Amino Acid Composition of Cowpea (<i>Vigna ungiculata</i>L. Walp) Flour and Its Protein Isolates

The study of the nutritive value of Cowpea (Vigna ungiculata L.) legume seed is needed, as this legume is a food source in many developing countries. Whole Cowpea Flour (WCF), Dehulled Defatted Cowpea Flour (DDCF), and Cowpea Protein Isolates (CPI) prepared using Isoelectric method (CPII) and using Micellization method (CPIM) are studied. In proximate analysis, the protein content of WCF, DDCF, CPIA and CPIB was found to be 22.3, 26.7, 750 and 76.0 g/100 g, respectively. Net protein value (NPV) was 17.62 for DDCF. Chemical score was 0.66% for DDCF and 112%, 104% for CPII and CPIM, respectively. The first limiting amino acid was cystine for DDCF and threonine for CPII and CPIM. Methionine was found to be the most concentrated essential amino acid in both CPII and CPIM;values were 27.22 and 30.60 g/16 g N, respectively, while lysine was the most abundant essential amino acid in DDCF (4.28 g/16 g N). Essential amino acids of CPIi and CPIM were 22.99 and 15.78 g/16 g N respectively, higher than FAO/WHO reference.

Effect of Diet Supplementation with Food Industry By-Products on Diabetic Rats

The present research work aimed to study the effects of 3 nutritional food industry by-products (orange peels, peanut skin peels and pomegranate peel) on regulating blood glucose level. 66 male adult Sprague-Dawely rats weighing 125 ± 5 g each were used. These rats were injected with alloxan for inducing diabetes. The negative control group consisted of rats fed on basal diet, while the positive control group consisted of (3 - 11) sub-groups fed on basal diet in addition to 5%, 7.5% and 10% of nutritional food industry by-products. After 4 weeks the effect of the different experimental diets on body weight gain, organs relative weight, blood glucose level, liver functions and kidney functions was recorded for the negative group and all the positive sub-groups. The results revealed that there was non-significant difference between all relative organ weights of liver, kidney and pancreas compared to control negative. Blood glucose level significantly decreased in all sub-groups compared to the control positive group.

Thermal Stability and Hot Carrier Dynamics of Gold Nanoparticles of Different Shapes

Anisotropic shapes of gold nanoparticles are prepared using a modified seed method in the presence of silver ions or clusters in order to study the thermal stability and the dynamics of the hot carriers induced by femtosecond laser pulses. Although gold nanospheres are stable towards thermal treatment, the decomposition of the gold nanorods into spherical nanoparticle aggregates upon thermal treatment is mechanistically different from the case of nanoprisms. Great enhancement of thermal stability is achieved by modifying the surface of the nanoparticles by adding specific amounts of polyvinyl pyrrolidone (PVP) after preparation of gold particles of different shapes capped with cetyltrimethylammonium bromide (CTAB). The surface plasmon resonance spectra of the gold nanostructures are used to monitor their morphological changes. In regards to the hot carrier dynamics, it is found that the phonon-phonon (ph-ph) coupling is much slower in dots than in rods and prisms while electron-phonon (e-ph) coupling is almost the same in these particles.

Production, Storage and Evaluation of Homemade and Processed Diet, Based on Wheat, Legumes, Sesame and Dates;for Under-Five Children

This study aimed to formulate a nutritive diet enriched with protein, iron and energy for under-five children. It was conducted in Elhosh rural area, Gezira State, Sudan, 2010. The diet was formulated and blended using locally available foods, produced at home level, by a twin-roller drum dryer and in biscuit form. The raw materials included pigeon pea (Cajanus cajan) sesame (Sesamum indicum) and dates (Phoenix dactylifera). The three products were evaluated for their proximate composition, energy value, iron content and acceptability after storage at (4℃ - 6℃) and at room temperature for 5 months. The protein content of the products was (14.0 - 14.1 g/100g);the energy value ranged from 382 to 390 Kcal/100g, both in-line with many recommendations for children aged under five. The iron content was found in the range of 14.6 - 14.8 mg/100g, in agreement with the codex recommendation. Yeast, mold and salmonella were not detected while other microbes were found within acceptable values. Studied products were found nutritious and remained acceptable after storage for five months. Legumes, sesame seeds and dates can be effectively used in wheat-based baby foods as a source of protein and mineral supplement.
