With the continuous improvement of living standards,people’s demand for meat products is increasing.However,the high fat content in traditional meat products will result in additional chronic diseases,causing harm to human health.Hence,there exists an urgent need for research on fat reduction technology of meat products.Recently,physical modification technologies and protein/carbohydrate/lipid/complexbased fat substitutes have gained great interest in reducing animal fat,which can simultaneously improve the technological and sensory properties of meat products.In this thriving field,many newly presented works lack comprehensive summary and critical comparison.Therefore,this paper reviews the latest research progress on the application of physical technologies and fat substitutes in fat-reduced meat products,highlighting their advantageous and disadvantageous in reducing total fat,improving the fatty acid profile and modifying technological and sensory properties of products.Finally,future trends are proposed with the aim to provide new insight into the development of quality fatsubstituted meat products.

Spherical （Y, Gd）BO3：Eu^3＋ phosphor particles with a narrow size distribution（2 -4 μm） was obtained by firing the Y-Gd-Eu-BO3 precursor prepared in a W/O style EMULSION system. In the W/O EMULSION system, kerosene, used as oil phase, was mixed with Span 80 and Tween 80 compounds which were employed as the emulsifier with an HLB （hydrophile-lipophile balance） value of 5.2- 5.3. Both rare earths （Y, Gd and Eu） nitrate and boric acid solution or ammonia solution were used as aqueous phase. The synthesis conditions, such as EMULSION composition, emulsifying style, precipitation reaction process, reaction temperature, morphology control, and so on, were investigated, and the optimum synthesis conditions for preparing spherical （Y, Gd）BO3：Eu^3＋ phosphor was obtained. The phosphor was characterized by XRD, SEM, laser particle size analysis, emission and excitation spectrum under vacuum ultraviolet （VUV）, and so on. The phosphor synthesized using the water-in-oil EMULSION method with median diameter （D50） of 2 - 4 μm shows agreeable photoluminescence （PL） property and sphericity. The main emission peak appears at about 593 nm, which corresponds to ^5D0→^7F1 transition （magnetic-dipole transition） of the Eu^3＋ ion. The cell parameters and powder diffraction data were indexed. The structure of the phosphor belongs to the hexagonal system with space group P63/m.

Pediocin PA-1,originating from Pediococcus acidilactici,is regarded as a broad-spectrum bacteriocin in lactic acid bacteria.It was reported that PA-1 could highly expressed in Pichia pastoris but without bioactivity,resulting from covalent binding by "collagen-like" materials presented in the supernatant.In this study,P.pastoris was used as the host for expression of fusion protein PA-1-linker-HFBI(PB),and Ultra-filtration and aqueous two-phase system(ATPs) extraction were employed to purify the recombinant protein PB.Antibacterial activity assays showed the fusion protein PB retained the biological properties of native PA-1,indicated HFBI can overcome the unfunctional expression of PA-1 in P.pastoris.In addition,Water contact angle,oil EMULSION antibacterial activity assay indicated PB also retained the biological properties of HFBI.The method of active expression of PA-1 in P.pastoris and the applications of PA-1 in food EMULSION and antiseptic explored a novel technology to be used for other bacteriocins with the same feature of pediocin PA-1 molecule.

This paper describes the formation mechanism and mode of the EMULSION odor of the cold rolling process,and introduces the relevant environmental regulations and methods used to measure the EMULSION odor.Studies were conducted with respect to these issues.The technical measures used to minimize the EMULSION odor,particularly the adjustment of the chemical formula of the cold rolling EMULSION,are illustrated in detail.The study results have been successfully applied in cold rolling production,and a significant reduction in the EMULSION odor is achieved.

The EMULSION liquid membrane technique was used to extract amino-J acid from industrial dye waste-water.The effects of stirring speed,ratio of the EMULSION to water(Rew),ratio of the oil to internal phase(Roi)and membrane phase components on the extraction rate were investigated and optimized.The results showed that the extraction rate of amino-J acid approached 97% when the stirring speed was 300 r/min,Rew 1:6,Roi 1:1,trioctylamine(TOA)3 mL/100 mL kerosene,and methyl?didecyle?alcohol?acrylate(LMA-2)3 g/100 mL kerosene,respectively.The extraction rate had not changed with the oil phase reused for times.

Water/Oil Pickering EMULSION Stabilized by Magnesium Oxide Particles: A Potential System with Two Active Substances (Paracetamol and Griseofulvin)

Pickering EMULSIONs are systems without surfactants, stabilized by solid particles. These EMULSIONs are experiencing a renewed interest, on the one hand, because it is preferable to limit the use of synthetic surfactants for toxicological and environmental reasons and, on the other hand, the need to make new formulations in order to control the drug release patterns by encapsulation or controlled release. Thus, we were interested in the formulation and evaluation of W/O Pickering EMULSIONs stabilized by particles of magnesium oxide with paracetamol in the internal phase and griseofulvin in the external phase. The Bancroft rule served as a model for the formulation. The emulsification was carried out by progressively adding an aqueous phase dispersed in an oil-dispersing phase using a turbo rotor stator mixer. The stability of these EMULSIONs was studied using several parameters (droplet size, pH, viscosity, conductivity ...) and the qualitative and quantitative analysis of the active ingredients by UV-visible spectrophotometry. The results obtained showed that the dye test and the conductivity measurement confirmed the W/O nature of these EMULSIONs. Some parameters such as droplet size, pH and viscosity were strongly influenced by the amounts of magnesium oxide particles and the two active ingredients used. The qualitative and quantitative analysis of the active ingredients confirmed the presence of griseofulvin in the oil phase and paracetamol in the aqueous phase. Thus, we have succeeded in developing a stable W/O Pickering EMULSION with magnesium oxide particles. In addition, we were able to incorporate paracetamol into the dispersed phase and griseofulvin into the dispersing phase of the EMULSION.

Objective: To study the effect of preoperative Brucea javanica oil EMULSION + conventional chemotherapeutic drugs intraperitoneal chemotherapy on the expression of oncogene in advanced gastric cancer after surgical resection. Methods: The patients who were diagnosed with advanced gastric cancer in our hospital during the period of March 2015 to October 2017 were randomly divided into the combined group received preoperative Brucea javanica oil EMULSION + conventional chemotherapeutic drugs intraperitoneal chemotherapy, control group received conventional chemotherapeutic drugs intraperitoneal chemotherapy. The tumor markers in serum were measured before and after chemotherapy, and the expression of oncogenes in the lesion was measured after operation. Results: After chemotherapy, the levels of CEA, CA199, G17 and TK1 in the serum of the two groups were significantly decreased and the decreasing trend of CEA, CA199, G17 and TK1 in the serum of the combined group was more significant than that of the control group. The mRNA expression of CyclinD1, FRA-1, Bmi-1, c-Met, HER-2, CAT-D, MMP2, MMP7 in gastric cancer of combined group were significantly lower than the control group, and the mRNA expression of PTEN, p16, KISS-1, Caspase-3, TSPYL-5, TIMP1, RECK were significantly higher than that of the control group. Conclusion: Preoperative Brucea javanica oil EMULSION + conventional chemotherapeutic drugs intraperitoneal chemotherapy can more significantly regulate the expression of oncogene in gastric cancer than conventional chemotherapy drugs.

Experimental Study on Latent Heat Storage Characteristics of W/O EMULSION by Ultrasonic Wave Impression

This study aims to develop a stable EMULSION-based phase change material（PCM） for the solar thermal energy storage applications. An n-Octacosane /water EMULSION was prepared and some nano-particles were dispersed in the EMULSION as stabilizers to enhance the stability. The effects of different emulsification systems on the stability of EMULSIONs were evaluated by the freeze-thaw method. There appeared to be a minimum effective concentration of both the emulsifier and the stabilizer to maintain the stable EMULSION. Thermal analysis by differential scanning calorimeter（DSC） indicated that the degree of supercooling of the EMULSION was low.

The flowable latent heat storage material like Oil/Water type EMULSION, microencapsulated latent heat material-water mixture or ice slurry, etc., is enabled to transport the latent heat in a pipe. Supercooling phenomenon of the dispersed latent heat storage material in continuous phase is obstructed by a latent heat storage. The latent heat storage rates of dispersed waterdrops in W/O (Water/Oil) EMULSION are investigated experimentally in this study. The waterdrops in EMULSION have the diameter within 3 - 25 μm, the averaged diameter of waterdrops is 7.3 μm and the standard deviation is 2.9 μm. Supercooling release of waterdrops in EMULSION is examined by short time impressing of the ultrasonic. The direct contact heat exchange method is chosen as the phase change rate evaluation of waterdrops in W/O EMULSION. The supercooled temperature is set as parameters of this study. The previous obtained experimental result, as the condition without impressing ultrasonic wave, showed that the 35 K or more degree from melting point brings 100% latent heat storage rate of W/O EMULSION. It is clarified that it is possible to reduce 20 K of supercooling degree by impressing the ultrasonic.
