Optimization of Extrusion Process for Producing High Antioxidant Instant Amaranth (<i>Amaranthus hypochondriacus</i>L.) Flour Using Response Surface Methodology

The objective of this research was to determine the best combination of extrusion process variables for the production of a high antioxidant extruded amaranth flour (EAF) suitable to elaborate a nutraceutical beverage. Extrusion operation conditions were obtained from a factorial combination of process variables: Extrusion temperature (ET, 70℃ - 130?℃) and screw speed (SS, 100 - 220 rpm). Response surface methodology was employed as optimization technique;both the numeric and graphical methods were applied to obtain maximum values for response variables [Antioxidant capacity (AoxC) and water solubility index (WSI)]. The best combination of extrusion process variables was: Extrusion tem- perature (ET) = 130℃/Screw speed (SS) = 124 rpm. The raw amaranth flour (RAF) and optimized extruded amaranth flour (EAF) had an antioxidant activity of 3475 and 3903 μmol Trolox equivalents/100 g sample (dw), respectively. A 200 mL portion of the beverage prepared with 22 g of optimized EAF contained 3.16 g proteins, 1.09 g lipids, 17.39 g carbohydrates and 92 kcal. This portion covers 25.3% and 16.9% of the daily protein requirements for children 1-3 and 4 - 8 years old, respectively. A 200 mL portion of the beverage from optimized EAF contributes with 15.5% - 25.5% of the recommended daily intake for antioxidants, respectively. The nutraceutical beverage was evaluated with an average acceptability of 8.4 (level of satisfaction between “I like it” and “I like it extremely”) and could be used for health promotion and disease prevention as an alternative to beverages with low nutritional/nutraceutical value.

The main objective of this investigation was to study the time effect during solid state bioconversion (SSB) on total phenolics content (TPC) and antioxidant activity (AoxA) of common beans to improve antihypertensive functionality. Cooked cotyledons of dehulled common beans were inoculated with a suspension of R. oligosporus nRRL 2710 (1 × 106 spores/mL), and incubated at 35℃ for times of 24, 36, 48, 60, 72, 84, 96 and 108 h (after 108 h the cotyledons showed off odor). Flours from bioprocessed dehulled common bean from each incubation time were blended with their corresponding milled seed coats. The best time for producing bioprocessed common bean (added with seed coats) functional flour with the highest AoxA (ORAC value = 17,468 μmol Trolox equivalents (TE)/100 gsample, dw;ABTS value = 13,505 μmol TE/100 gsample, dw) was 108 h. The SSB process substantially increased TPC and total hydrophilic AoxA and antihypertensive potential of common beans in 2.24, 2.45 - 2.73 and 6769 times, respectively. Proteins hydrolyzates from unprocessed whole and bioprocessed (108 h) common beans had IC50 [concentration needed to inhibit 50% the activity of angiotensin converting enzyme (ACE)] of 79.2 and 0.0117 μg/mL, respectively. The SSB is an efective strategy to improve the TPC of common beans for enhanced functionality with improved antioxidant activity and antihypertensive potential.

The acceptability properties, total phenolic content, and antioxidant potential of four (red, green, brown, cream) desi chickpea (Cicer arietinum L.) cultivars from the World Germplasm Bank were evaluated. Protein content of the grains varied from 20.12% to 28.85% (dw), highest for Cream ICC3421. The water absorption capacity (WAC) and cooking time (CT) of the whole grains ranged from 97.7 to 117.5 g water/100 g seeds (ww) and from 109.5 to 193.5 min, respectively;the highest WAC and lowest CT corresponded to Cream ICC3421 cultivar. The total phenolic content (TPC) and total hydrophilic antioxidant activity (AoxA) [oxygen radical absorbance capacity (ORAC) value] of desi chickpea cultivars varied from 746 to 1.286 μg gallic acid equivalents (GAE)/g sample (dw) and from 43.9 to 53.9 μmol Trolox equivalents (TE)/g sample (dw);Brown ICC3512 showed the highest ORAC value. Chickpea cultivars could contribute significantly to the management and/or prevention of degenerative diseases associated with free radical damage.

Uremic Bleeding in 2 Patients with Dieulafoy’s Lesion: Case Report and Literature Review

Dieulafoy’s lesions are rare vascular malformations of the gastrointestinal tract. A Dieulafoy’s lesion is an aberrant vessel that does not reduce in caliber when it extends from the submucosa to the mucosa. Damage to this artery can cause severe and intermittent arterial bleeding from small vascular stumps that are difficult to visualize. Furthermore, these catastrophic bleeding episodes frequently result in hemodynamic instability and the need for transfusion of multiple blood products. Recently, uremic syndrome has been identified as a risk factor for gastric mucosal lesions. We present two clinical cases of acute digestive bleeding due to Dielafoy lesion with chronic kidney disease as the main cause, where two different therapies were performed endoscopically. We concluded with the results of our patients that the best therapy was the application of the hemostatic hemoclip on the injury vs the injection with adrenaline on the wound site. Uremia is identified as a risk factor for upper gastrointestinal bleeding in patients with pre-existing Dieulafoy’s lesion, as well as a higher incidence of new bleeding.

Objective:To describe and molecularly characterize an outbreak of dengue virus(DEnV)infection in Cajamarca,an Andean region in ***:A total of 359 serum samples from patients with acute febrile illness were assessed for the presence of DEnV via RT-PCR,ELISA nS1,Ig M and Ig G in Cajamarca,Peru from January 2017 to June *** evaluation of the different diagnostic tests and their applicability was ***:Dengue virus was detected in 24.7%of samples by ***,serological analysis detected 30.3%positive cases via ELISA nS1 antigen,16.7%via ELISA Ig G and 9.7%via ELISA Ig *** of the cases corresponded to DEnV-3(77.5%).The use of RT-PCR performed better in primary infections(Pn of ELISA Ig M performed better in secondary infections(Pnation of nS1 and Ig M performed better than the other assays in detecting primary(92.5%)and secondary infections(96.6%).The most frequent symptoms associated with fever were headaches,myalgias,and arthralgias across all ***:We report an important outbreak of dengue infection caused by DEnV-3 in Cajamarca,*** findings encourage the use of nS1 antigen and Ig M *** findings demonstrate an increasing expansion of DEnV-3 in Peru and highlight the importance of molecular diagnosis and serotype characterization among the clinically defined dengue cases to strengthen the Peruvian epidemiological surveillance.

Size Distribution of Particulate Matter of Metals in Urban Aerosols, Comarca Lagunera, Mexico

This paper has demonstrated that there is great variation in the size range and chemical composition of metalliferous PM （particulate matter） present within Comarca Lagunera, M6xico due to the physiography of the terrain together the intense vehicular traffic, unpaved roads, cement and lime plants, marble quarries, brick plants, and the largest smelter of non-ferrous material in Latin America. Cascade impactor PM samples from six size ranges：〈 0.49 μm, 0.49-0.9 μm, 0.9-1.5μm, 1.5-3.0 p.m, 3.0-7.2 μm and 7.2-10 μm were collected from inside two stacks within G6mez Palacios and Torreon cities. ICP-AES （inductively coupled plasma-atomic emission spectrometry） analysis on collected Whatman fiberglass filters demonstrates that the PM are matrices mostly constituted of carbonates and silicates with abundant fine metalliferous particles. The metals with the most concentrations averaged over all size ranges were Cu, Fe, Mn, ni, Pb and Ti. The size distributions of metals detected in this work have been plotted as normalized histogram concentration of each size fraction, the total concentration, and the aerodynamic particle diameter, which is a useful method for comparing the contributions of coarse and fine particles to pollutant concentrations.

AIM To determine a potential relationship between serum undercarboxylated(uc OC) concentration and cardiovascular risk factors in type 2 diabetes(T2D) patients and healthy subjects(HS).METHODS A cross-sectional study was conducted on 140 subjects classified into two groups, 70 with T2D and 70 HS. Medical history and physical examination with anthropometric measurements were obtained from all subjects. Body fat percentage was determined by bioelectrical impendency analysis. Serum uc OC concentration was determined by enzyme immunoassay,while serum levels of insulin and hsC RP were obtained using high sensitivity enzyme-linked immunosorbent assay. Insulin resistance was determined using the homeostasis model assessment-IR. Lipid profile [triglycerides,total cholesterol(TC), high-density lipoproteins(HDL-c),low density lipoproteins(LDL-c), very low-density lipoproteins] was determined by spectrophotometry and standard formulas when applicable.
