面包是世界各地日常食物消费的主要组成部分。在面包生产过程中,发酵阶段显著影响面包的质量、口味、质地发展和保质期。因此,判断发酵程度已成为面包制作过程中的一项重要实践。传统上,工作人员将盛放面包的手推车推入醒发室,评估面团的发酵阶段,并估计最佳结束发酵阶段的时间。利用这种方法需要工作人员的经验丰富、直觉敏锐和大量的时间投入,因此是一种耗时、劳动密集且成本高昂的方法。此外,生理因素的主观性很容易影响评估结果,导致结果不一致。研究的第一部分涉及设计一种面包发酵机,解决小规模生产设施中遇到的两个主要挑战。第一个挑战是有限的空间,通常导致面包推车过度拥挤。第二个挑战是工厂技术人员需要体力推动面包推车进出发酵室。这些过度体力劳作可能会对他们的认知能力产生不利影响,损害他们的决策能力和判断力。因此,这可能导致错误,最终影响到生产出劣质的面包。为了解决这些问题,拟议的面包机结合了能够定位面包车的传感器,同时采用了一个由PLc控制的气缸挂钩机制来移动面包车。该机器的关键部件经过了有限元分析,便于进行必要的优化调整。最终的设计代表了一种简单的、高能效、经济实惠的面包机。本研究的后续内容主要是利用深度学习框架YOLOv5开发一个面团品种检测模型。原始的YOLOv5s模型并不包含本研究中所利用的特定图像。因此,需要在自定义数据集上对模型进行训练,并利用Mix-up算法提高其检测精度。构建这个模型的主要原因有两个关键因素。首先,每种面团品种都需要一个专用模型来识别具有不同发酵特征的多个面团品种。这有助于在监测过程中部署相应的模型来估计发酵程度。其次,我们的目的在于利用YOLOv5模型提取已识别面包样本的边界框坐标。这些坐标可作为所采用的分割模型,即SAM模型的输入。我们模型的训练过程涉及利用六个不同的面团品种,包括椭圆形、百吉饼、泡芙、圆形、豆形和佛卡夏。通过这些改进,我们的模型达到了95.5%的平均精确度(m AP)。这项研究的第三个方面侧重于设计和开发一个估计发酵程度的系统。该系统包括图像采集、预处理、分割、特征提取和图像分类等阶段。图像经过采集后,使用中值滤波器进行滤波,分割过程采用SAM方法。进一步对分割后的图像应用自适应直方图均衡化(AHE)进行增强处理。从图像中提取了基于图像的定量特征,如面积、体积和面积扩展率,构建用于估计发酵程度的分类模型。值得注意的是,发酵程度和膨胀率之间存在相关性,表明面包中的酶活性。此外,利用GLcM算法提取了七个纹理特征。灰度级的归一化值与发酵程度之间存在相关性。采用多层感知机(MLP)神经网络构建了模型,输入包括发酵时间、面积、膨胀率、体积、对比度、能量、相关性、均匀性、方差、角二阶矩(ASM)和差异性。MLP的结构包括一个具有八个神经元的隐藏层和三个输出层,表示未发酵、发酵和过发酵的类别。在训练和验证过程中,该模型分别达到了高达98%和97%的准确率。本研究的最后一部分着重于将面包机的机械结构、面包品种识别系统和发酵程度估计模型进行集成。通过开发一个桌面应用程序来实现这种集成。该软件专门基于.NET平台,使用c#编程语言进行开发。创建了一个视觉上吸引人的用户界面,注重用户友好性。该软件在工业控制计算机上运行,与PLc实现无缝通信。PLc控制面包机并从各种传感器收集数据。面包机在实际的工业环境中进行了测试,并获得了90.5%的准确率。系统的整体性能被认为是令人满意的,实现了对面包发酵过程的自动化和智能控制。

Oxidative stress modulation in hepatitis c virus infected cells

Hepatitis c virus(HcV) replication is associated with the endoplasmic reticulum, where the virus can induce cellular stress. Oxidative cell damage plays an important role in HcV physiopathology. Oxidative stress is triggered when the concentration of oxygen species in the extracellular or intracellular environment exceeds antioxidant defenses. cells are protected and modulate oxidative stress through the interplay of intracellular antioxidant agents, mainly glutathione system(GSH) and thioredoxin; and antioxidant enzyme systems such as superoxide dismutase, catalase, GSH peroxidase, and heme oxygenase-1. Also, the use of natural and synthetic antioxidants(vitamin c and E, N-acetylcysteine, glycyrrhizin, polyenylphosphatidyl choline, mitoquinone, quercetin, S-adenosylmethionine and silymarin) has already shown promising results as co-adjuvants in HcV therapy. Despite all the available information, it is not known how different agents with antiviral activity can interfere with the modulation of the cell redox state induced by HcV and decrease viral replication. This review describes an evidence-based consensus on molecular mechanisms involved in HcV replication and their relationship with cell damage induced by oxidative stress generated by the virus itself and cell antiviral machinery. It also describes some molecules that modify the levels of oxidative stress in HcV-infected cells.

Local Variability in Temperature, Humidity and Radiation in the BaekduDaegan Mountain Protected Area of Korea

A novel embedded sensor network records changes in key climatic-environmental variables over a range of altitude in the BaekduDaegan Mountain （BDM） of Gangwon Province in Korea, a protected mountain region with unique biodiversity undergoing climate change research. The investigated area is subdivided into three horizontal north-south study areas. Three variables, temperature （T, °c）, relative humidity （RH, %）, and light intensity （LI, lumens m-2, or lux, lx）, have been continuously measured at hourly intervals from June, 2olo to September, 2011 using HOBO H8 devices at lO fixed study sites. These hourly observations are aggregated to monthly, seasonal and annual mean values, and results are summarized to inaugurate a long-term climate change investigation. A region wide T difference in accordance with altitude, or lapse rate, over the interval is calculated as o.4°c l00 m-1. T lapse rates change seasonally, with winter lapse rates being greater than those of summer. RH is elevated in summer compared to other seasons. LI within forestland is lower during summer and higher during other seasons. The obtained results could closely relate to the vegetation type and structure and the terrain state since data loggers were located in forestland.

clostridium difficile-associated disease:Adherence with current guidelines at a tertiary medical center

AIM:To assess adherence with the the Society for Healthcare Epidemiology of America(SHEA)/the Infectious Diseases Society of America(IDSA)guidelines for management of clostridium difficile(***)-associated disease(cDAD)at a tertiary medical ***:All positive *** stool toxin assays in adults between May 2010 and May 2011 at the University of Maryland Medical center were *** episodes were classified as guideline adherent or nonadherent and these two groups were compared to determine demographic and clinical factors predictive of *** regression analysis was performed to assess the effect of multiple predictors on guideline ***:320 positive *** stool tests were identified in 290 *** by disease severity criteria set forth by the SHEA/IDSA guidelines,42.2%of cases were mild-moderate,48.1%severe,and 9.7%*** adherence with the guidelines was observed in only 43.4%of *** was65.9%for mild-moderate cDAD,which was significantly better than in severe cases(25.3%)or severe-complicated cases(35.5%)(Pce in demographics,hospitalization,IcU exposure,recurrence or 30-d mortality between adherent and non-adherent groups.A multivariate model revealed significantly decreased adherence for severe or severecomplicated episodes(OR=0.18,95%cI:0.11-0.30)and recurrent episodes(OR=0.46,95%cI:0.23-0.95).cONcLUSION:Overall adherence with the SHEA/IDSA guidelines for management of cDAD at a tertiary medical center was poor;this was most pronounced in severe,severe-complicated and recurrent *** interventions aimed at improving guideline adherence are warranted.

BAcKGROUND: Non-convulsive seizure(NcS) is an underdiagnosed, potentially treatable emergency with significant mortality and morbidity. The objective of this study is to examine the characteristics of patients with NcS presenting with altered mental status(AMS) and diagnosed with electroencephalography(EEG), to identify the factors that could increase the pre-test probability of ***: Retrospective study using the data collected prospectively. Inclusion criteria: patients older than 13 years with AMS. Exclusion criteria:(1) immediately correctable AMS(e.g., hypoglycemia, opiod overdose);(2) inability to undergo EEG;(3) hemodynamic instability. Outcomes compared between NcS and non-NcS cases: vital signs, lactate level, gender, witnessed seizure, use of anticonvulsive in the field or in the ED, history of seizure or stroke, head injury, abnormal neurological finding and new abnormal findings on head cT. Data presented as medians and quartiles for categorical and percentages with 95%cI for continuous variables. Univariate analyses were performed with Man-Whitney U and Fisher's Exact tests. A multivariate analysis model was used to test the predictive value of clinical variables in identifying ***: From 332 patients(median age 66 years, quartiles 50–78), 16 were diagnosed with NcS(5%, 95%cI 3%–8%). Only age was signifi cantly different between the NcS vs. non-NcS groups in both univariate(P=0.032) and multivariate analyses(P=0.016).cONcLUSION: Other than age, no other clinically useful variable could identify patients at high risk of NcS. ED physicians should have a high suspicion for NcS and should order EEG for these patients more liberally.

Development of an in vitro protein digestibility assay mimicking the chicken digestive tract

It is difficult to obtain in vivo digestion kinetics data of high protein ingredients using chickens. collecting kinetics data requires repeated sampling of digesta from the small intestine during the digestion process,which is not easily accomplished due to the anatomical structure of chicken digestive tract. An in vitro technique is proposed for measuring the digestion kinetics of protein sources fed to chickens. The method has a 30 min gastric and 3 h intestinal phase. Five hundred milligram crude protein(cP)equivalent of each meal sample(cP = % N × 6.25) was digested with pepsin(28,260 units) in 50 m L polyethylene centrifuge tubes for 30 min in a shaking water bath(150 strokes/min; 30 mm stroke length)at 41c. The 6.5 mL pancreatin was selected as the enzyme concentration for the intestinal phase, during which time 500 m L aliquots were collected at 0, 15, 30, 45, 60, 90, 120, 150, 180 and 240 min. Samples were diluted 1:820 with Hcl and sodium acetate buffer, and then mixed with ninhydrin reagent(2:1) at100 ± 2c for 15 min and spectrometric readings taken at 568 nm. To validate the assay, 5 replications of soybean meal(SBM), corn gluten meal(cGM), corn distillers dried grains with solubles(cDDGS), porcine meal(PcM), fish meal(FM) and casein(cA) were digested. The digestion data were modeled with PROc NLIN procedure, and the intra coefficient of variation(cV) assessed using PROc MEANS of SAS 9.4. The digestion values at 180 min were SBM 95 ± 4, FM 93 ± 3, PcM 68 ± 4, cGM 82 ± 3 and cDDGS 70 ± *** cV for SBM, cGM, cDDGS, PcM and FM were 5%, 5%, 12%, 10% and 2%, respectively. The estimated fractional digestion rates for SBM, cGM, cDDGS, FM and PcM were 0.023, 0.013, 0.009, 0.024 and 0.013,respectively. In conclusion, the proposed in vitro technique estimated the rate and extent of the digestion of cP for the meals with low intra cV.
