin have been well-characterized due to their beneficial biological ***,the information regarding the flavonoid compounds in edible insects remains severely *** the present study,we used a metabolomics approach to identify the flavonoid compounds at the large-scale level in the Chinese oak silkworm,Antheraea pernyi Guérin-Méneville(Lepidoptera:Saturniidae),an traditional edible insect in *** study identified more than 200 flavonoid metabolites in the larval midgut of *** with LC-ESI-MS/MS *** flavonoid metabolites were divided into eight subclasses including flavones(103),flavonols(34),flavonoids(28),flavanones(20),polyphenols(19),isoflavones(9),anthocyanins(9),and proanthocyanidins(4).The relative content of flavones were most abundant,with a value of 36.74% of the *** top five flavonoid components in *** were hyperoside,isoquercitroside,tricin 7-O-hexoside,hesperetin 5-O-glucoside and protocatechuic acid,accounting for 51.17% of the total flavonoids,with the hyperoside exhibiting the most abundant compound(18.07% of the total).We also found that over 200 flavonoids are first reported in *** findings indicated that targeted metabolomics is an useful approach to identify flavonoids in edible insects that contains abundant flavonoids than we knew.

Although unconventional in the USA,entomophagy,or the practice of consuming insects,can provide a nutritious relief to many malnourished people in developing *** insects are part of numerous traditional diets found in over 113 countries,including those in Asia,Africa,and South ***,there are 2 billion people consuming over 2000 recorded edible *** of these worldwide insects contain amounts of protein,fat,vitamins,and minerals comparable to commonly eaten *** the popularity of crickets in both developing and developed countries and the nutrient density of locusts,these insects were of particular *** flour,made from a major food crop around the world,was used as an effective vehicle to deliver these insect *** use of inexpensive single-screw cold-forming extrusion technology,due to its capability of high production rate yet low capital and operating costs,was employed in making insect-fortified *** feasibility of incorporating edible insect flours from cricket and locust in an extruded rice product has been demonstrated to be successful with acceptable shelf stability and sensory ***,the insect rice products developed were energy dense(high fat content)and as an excellent source of *** also contained considerable amounts of dietary fibre and *** evaluations involving 120 untrained panelists-suggested cricket formulations were well accepted compared with locust *** is a positive outlook on the overall acceptance of entomphagy even in developed *** a staple food providing 20%of the world’s dietary energy and consumed by over 1 billion people,rice is an ideal vehicle to deliver nutrients carried by edible *** incorporation of insect flours in processed foods such as extruded rice products can greatly promote the consumer acceptance by disguising the‘yuck’factor associated with intact insects.

Physicochemical properties of cricket(Gryllus bimaculatus)gel fraction with soy protein isolate for 3D printing-based meat analogue

Cricket(Gryllus bimaculatus)gel was fractionated and mixed with different soybean protein isolate(SPI)con-centrations,and its characteristics were evaluated to determine its potential use as a meat *** crickets were separated into the filtrate,supernatant,and pellet fractions by centrifugation and freeze-drying,and powdered and mixed with 18%SPI at different concentrations(5%-20%).The filtrate fraction had the lowest protein content and the highest fat and carbohydrate content among the nutrient ***,the supernatant and pellet fractions had high protein,low fat,and low carbohydrate ***-PAGE detected relatively low-molecular weight *** muscle proteins were identified,including actin,myosin,and hemocyanin,a protein that transports oxygen in *** the rheological characteristics of the cricket fraction,the entire fraction exhibited G’>G"in both the frequency and the temperature sweep tests,revealing a tendency for gel-like *** all cricket fractions,both G’and G"increased with increasing fraction powder *** printed,supernatant fractions had no structural stability,pellet fractions had 5%-15%stability,and filtrate fractions had 5%-20%*** three interval thixotropy test revealed that the pellet fraction had a recovery rate of over 90%after high shear *** profile analysis showed an increase in both hardness and *** heat treatment,cohesiveness was higher than adhesiveness,indicating greater ***-emission scanning electron microscopy results revealed that the pellet fraction was denser than the other fractions,particularly at higher *** on the overall characteristics,15%pellets were found to be the most appropriate fraction and concentration.
