Microwave heating and conduction heating pork belly: Influence of heat transfer modes on volatile compounds and aroma attributes

This work was conducted to compare the differences in odor attributes and the formation causes of pork belly cooked by different heating modes and the feasibility of achieving convenient and delicious cooking of stir-fried pork cuisines by modifying the heat transfer mode of the *** effects of traditional pan-heating(TH),microwave heating(MH),and microwave combined with conduction heating(MH+CH)on sensory aroma attributes,aroma profile,free fatty acids,and volatile compounds of pork belly were *** results showed that the pork belly heated by TH had the lowest total amount of stable volatile compounds(1695.41μg/kg)and contents of free fatty acids(751.44 mg/100g),but the balanced distribution and the rich contents of volatile compounds derived from thermal processing resulted in the better aroma quality of pork *** contrast,although the pork belly cooked by MH had higher free fatty acids contents(1215.32 mg/100g)and the highest volatile compounds(5410.56μg/kg),due to the cell destruction effect and the molecular movement acceleration of microwave,the contents of volatile compounds derived from spices were too high,leading to the disharmony of aroma ***,the pork belly cooked with MH+CH not only promoted the production of free fatty acids(1434.23 mg/100g),but also increased the generation and retention of pork characteristic aroma by changing the heating *** with MH,it enhanced the uniformity of aroma distribution and improved the overall aroma similarity to TH.

Bio‐inspired spontaneous splitting of underwater bubbles along a superhydrophobic open pathway without perturbation

Bubbles are pervasive in aqueous media,and on account of numerous advantages of tiny bubbles,efficient bubble splitting is favorable in a wide range of ***,underwater bubble splitting faces a lot of challenges because bubbles tend to coalesce during the rising due to the action of buoyancy and surface energy,and the consumption of considerable external energy is *** by the bubble bursting phenomenon on the feathers of high‐speed swimming penguins,we proposed a new bubble splitting strategy based on the energy conversion of bubble transportation on superhydrophobic open pathways.A porous superhydrophobic coating was first developed via a bubbletemplate assisted fabrication method,which provides hierarchical micro/nanostructures and robust air *** bubbles can transport along the superhydrophobic open pathways without perturbation,and split into smaller ones by taking advantage of the potential energy contributed by *** controlling the superhydrophobic pathway,the size of the split bubbles can be controlled *** also demonstrated that a bubble splitting device could be applied in underwater reactions where an enhanced gas−liquid mass transfer is *** bubble splitting strategy may offer new prospects for underwater bubble manipulation and unfold a potential in many bubble‐involved fields.

Effect of synergism between sodium alginate and xanthan gum on characteristics of composite film and gloss of areca nut coating

In this study, two polysaccharides of sodium alginate (SA) and xanthan gum (XG) were compounded in proportions of 100:0, 75:25, 50:50, 25:75, 0:100 with 1% total mass concentration and then coated on areca nuts. The effects of their synergistic interactions on the optical appearance of the edible coating were investigated for the first time. Areca nuts coated by 50:50 SA-XG presented the highest gloss (2.69 GU) and maximum spreading coefficient (−33.95 mN/m), indicating the improved wettability of the coating solution on the fruit's surface. The polarized light microscopy exhibited the unique birefringence phenomenon caused by the liquid crystal state, resulting in the better optical properties of the coating. UV–vis transmittance, Fourier transform infrared, and scanning electron microscopy indicated the good compatibility of SA and XG. The SA-XG film was more compactly arranged and had a denser microstructure due to hydrogen bonding. Additionally, the SA-XG combination improved the mechanical properties and water resistance compared to a single polysaccharide films and enhanced the water retention properties for the areca nut coating. Therefore, the SA-XG combination is promising to prepare edible films with improved optical properties for areca nuts.

Correlation between microorganisms and flavor of Chinese fermented sour bamboo shoot: Roles of Lactococcus and Lactobacillus in flavor formation

Sour bamboo shoot is a popular traditional fermented vegetable in southern China. The current study aims to clarify the relationship among physicochemical properties, flavor, and microbial compositions of sour bamboo shoots during fermentation. Four organic acids (OAs) were considered to be the main acids in sour bamboo shoots. At least 7 volatile compounds (OAV >1) were identified as the characteristic aroma substances, especially p -cresol, which accounted for the sour odor of sour bamboo shoots. The microbial community showed that Firmicutes and Proteobacteria were the dominant phyla, while Lactococcus and Lactobacillus were the dominant genera in sour bamboo shoots. Correlation analysis indicated that Firmicutes positively correlated with p -cresol, phenol, 2-methoxy-phenol, malic acid, total titratable acidity (TTA), and some OAs. Lactococcus was positively correlated with phenol, 2-methoxy-phenol, benzyl alcohol, TTA, some OAs, and amino acids (AAs). This study provided a theoretical basis for screening indigenous aroma-producing microorganisms as the starter of sour bamboo shoots.

Fangchinoline induces antiviral response by suppressing STING degradation

The stimulator of interferon genes(STING),an integral adaptor protein in the DNA-sensing pathway,plays a pivotal role in the innate immune response against ***,it presents a valuable therapeutic target for infectious diseases and *** observed that fangchinoline(Fan),a bis-benzylisoquinoline alkaloid(BBA),effectively impedes the replication of vesicular stomatitis virus(VSV),encephalomyocarditis virus(EMCV),influenza A virus(H1N1),and herpes simplex virus-1(HSV-1)in *** treatment significantly reduced the viral load,attenuated tissue inflammation,and improved survival in a viral sepsis mouse ***,Fan activates the antiviral response in a STING-dependent manner,leading to increased expression of interferon(IFN)and interferon-stimulated genes(ISGs)for potent antiviral effects in vivo and in ***,Fan interacts with STING,preventing its degradation and thereby extending the activation of IFN-based antiviral ***,our findings highlight the potential of Fan,which elicits antiviral immunity by suppressing STING degradation,as a promising candidate for antiviral therapy.

Monolithic textured perovskite/silicon tandem solar cells(TSCs)are expected to achieve maximum light capture at the lowest cost,potentially exhibiting the best power conversion ***,it is challenging to fabricate high-quality perovskite films and preferred crystal orientation on commercially textured silicon substrates with micrometersize ***,we introduced a bulky organic molecule(4-fluorobenzylamine hydroiodide(F-PMAI))as a perovskite *** is found that F-PMAI can retard the crystallization process of perovskite film through hydrogen bond interaction between F^(−)and FA^(+)and reduce(111)facet surface energy due to enhanced adsorption energy of F-PMAI on the(111)***,the bulky molecular is extruded to the bottom and top of perovskite film after crystal growth,which can passivate interface defects through strong interaction between F-PMA+and undercoordinated Pb^(2+)/I^(−).As a result,the additive facilitates the formation of large perovskite grains and(111)preferred orientation with a reduced trap-state density,thereby promoting charge carrier transportation,and enhancing device performance and *** perovskite/silicon TSCs achieved a champion efficiency of 30.05%based on a silicon thin film tunneling *** addition,the devices exhibit excellent longterm thermal and light stability without *** work provides an effective strategy for achieving efficient and stable TSCs.

Construction of Regional Grain Industry Chain and Supply Chain in Yunnan Province

As a southwestern border province of China,Yunnan is featured by the geographical advantage of proximity to the Indo-China Peninsula which is known as World Rice Warehouse,and its capital and technology are ahead of the neighboring countries of ***,to enhance its support capability in consolidating and improving the national food security strategy,Yunnan should further develop its comparative advantages by building the regional food industry chain and supply chain depending on the province's grain system of production,processing,storage and transportation,as well as its agricultural economic and trade cooperation platforms and channels with the neighboring countries of *** this study,comparative analysis and related methods were used to systematically analyze the scale of grain production in Yunnan,the proportion of its grain production to the national total amount,the transition of its grain variety structure and the characteristics of its food security system,as well as the grain export trade of the 6 countries in the Indo-China Peninsula from 2010 to ***,the problems in grain production in Yunnan were clarified,such as the decrease of grain ration production capacity,the decline of comparative benefits of grain production and the insufficient support for agricultural"going global"***,a series of countermeasures were put forward,including further implementing the strategy of"reserving grain in land and technology"to increase Yunnan's production capacity of grain,focusing on agricultural products storage and transportation system to improve the ability to obtain grain from abroad,expanding the border processing and logistics industry,optimizing the policy of agricultural products'import and export,and etc.

Yields,growth and water use under chemical topping in relations to row configuration and plant density in drip-irrigated cotton

Background Water deficit is an important problem in agricultural production in arid *** the advent of wholly mechanized technology for cotton planting in Xinjiang,it is important to determine which planting mode could achieve high yield,fiber quality and water use efficiency(WUE).This study aimed to explore if chemical topping affected cotton yield,quality and water use in relation to row configuration and plant *** Experiments were carried out in Xinjiang China,in 2020 and 2021 with two topping method,manual topping and chemical topping,two plant densities,low and high,and two row configurations,i.e.,76 cm equal rows and 10+66 cm narrow-wide rows,which were commonly applied in matching harvest *** topping increased seed cotton yield,but did not affect cotton fiber quality comparing to traditional manual *** equal row spacing,the WUE in higher density was 62.4%higher than in the lower ***,under narrow-wide row spacing,the WUE in lower density was 53.3%higher than in higher one(farmers’practice).For machine-harvest cotton in Xinjiang,the optimal row configuration and plant density for chemical topping was narrow-wide rows with 15 plants m-2 or equal rows with 18 plants *** The plant density recommended in narrow-wide rows was less than farmers’practice and the density in equal rows was moderate with local *** results provide new knowledge on optimizing agronomic managements of machine-harvested cotton for both high yield and water efficient.
