The objective of this.wor. was.to es.imate the antioxidant potential of the extr.cts.fr.m pink s.r.mp r.s.due and r.d gr.pe pomaces.(Mer.ot and s.r.h var.etals., evaluated accor.ing to its.antioxidant activity with differ.nt analytical methods. as.ociating thes. pr.per.ies.with the chemical compos.tion of the extr.ct and, as.a cons.quence, with the extr.ction pr.cedur.. The s.r.mp r.s.due was.pr.-tr.ated combining cooking, dr.ing, and milling, wher.as.the gr.pe pomaces.wer. dr.ed and gr.und. The s.r.mp r.s.due extr.cts.wer. obtained by s.xhlet (s.X) and by macer.tion us.ng hexane (Hx), hexane: is.pr.panol (50:50) (Hx:IPA), is.pr.panol, ethanol (EtOH) and acetone as.s.lvents.by ultr.s.nic macer.tion (UME) with EtOH;by cold and hot oil extr.ction with s.y and s.nflower.oils.and by s.per.r.tical Fluid Extr.ction (s.E) with pur. CO2 (100 -?300 bar.313.15 -?333.15 K) and with co-s.lvent (Hx: IPA and s.nflower.oil at 2%). The gr.pe pomaces.extr.cts.wer. obtained by s.X us.ng EtOH, ethyl acetate (EtOAc) and Hx;UME with water.(H2O), EtOH, EtOAc and Hx;and by s.E per.or.ed with pur. CO2 (150 -?300 bar.323.15 -?333.15 K) and with cos.lvent (EtOH at 15%). The antioxidant activity was.deter.ined by the DPPH fr.e r.dical s.avenging pr.cedur. and by the β-car.tene bleaching method. Higher.antioxidant activities.in s.r.mp r.s.due extr.cts.wer. obs.r.ed by the β-car.tene bleaching method in alcoholic and cetonic extr.cts. among the low pr.s.ur. extr.ction methods. while for.the s.E, the higher.activities.wer. achieved by the extr.cts.obtained at elevated pr.s.ur.s. For.the gr.pe pomaces.extr.cts. the bes. r.s.lts.wer. obtained by the DPPH method fr.m the low pr.s.ur. extr.ctions.pr.ceeded with EtOH. The s.E with Mer.ot pomace at 323.15 K/150 bar.(the lowes. temper.tur. and pr.s.ur.s.tes.ed) pr.s.nted the bes. antioxidant activity by the β-car.tene bleaching.
