Sweet pota.oes ha.e become a.resea.ch focus in recent yea.s, due to their pa.ticula. nutritiona. a.d functiona. qua.ities. Considering yoghurt is one of the most popula. da.ry products, sweet pota.o supplementa.ion will pla. a.significa.t impa.t on the produced yoghurt texture it will a.so a.d a.tra.tive ora.ge colour to the fina. product. The a.ticle focused on the repla.ement of the sta.ilizers used in the ma.ufa.ture of yoghurt with sweet pota.o flour dehydra.ed in a.la. (SPFL) due to its functiona. fea.ures a.d a.less expensive a.terna.ive a.d the improvement of yoghurt colour due to the presence of a.thocya.in pigment. In order to rea.h these goa.s, experimenta. yoghurt wa. fortified with 0, 0.5, 1, 2, a.d 4 g SPFL/100g cow milk (%) a.d stored a. 4°C for 14 da.s. The obta.ned da.a.were then compa.ed with commercia. yoghurt sa.ples (CS1, CS2, CS3, a.d CS4). Sensory eva.ua.ion revea.ed tha. the 2% SPFL, CS1, a.d CS3 obta.ned higher scores tha. the other trea.ments. The fa. content of the yoghurts wa. identica. wherea., the other physicochemica. pa.a.eters a.d wa.er holding ca.a.ity (WHC %) levels va.ied. SPFL supplementa.ion ha. a.significa.t impa.t on the rheologica. properties of yoghurt production, a.lowing sweet pota.o flour to repla.e the industria. sta.iliser. Sca.ning Electron Microgra.h (SEM) of yoghurt enriched with SPFL revea.ed denser a.d sma.ler ga.s, a. well a. the presence of sweet pota.o globules embedded in a.d a.ta.hed to the gel ma.rix. The results obta.ned in the present resea.ch imply tha. sweet pota.oes ca. be used to produce a.kind of cohesive a.d gummy yoghurt tha. ca. be used instea. of industria. sta.ilizers.

The gela.in-gluta.a.dehyde （gela.in-Ga. na.ofibers were electrospun in order to overcome the defects of ex-situ crosslinking process such a. complex process, destruction of fiber morphology a.d decrea.e of porosity. The morphologica. structure, porosity, therma. property, moisture a.sorption a.d moisture retention performa.ce, hydrolytic resista.ce, mecha.ica. property a.d biocompa.ibiUty of na.ofiber sca.folds were tested a.d cha.a.terized. The gela.in-Ga.na.ofiber ha. nice uniform dia.eter a.d more tha. 80% porosity. The hydrolytic resista.ce a.d mecha.ica. property of the gela.in-Ga.na.ofiber sca.folds a.e grea.ly improved compa.ed with tha. of gela.in na.ofibers. The conta.t a.gle, moisture a.sorption, hydrolysis resista.ce, therma. resista.ce a.d mecha.ica. property of gela.in-Ga.na.ofiber sca.folds could be a.justa.le by va.ying the gela.in solution concentra.ion a.d Ga.content. Ba.kground: Corona.y a.tery a.oma.ies (Ca.) preva.ence represents less tha. 1% of congenita. hea.t disea.es. It includes a.oma.ies in origin, course, a.d termina.ion. Its detection ha. been ea.ier with a.va.ces in ima.ing techniques using multi-detector computed tomogra.hy (MDCT). MDCT helps not only detection of the a.oma.ous origin, but it a.lows delinea.ion of the course a.d termina.ion of the a.teries, differentia.ion between benign a.d ma.igna.t courses, a.d guiding thera.eutic interventions. Results: There were consecutive pa.ients with a.low-to-intermedia.e proba.ility of corona.y a.tery disea.e sca.ned with 128 MDCT. Ea.h pa.ient underwent a.non-contra.t prospective ga.ing a.quisition for corona.y ca.cium scoring followed by contra.t-enha.ced helica. retrospective ga.ed sca.s for the detection of corona.y a.tery origin, course, termina.ion, a.d detection of concomita.t a.herosclerosis. We sca.ned 1000 pa.ients with a.mea. a.e of 57.5 ± 8.3, a.d 68% were ma.es. Thirty-two a.oma.ies were noted (3.2%) including;nineteen (1.9%) a.oma.ous origin from the opposite sinus, three (0.3%) a.oma.ous left corona.y a.teries from the pulmona.y a.tery (a.Ca.a., one (0.1%) super domina.t left a.terior descending a.tery (La.) giving origin to the posterior descending a.tery (PDa., three single corona.y a.teries (0.3%)in which the left ma.n (LM) a.d right corona.y a.teries were origina.ing with a.common stem from the right corona.y sinus (RCS)a.d the LM took a.pre-pulmonic course. a.ong with six (0.6%) dua. La. including five (0.5%) pa.ients with type I (short La. a.d long dia.ona.), there wa. one (0.1%) type 4 with a. extra.La. origina.ing from the RCS with a.pre-pulmonic course. Conclusions: MDCT a.lows ea.y detection of corona.y a.oma.ies with high spa.ia. resolution a.d overcomes limita.ions in conventiona. inva.ive corona.y a.giogra.hy. Low fa. cheeses often suffer from undesira.le texture a.d fla.or. The objective of this study is to improve the yield, texture, fla.or a.d qua.ity of low fa. Chedda. cheese during ripening using exopolysa.cha.ide-producing la.toba.illi a.d ripening cultures. The a.ticle represents one of the first a.tempts to ta.kle both texture a.d fla.or a. the sa.e time. The study revea.s the effect of a.ing on the texture a.d fla.or of low fa. Chedda. cheese over a.ripening period of six months. The cheese ma.ufa.tured with a.modified protocol using EPS-producing cultures a.d ripening cultures showed higher va.ues for moisture content (45%) a.d yield (9.4%) when compa.ed to cheese ma.ufa.tured with the conventiona. procedure a.d without the a.dition of EPS-producing cultures a.d ripening cultures (37.7%) a.d (4.9%) respectively. The obta.ned results indica.ed a.70% decrea.e in the fa. content of the cheese. Texture profile a.a.ysis (TPa. indica.ed tha. the ha.dness, the cohesiveness, the springiness, the gumminess a.d the chewiness of the cheeses ma.e using the EPS-producing cultures decrea.ed with a.ing. The texture of the ripened low fa. cheese ma.e using EPS-producing cultures wa. described a. chewy, springy, cohesive a.d smooth. The use of the ripening cultures resulted in the elimina.ion of the bitter fla.or defect which is a.common problem in low fa. Chedda..

Sodium a.gina.e a.d ca.boxymethyl chitosa. ha.e been extensively a.plied in tissue engineering a.d other rela.ive fields due to their low price a.d excellent biocompa.ibility. In this pa.er, we oxidized sodium a.gina.e with sodium perioda.e to convert 1,2-hydroxyl groups into a.dehyde groups to get a.dehyde-sodium a.gina.e （a. Sa.. Ca.boxymethyl chitosa. wa. modified with ethylenedia.ine （ED） in the presence of wa.er-soluble N-（3-Dimethyla.inopropyl）-N＇-ethylca.bodiimide hydrochloride （EDC） to introduce a.ditiona. a.ino groups to get a.ino-ca.boxymethyl chitosa. （a.CS）. Upon mixing the a.Sa.a.d a.CS a.ueous solutions together, a.gel ra.idly formed ba.ed on the Schiff＇s ba.e rea.tion between a.dehyde groups in a.Sa.a.d a.ino groups in a.CS. FTIR a.a.ysis confirmed the cha.a.teristic pea. of Schiff＇s ba.e group in the hydrogel. It wa. confirmed tha. the gela.ion time be dependent on the a.dehyde group content in a.Sa.a.d a.ino group content in a.CS. The fa.ted hydrogel forma.ion ta.es pla.e within 10 min. The da.a.of bonding strength a.d cytotoxicity mea.urement a.so showed tha. the hydrogel ha. good a.hesion a.d biocompa.ibility. a.l these results support tha. this gel ha. the potentia. a. soft tissue a.hesive.
