麸皮预处理对全麦面团及面包的影响

采用微波、烘烤、常压蒸汽、高压蒸汽对小麦麸皮进行预处理,比较不同预处理方法对全麦面团和面包品质的影响。结果表明:和未处理全麦粉相比,烘烤、常压蒸汽和高压蒸汽处理均使全麦粉的稳定时间提高,其中常压蒸汽效果最显著,提高了4.2 min;同时,这3种处理方式分别使全麦面包的比容增加了6.92%、9.34%、5.19%,硬度分别降低11.81%、21.79%、19.57%,弹性分别提高2.59%、3.06%、1.65%。常压蒸汽、高压蒸汽分别使还原型谷胱甘肽减少了66.77%、69.30%,游离巯基减少了40.43%、42.77%,二硫键增加了51.35%、38.63%。综上,采用烘烤、常压蒸汽、高压蒸汽对麸皮预处理,可以通过降低还原型谷胱甘肽含量、提高二硫键含量来提高面团的稳定性,进而改善面包品质,且常压蒸汽处理的改善效果最好。

Freqency-domain Correlative cardiogram （FCG） is a new method in diagnosing coronary heart diseases. There were few experimental data about its reliability. In order to evaluate the sensitivity and specificity of FCG and offer experimental evidences for diagnosing at the early stage of coronary heart diseases, changes of FCG were observed after acute ischemia caused by ligating left circumflex coronary arteries in animals. Action potentials （AP） of ventricular myocardial cells were recorded in situ with floating microelectrodes placed on the surfaces of the heart according to Woodbury. The ECG and the FCG were recorded with an HBD-II Multi-domain Cardiac Signals Automatic Diagnostic Instrument which synchronously samples routine ECG V5 （X channel） and II （Y channel） for a continous 125 seconds. After 10 minutes occlusion, the action potential amplitude （APA） and the O phase upstroke rate （Vmax） were slowed down; APD30and APD50were significantly shortened. The ST segment and the T wave of the ECG were elevated. The main changes in the FCG were that the first peaks of the power spectrum function （Gxx, Gyy） were significantly increased in amplitude, the R waves in the autocorrelation function （Vxx, Vyy） and the cross correlation function （Vxy） were increased in amplitude, that the small waves between the R waves disappeared and that the declines of the R waves amplitude were not evident. The AP, the ECG and the FCG returned nearly to normal after 10 minutes reperfusion. The changes of the FCG after ligation of dog left circumflex coronary arteries were similar to those recorded from rabbits. These results suggest that the FCG is sensitive to the changes of myocardial electrical activities in the early stage of coronary artery occlusion.

Correlative Analysis Between Frequency-Domain Correlative Cardiogram And STI in 90 Patiennts

Both systolic time interval (STI) and Frequency-domain Correlative Cardiogram (FCG)can reflect blood supply to the heart. From the FCG and STI recording of 90 patients who received cardiac function examination, we found that there was a significant correlation between FCG grades (FCGG) and STI grades (STIG), FCGG and PEP, FCGG and LVET, FCGG and PEP/LVET, FCG Scores (FCGS) and STIG, FCGS and PEP, FCGS and LVET.FCGS and PEP/LVET, PEP/LVET and Gxx2. The discriminating function was above the level of α=0.01. And There was a significant correlation between ICT and FCGG, PEP/LVET and Gyy2. The discriminating was above the level α=0.05. But no significant correlation was found between ICT and FCGS、PEP/LVET and Rxy、PEP/LVET and Gxx1, PEP/LVET and Gxx1/Gxx2, PEP/LVET and Gyy1, PEP/LVET and Gyy1/Gyy2, PEP/ LVET and Pmax, PEP/LVET and Pmin.The results indicate that FCG is a new noninvasive method for cardiac function examiantion. And we can say that STI is a reliable method.

Frequency domain correlative cardiogram (FCG) is a new developing technique in noninvasive measurement. It is not clear that FCG diagnoses cardiac ischemia. This study was made cn dogs with different degree of coronary artery stenosis, the relationship between the changes of cardiac ischemia and FCG is discussed in this paper.In open chest dogs, an external stenosis was produced by a micrometer constrictor cn the left circumflex coronary artery or the left anterior dis-cending coronary artery, which caused three different degrees of coronary artery stenosis: namely mild, moderate and severe stenosis. Coronary blood flow (CBF), aortic pressure, left ventricular pressure, systolic time intervals, admittance plethysmography, two-dimensional echocardiography and FCG were synchronously recorded.The result showed that FCG did not change when CBF was slightly decreased; FCG had a significant change when CBF was decreased to 40% of resting value; there was a remarkable change in FCG when CBF was decreased to 80% of resting value. The amplitude of change in FCG was in concordance with that of decreased CBF. A positive correlation between the changes of FCG and CBF was found.So we think that FCG is a valuable diagnostic method for myocardial ischemia when CBF is obviously decreased. It can reflect the degree and extensiveness of myocardial ischemia.

酶法水解大豆蛋白可以生产多种生物活性肽,但在酶解过程中肽段的二次聚集会产生不溶沉淀,降低蛋白质利用率。研究了pH偏移对大豆蛋白酶解聚集体解聚的影响。结果表明:Alcalase碱性蛋白酶酶解大豆蛋白获得的不溶沉淀,是以疏水相互作用为主要分子间作用力的大豆肽聚集体;pH偏移赋予的静电斥力能促使大豆肽聚集体解聚和重排,大豆肽蛋白质利用率从74%(pH 7)增加到85%(pH 12),并将大豆肽的平均粒径由243 nm减小至103 nm;同时,pH偏移使疏水性氨基酸在不溶肽聚集体中积累,增加二级结构中的无规则卷曲含量,但不影响不溶肽聚集体的相对分子质量分布。因此,pH偏移技术可安全有效地促使大豆肽不溶聚集体解聚。

为提高豌豆蛋白的酶水解敏感性及其水解物的抗氧化活性,分别考察95℃、10 min的热处理和10000×g、10 min的高速剪切对豌豆蛋白水解性能的影响并探究其改善原因。结果表明,热处理和高速剪切均提高了豌豆蛋白的水解度、氮回收率以及水解物的抗氧化活性(p<0.05),高速剪切提高了不溶性聚集体比例,而热处理使其降低,其中热处理优化效果更为明显,水解度和氮回收率分别增加了21.1%和9.6%,不溶性聚集体降低了27.7%。热处理和高速剪切使豌豆蛋白溶解度显著提高,使豌豆蛋白水解物氨基酸含量和小分子肽比例显著增加(p<0.05)。采用红外光谱和扫描电子显微镜观察预处理前后豌豆蛋白的二级结构和表观形貌的变化发现,两种预处理方式在不同程度上促使了豌豆蛋白紧密结构的展开,有助于实现豌豆蛋白的高效水解。综上,热处理相对于高速剪切更有利于提高豌豆蛋白的水解效率。

本文导出了VSP的二维和三维垂直时距曲线及极小点坐标的表达式,并根据已知参数提出对VSP空间反射点轨迹分布的分析方法。在较系统研究反射点随界面深度、界面倾角、井源距、观测深度、震源方位变化的分布规律的基础上,揭示了VSP与地面共炮点道集反射点的分布关系。这项成果应用于VSP陡倾界面的观测系统设计,可设计出合适的参数;应用于VSP实际资料的解释,可确定出反射点成像的准确位置,并能正确地与地面地震偏移剖面进行对比。
