This study was conducted to determine proximate composition and profil. of fatty acid of beef from Arsi, Borana and Harar Cattl. breeds in Ethiopia. A total of 39 bulls with three age categories were used for the study. The bulls were purchased from mixed crop livestock system (Arsi and Harar cattle breeds) and Ranch (Borana cattle breed). Complete randomized design was used for the study. Longissimus dorsi muscle was used to evaluate proximate composition and profile of fatty acid. The result of the study indicated that mean of percentage of dry matter, ash, crude fat and crude protein were ranging 22.43 - 24.26, 0.32 - 1.28, 4.32 - 7.88, 17.21 - 22.76, respectively. At age younger than 3 years, Harar bulls contain more crude fat compared to Arsi bulls while the vice versa was true for crude protein. The concentration of polyunsaturated fatty acid (PUFA) was higher than saturated fatty acid (SFA) in the three breeds studied across all age categories. The objective of this study was to eval.ate the eating qual.ties of Arsi, Borana, and Harar Cattl. breeds in Ethiopia. A total.of 39 bul.s with age categories of - 6, and 7 - 9 years were used for the study. The bulls were purchased from mixed crop-livestock systems (Arsi and Harar) and Ranch (Borana) and slaughtered to evaluate the eating quality. WBSF device was used to evaluate instrumental tenderness while sensory panel testing was used to evaluate sensory tenderness, juiciness and flavor. The color of the meat was evaluated using Hunter Lab Mini Scan EZ while water holding capacity was evaluated using filter papers. A complete randomized design was used for the study. Breed significantly affected (P 0.0001) instrumental tenderness with beef from Harar and Boran bulls were very tender (18.55 ± 5.34, 20.34 ± 4.06N, respectively) while beef from Arsi bulls intermediate in tenderness (40.60 l.="font-famil.:Verdana;">± 0.51N). The objective of this study was to eval.ate the effect of rice bran qual.ty and dietary suppl.ment source on growing pig performance. A total.of 60 castrated mal. pigs (Yorkshire × Duroc, initial.y 16.1 kg) were used for 52-day trial. Pigs were al.otted to pens in a compl.tel. randomized design (4 pigs per pen) and assigned to four dietary treatments in a 2 × 2 factorial.with factors being rice bran source (high or l.w-qual.ty) and source of protein, vitamins, and mineral. (suppl.ment or soybean meal.and base mix). Anal.zed protein and fat l.vel.for the high- and l.w-qual.ty rice bran was 11.07% and 5.86% and 11.20% and 4.50%, respectivel.. Crude fiber content for high- and l.w-qual.ty rice bran was 13.44% and 27.79%. Diets were formul.ted in two phases (phase 1: 16 to 27 and phase 2: 27 to 48 kg) to adjust to the pig’s nutrient requirements. There was no evidence for an interaction (P > 0.05) between rice bran qual.ty × suppl.ment type or main effect of suppl.ment type (soybean meal.+ base mix vs protein suppl.ment) for final.body weight, average dail. gain (ADG), average dail. feed intake (ADFI), and feed efficiency (F/G). However, pigs fed high-qual.ty rice bran had improved (P l.wer ADFI compared to pigs fed l.w protein rice bran. In concl.sion, rice bran qual.ty as measured by protein, crude fiber, and fat infl.enced growing pig performance, whil. the type of dietary protein suppl.ment did not. Additional.y, rice bran with high protein, fat, and l.w fiber improved ADG and F/G.

The objective of this study was to determine the effect of age and breed of cattl. on carcass and meat characteristics in Ethiopia. A total.of 39 (Arsi 11, Boran 14 and Harar 14) cattl. breeds with age categories of l.s were purchased from their respective production system of mixed crop l.vestock system (Arsi and Harar) and Ranch (Boran). Parameters such as l.ve and carcass weight, meat yiel. percent, fat characteristics, and primal.beef cuts were eval.ated. Compl.te randomized design was used for the study. The l.ve weight of bul.s at l.. The carcass weight, dressing percentage, meat yiel. percent, forequarter, hindquarter, rib eye area, and fat thickness ranged 57 - 209.73 kg, 41.8% - 51.6%, 32% - 58%, 11.7 - 56.42 kg, 14.04 - 45.34 kg, 4.78 - 10.25 square inches and 0.18 - 0.38 inches, respectivel.. At an earl. age category (l. percentage of Arsi, Boran and Harar breeds were 50.86, 30 and 18.72, respectivel., and as age category shifted from one age category to the next Harar increased by 13× and Boran by 2.9× and Arsi decreased by -0.93×. The mean rib percentage of Arsi, Boran and Harar were in the range of 7.98 - 9.57, 8.62 - 10.44 and 7.08 - 8.83, respectivel.. Breed and age of bul.s had significantl. affected primal.meat cuts. Meat yiel. was predicted from l.ve and hot carcass weight with coefficient determination (R2) of 70.66% and 74.75%, respectivel.. From the study, it was concl.ded that age and breeds of cattl. had significantl. infl.ence on carcass and meat characteristics. Therefore, to determine whether variations were due to genetic or environmental.cause’s eval.ation of the three breeds under simil.r feeding condition was recommended.
