Sensorial Evaluation and Physical Chemical Characterization of a Beverage Based on Whey and β-Glucans as a Potential Prevention of Nonalcoholic Steatohepatitis

Whey and B-glucans are functional food ingredients that contribute to the prevention of non-communicable diseases. The objective of the study was to develop a functional beverage based on whey, B-glucans, and blackberry concentrate for the prevention of nonalcoholic steatohepatitis, determining its sensory, physicochemical, and nutritional qualities. The following phases were developed: 1) formulation with 75%, 85%, and 90% whey and 25%, 15%, and 10% blackberry concentrate, with a fixed amount of 0.243 g β-glucans in 100 ml;2) microbiological analysis to ensure the safety of the beverage;3) sensory analysis with untrained panelists to assess the degree of preference (appearance, color, odor, flavor, viscosity, acidity, sweetness), and general acceptance, with a seven-point hedonic scale to rate the level of acceptability;4) physicochemical and nutritional characterization of the beverage with the highest acceptance. An experimental design using complete random blocks was employed. Data analysis was performed with variance (ANDEVA) and mean DUNCAN separation at a 95% confidence level, using SAS®. A correlation study was conducted on acceptance analysis. A nutritional label was developed for the control beverage and the treatment with the highest acceptance. The formulation with 75% whey, 25% blackberry concentrate, and 0.243 g of β-glucan obtained the highest acceptance, with flavor and sweetness being the attributes that contributed to its acceptance. Nutritionally, the beverage with 80 cal, would be considered fortified with fiber (2 g), free of cholesterol, sodium, and saturated fat, according to the Central American Technical Regulation on Nutritional Labeling (Version 67.01.60:10). It is recommended that the effect of this beverage be measured to determine the benefits.

Are Functional Foods Marketed in Honduras a Healthy Option?

Background: Functional foods have been proposed as vehicles to prevent diseases in response to disease increase throughout the world. Methods: Descriptive cross-sectional study. The nutritional labeling of processed functional foods (PFF) commercially available in Honduras was examined to consider health benefits based on functionality according to the Central American Technical Regulation (CATR) and critical nutrient content according to the profile of the Panamerican Health Organization (PAHO). Results: Out of a national sample of 631 commercial processed foods (CPF), 144 were defined as functional;sweetened and flavored yogurts and cereal bars reached the highest proportions (70% and 66%) of products available in their respective categories. None of the categories was on average “low in calories” according to criteria of CATR;sweetened breakfast cereals were the most caloric (180 kcal) and only sweetened juices had “calorie free” products (15%). Prepared meat did not meet the criterion of “low cholesterol” even though all the products in this category were the reduced fat version of the original CPF. All categories of cereal-based products met the “source of dietary fiber” criteria and 64% of baked products were “high in dietary fiber”. More than 70% of PFF exceeded the sugar recommendation of the PAHO profile, mainly sweetened breakfast cereals (100%) and sweetened juices (93%). 49% of the products exceeded the sodium recommendation, particularly baked products (100%) and cheeses (86%);100% of the later exceeded the recommendation of total fats. More than 60% of products simultaneously exceeded between 2 and 3 of PAHO profile criteria;5% exceeded all the criteria and 4% met all the PAHO profile criteria. The average price of PFF was $2.34, while that of conventional products was $1.87;sweetened breakfast cereals were the most expensive ($3.49 and $3.28) and sweetened juices were the cheapest ($1.79 and $1.89) for both CPF and PFF. How Do Commercial Children’s Foods Influence Their Growth and Development?A Map of Commercially Available Children’s Foods in Honduras

Background: The premature consumption of processed foods with high sugar and sodium content over the course of life has been associated with an increased risk of suffering from chronic diseases starting in adolescence or early adulthood. Methods: There was an examination of the nutritional labelling of processed products for young children (n = 140) available in the Honduran market to evaluate their nutritional quality with regard to sodium and sugar content, pursuant to various international recommendations. Results: 54% of the products evaluated derive more than 20% of their calories from sugar. The categories that to a large degree exceed the recommended sugar content range are fruit drinks (80%) and dessert purees (65%). The average price per product serving is lower than one US dollar ($0.81). 46% and 6% of the products place sugar and salt, respectively, among the first five positions in their ingredient lists. Conclusions: Processed foods for infants and young children generally exceed the recommended sugar content, but due to their low cost and easy access, they are displacing traditional food consumption, contributing to increasing childhood obesity and chronic disease in the early stages of life.

Nutritional Screening Tools in Institutionalized People: A Case Study of Using Nutritional Risk Screening (NRS 2002) and Mini Nutritional Assessment (MNA)

Nutritional status expresses the physiological and nutritional needs to maintain the composition and adequate functioning of the organism. NRS 2002 and MNA protocols were applied to short-term institutionalized patients in Rio Verde (Brazil). Older adults and people with special needs of all ages, both sexes, regardless of possible pathology they may have, except if it causes contagion, were included, patients duly authorized by the person responsible for the institution and who were able to undergo evaluation. Thirty-eight patients from the institution were evaluated, of which ten were excluded from the research according to pre-established criteria. More than 50% of participants were male, with an overall average age of 63.43 years. The characteristics related to nutritional status by NRS 2002 and MNA showed that the risk of malnutrition and its absence are associated with a wide age range. The MNA presents a more nuanced nutritional risk classification, showing that even 61% of the 96% of participants who would be out of nutrition risk, according to the NRS 2002, are “at risk of malnutrition”. Applying the MNA can demonstrate more conservative results than the NRS 2002.

Environmental conditions can change markedly over geographical distances along elevation gradients,making them natural laboratories to study the processes that structure *** work aimed to assess the influences of elevation on Tropical Montane Cloud Forest plant communities in the Brazilian Atlantic Forest,a historically neglected *** evaluated the phylogenetic structure,forest structure(tree basal area and tree density)and species richness along an elevation gradient,as well as the evolutionary fingerprints of elevation-success on phylogenetic lineages from the tree *** do so,we assessed nine communities along an elevation gradient from 1210 to 2310 m *** large elevation *** relationships between elevation and phylogenetic structure,forest structure and species richness were investigated through Linear *** occurrence of evolutionary fingerprint on phylogenetic lineages was investigated by quantifying the extent of phylogenetic signal of elevation-success using a genus-level molecular *** results showed decreased species richness at higher elevations and independence between forest structure,phylogenetic structure and *** also verified that there is a phylogenetic signal associated with elevation-success by *** concluded that the elevation is associated with species richness and the occurrence of phylogenetic lineages in the tree communities evaluated in Mantiqueira *** the other hand,elevation is not associated with forest structure or phylogenetic ***,closely related taxa tend to have their higher ecological success in similar ***,we highlight the fragility of the tropical montane cloud forests in the Mantiqueira Range in face of environmental changes(*** warming)due to the occurrence of exclusive phylogenetic lineages evolutionarily adapted to environmental conditions(*** temperature)associated with each elevation range.

Effect of Soybean Cultivars on the Nutrients and Consumer Acceptance of Soymilk

Soymilk is one of the most available beverages, an alternative to dairy milk and is recognized for its nutritional value. The nutritional quality, the presence of anti-nutritional factors, isoflavones and sensory acceptability of soymilk depended on the soybean variety as well as the processing conditions. The soymilks from conventional and specialty Brazilian soybean cultivars were compared regarding the composition and consumer acceptance. There were significant differences on the protein, oil, sugars, isoflavones, presence of anti-nutritional factors (phytate and trypsin inhibitor activity) and NSI (nitrogen solubility index) among cultivars and soymilks and for sensory acceptance of soymilks. The preference mapping and cluster analysis identified three different segments of consumers. The soymilk from the conventional cultivar BRS284 achieved higher and similar acceptance score for the three consumer’s segments while the lipoxygenase free cultivars (BRS213 and BRS257) and specialty cultivar BRS216 showed higher score for two segments of consumers. The sensory evaluation of soymilk from different soybean cultivars could improve consumer uptake.

Tetrapartite entanglement measures of generalized GHZ state in the noninertial frames

Using a single-mode approximation, we carry out the entanglement measures, e.g., the negativity and von Neumann entropy when a tetrapartite generalized GHZ state is treated in a noninertial frame, but only uniform acceleration is considered for simplicity. In terms of explicit negativity calculated, we notice that the difference between the algebraic average π_(4) and geometric average Π_(4) is very small with the increasing accelerated observers and they are totally equal when all four qubits are accelerated simultaneously. The entanglement properties are discussed from one accelerated observer to all four accelerated observers. It is shown that the entanglement still exists even if the acceleration parameter r goes to infinity. It is interesting to discover that all 1-1 tangles are equal to zero, but 1-3 and 2-2 tangles always decrease when the acceleration parameter γ increases. We also study the von Neumann entropy and find that it increases with the number of the accelerated observers. In addition, we find that the von Neumann entropy S_(ABCDI), S_(ABCIDI), S_(ABICIDI) and S_(AIBICIDI) always decrease with the controllable angle θ, while the entropies S_(3-3 non), S_(3-2 non), S_(3-1 non) and S_(3-0 non) first increase with the angle θ and then decrease with it.

Protein Complexes Implicated in RNA Editing in Plant Organelles

Even after 30 years of active research, RNA editing in plant organelles remains an enigma. Why do most plants post- transcriptionally alter hundreds or thousands of nucleotides in organellar transcripts？ How do they achieve such an effective and targeted process？ What is known is that in almost all plants, RNA editing is essential for correct synthesis of the photosynthetic and respiratory machinery in mitochondria and chloroplasts. The sites to be edited are defined by a large class of sequence-specific RNA binding proteins： pentatricopeptide repeat （PPR） proteins （Barkan and Small, 2014）. However, genetic and biochemical evidence has long suggested that other factors must be involved too. Two recent papers in Proceedings of the National Academy of Sciences USA provide exciting new evidence for protein complexes implicated in RNA editing using known mitochondrial or piastid PPR editing factors as bait in pull-down assays （Andres-Colás et al., 2017; Guillaumot et al., 2017）.
