This study investigated the integrated atlas of protein phosphorylation， acetylation， ubiquitination and S-nitrosylation in pre-rigor (0.5 h) and post-rigor (5 d) lamb to interpret the roles of protein post-translational modifications (PTMs) during meat aging. The results showed that the most common PTMs in postmortem meat were phosphorylated proteins. PTMs regulation during the postmortem period altered proteins involved in metabolic pathways and muscle contraction. The phosphorylation and ubiquitination of proteins located in mitochondria and nuclear changed significantly between 0.5 h and 5 d postmortem. Gene set enrichment analysis (GSEA) revealed possible roles of total PTMs proteins， with a general downregulation of phosphorylation， acetylation and ubiquitination. There was a weak correlation in the lysine PTM of acetylation and ubiquitination at the same site in postmortem meat. Multiple PTMs of proteins in glycolysis， TCA cycle， muscle contraction and the calcium signaling pathway cooperatively regulate meat quality development from pre-rigor to post-rigor.

Soy protein isolate and egg white protein were added to cassava-banana gluten-free pasta and the effects on the nutritional quality,digestibility properties,protein digestibility corrected amino acid(PDCAA),and sensory acceptance of the pasta was ***-cassava composite flour(75:25)was blended with soy protein isolate or egg white protein at the following rates:0,5,10,and 15 g/100 g *** pasta samples were analysed for total phenolic content(TPC),antioxidant activity,amino acid profiles,protein content,starch digestibility,protein digestibility and protein digestibility corrected amino acid score(PDCAAS).Addition of both proteins decreased starch digestibility,increased protein digestibility,improved the balance of the amino acid profile,and PDCAAS whereas only soy protein isolate enhanced the TPC and antioxidant capacity of the banana-cassava *** egg white protein-fortified banana-cassava pasta had better customer acceptance and purchase intent than soy protein isolate inclusion.

Protein-based animal fibres of commercial importance are frequently exposed to elevated temperatures during processing treatments. Hydrothermal processes cause protein deterioration, impacting negatively on the value or condition of these materials. This study was designed to investigate hydrothermal damage in wool proteins at the molecular level. The effect of hydrothermal damage on Type I and II intermediate filament proteins (keratins) extracted from wool was characterised using advanced quantitative techniques based on isobaric iTRAQ labelling and mass spectrometry. Many native peptides were observed to be degraded and modified. Amongst these, twenty keratin peptides were observed to consistently degrade during hydrothermal exposure. These peptides acted as molecular markers of damage – specific indicators of the extent of heat-induced protein damage. This technology will be of value in assessing the severity of damage imparted after high temperature exposure of protein-based animal fibres such as wool and cashmere during processes such as dyeing and carbonising, or even after high temperature human hair treatments. The identification of molecular damage markers identified within wool and other materials provides a new route to sensitive and specific evaluation of the effects of protein deterioration. It is anticipated that the utilisation of such markers will facilitate the development of targeted approaches to minimising processing damage to high-value fibres and protein-based biomaterials.

The material body considered in this work belongs to a class of multiphase micromorphic solids. In Eringen's micromorphic continuum theory [1], a material body is envisioned as a collection of a large number of finite-size and deformable particles. Each particle has nine degrees of freedom representing stretches and rotations, in addition to the three classical degrees of freedom accounting for the motion of its centroid, and may be considered as a polyatomic molecule, a primitive unit cell of a crystalline solid [2,3], or a chopped fiber in a composite, etc. General micromorphic theory contains specialized micromorphic theory for covalent and ionic crystals [4], micropolar theory, and classical continuum theory as its subcases. In this work, attention is focused on multiphase material such as polycrystalline solid consisting of grains and grain boundaries. Due to the existence of material inhomogeneity, material forces and Eshelby stresses [5] are obtained, that indicate the location of crack initiation. Based on meshless method [6], the problem of mixed mode crack propagation in multiphase micromorphic solid is investigated. Numerical results, showing the path of crack propagation and the ultimate strength of the materials, are presented and discussed.
