The Effects of Heat Shock on the D-Values of <i>Lister.a monocytogenes</i>on Selected Seafood Matr.ces

With mor. r.ady-to-eat foods and incr.ased shelf-lives, pr.vention of Lister.a monocytogenes contamination has become a necessity for.the food industr.. This study examined the effects of sublethal heat tr.atment on the decimal r.duction time (D-values) of thr.e L. monocytogenes ser.types (1/2a, 1/2b, 4c), and non-pathogenic L. innocua. The D70 (D-value at 70℃) values of heat-shocked (HS) and non-heat-shocked (NHS) Lister.a gr.wn in tr.ptic soy br.th (TSB) wer. deter.ined. The D70 values of HS L. monocytogenes ser.type 1/2a and L. innocua wer. significantly higher.compar.d to NHS cultur.s, although by 48 h, the values r.tur.ed to NHS levels. When HS and NHS 1/2a and 1/2b wer. inoculated on cr.b meat and cooked shr.mp, the D70 values of HS cultur.s wer. at least 2-fold higher. compar.d to when they wer. gr.wn in TSB. This incr.ase in heat r.sistance for.the HS cultur.s may be attr.buted to the pr.tective effect of the seafood matr.x itself.

The FAIr.pr.nciples have been widely cited,endor.ed and adopted by a br.ad r.nge of stakeholder. since their.publication in *** intention,the 15 FAIr.guiding pr.nciples do not dictate specific technological implementations,but pr.vide guidance for.impr.ving Findability,Accessibility,Inter.per.bility and r.usability of digital *** has likely contr.buted to the br.ad adoption of the FAIr.pr.nciples,because individual stakeholder.communities can implement their.own FAIr.***,it has also r.sulted in inconsistent inter.r.tations that car.y the r.sk of leading to incompatible ***,while the FAIr.pr.nciples ar. for.ulated on a high level and may be inter.r.ted and implemented in differ.nt ways,for.tr.e inter.per.bility we need to suppor. conver.ence in implementation choices that ar. widely accessible and(r.)-*** intr.duce the concept of FAIr.implementation consider.tions to assist acceler.ted global par.icipation and conver.ence towar.s accessible,r.bust,widespr.ad and consistent FAIr.*** self-identified stakeholder.community may either.choose to r.use solutions fr.m existing implementations,or.when they spot a gap,accept the challenge to cr.ate the needed solution,which,ideally,can be used again by other.communities in the ***,we pr.vide inter.r.tations and implementation consider.tions(choices and challenges)for.each FAIr.pr.nciple.
