Whey proteins are known for their high nutritional value and bioactivity, notably great potential is found on α-lactalbumin. The objective of this study was to evaluate antioxidant, antiglycant and ACE (angiotensin converting enzyme)-inhibitory activity of α-lactalbumin peptides obtained from enzymatic hydrolysis with Alcalase through different hydrolysis conditions. The optimization of enzymatic hydrolysis was studied by response surface methodology variating enzyme:substrate ratio (0.0050%, 0.0525% and 0.1000% w/w) and time (0, 30 and 60 minutes) measuring antioxidant activity by ABTs and ORAC-Fl (response variables), founding an augment of this activity with time. Characterization of seven samples showed increasing hydrolysis with time. Hydrolysate obtained with 0.1000% w/w and 60 minutes demonstrated higher antioxidant activity related to greater hydrolysis. This hydrolysate did not show antiglycant activity but promoted advanced glycation end products formation with methylglyoxal and glucose. In contrast, this sample showed 30% of ACE inhibition when compared to Captopril, having great potential by enhancing hydrolysis.

α-lactalbumin (α-lA) might increase its antioxidant potential after hydrolysis. In particular, low molecular weight (lMW) peptides showed greater antioxidant capacity. Different hydrolysis conditions with Alcalase enzyme were optimized with a composite central design and surface methodology. sample obtained after 0.1% (w/w enzyme:substrate), 60 min hydrolysis, ultrafiltrated with membranes of 3 kDa (named 4 lMW), showed the greatest antioxidant values: 1.574 ± 0.060 and 1.636 ± 0.076 μmolTE/mg of protein for ABTs and ORAC-Fl, respectively. sample 4 lMW produced mild ACE inhibition capacity, 22% related to Captopril. 4 lMW was submitted to in vitro gastrointestinal conditions using α-amylase, pepsin, pancreatin and bile-extract;its antioxidant capacity was enhanced by the shorter peptides released, confirmed by sE-HPlC. Antioxidant capacity of digested 4 lMW sample (D 4 lMW) was 1.743 ± 0.086 and 2.542 ± 0.245 μmolTE/mg of protein for ABTs and ORAC-Fl, respectively, showing improvement on bioaccessibility. Intestinal cells viability was higher for D 4 lMW.

The different types of toxic substances that affect farm animals in Argentina are described. These substances include (a) toxic plants, such as solanum glaucophyllum. Baccharis coridifolia, Festuca arundinacea; (b) mycotoxins, such as zearalenone, tremorgenic mycotoxins, and ergoalkaloid; (c) trace elements, such as fluorine, copper, molybdenum, and arsenic; and (d) others, such as toxic algae and pesticides. The direct and indirect economic loss of farm animals associated with these toxic substances in Argentina is roughly estimated at 50 million dollars a year. A number of recommendations are made to ameliorate the situation. 1989 Academic Press, Inc.

Antivirulence therapy inhibits bacterial virulence factors, thus preventing the development of infection without affecting bacterial growth. The development of new antibiotics is complicated by the increasing incidence of antibiotic resistance in pathogenic bacteria. Antiviru-lence therapy is a promising alternative to traditional an-tibiotic therapy for the treatment of infectious disease, either alone or in combination with antibiotic treatment. In this review, we consider patents concerning inhibition of several bacterial virulence factors： adhesion/colonization, secretion systems, cellular signalling systems and antimicrobial resistance mechanisms. Finally, we emphasize the importance of analyzing new targets and/or molecules in this feld and of considering possible resistance mechanisms.

In this paper we used several data mining techniques to analyze the coevolution of hydrogeological and socioeconomical data for the Toluca Valley in Mexico. We found non trivial relations between two historic data bases that make clear that groundwater and economy may be much more linked than it was thought before. In particular, we found that hydrogeological data trends change during economical crisis and election years in Mexico. This shows that different macroeconomical policies implemented by several administrations have a direct impact in the way groundwater is used. We also found that hydrogoelogical data evolve in the direction of population transformation from rural to urban, which could represent a whole paradigm shift in groundwater management with profound repercussions in policy making.

The aim of the present paper was to analyze the influence of sampling and storage procedures on nitrite con- centration values in the saliva of healthy persons. The samples were obtained and stored under varied condi- tions, and processed using the Griess method. Results: when the salivary nitrite concentration was measured immediately after collection a significant dependence on the collection time was observed. A mean value of 94 μmol/l (range 3 - 625) was obtained at 8:30 am. This value decreased significantly with time (p lue of 68 at 12:30 noon. Concerning the sample storage, a significant increase in the nitrite concentration was observed after 2 hrs, either at 4?C or at room temperature (p spite of the high variability between individuals the values for each individual showed a marked constancy independent of the sampling day. According to our results, by controlling pre-analytical parameters, principally sampling and storage procedures, reproducibility is improved.
