Rudimentary food fermentation can be defined as a spontaneous process of conversion of food components through enzy-matic action.A great variety of fermented foods are produced using spontaneous approaches;however,cocoa and coffee represent the most important agricultural commodities on international markets.As a manner to increase the efficiency of these processes,starter cultures have been developed and applied under field conditions.The selection process begins with the recovery of microbial strains from spontaneous fermentation through phenotypic and metabolic traits.Next,mutation-based breeding is used to develop and improve well-adapted starter cultures.With advances in synthetic biology,especially in the last decade,the development of robust cellular fabrications with high fermentative capacity has become easier-largely due to the development of genomic approaches,such as next-generation sequencing techniques,CRISPR-Cas system and bioinformatics tools.This review brings prospects on the use of synthetic biology to design new robust strains for use in cocoa and coffee fermentations,but which can be extended to other rudimentary foods.In addition,metabolic traits and target genes(e.g.,UvrA,RecA,GPD1,and GPP2)are proposed as a starting point for the improvement of cocoa and coffee starters.Finally,the regulatory and safety requirements for these food crops are addressed.This review aims to stimulate research on the process of fermentation and the associated synthetic biology tools to produce fermented food efficiently and sustainably.

With the expansion of eucalyptus crops to areas with severe water limitations,physiological studies involving eucalyptus clones to identify those that are tolerant to water stress become important.The objective of this study was to assess morphological and physiological responses by eucalyptus clones subjected to drought stress and rehydration.The experiment consisted of three eucalyptus clones:VC865,I224 and I144 and two water regimes:control and water stress followed by rehydration,with six replicates.Leaf water potential,gas exchange,maximum quantum efficiency of photo systemⅡand plant height and stem diameter were evaluated under drought stress and rehydration.After6 d of rehydration,the number of leaves,leaf area and dry mass of root,leaf,stem and their total were evaluated.All clones showed intense reduction of gas exchange during the drought stress period,and only VC865 and 1144 showed rapid recovery with 3 d of rehydration.Clone 1224 showed greater reduction in height,stem diameter,number of leaves,water potential at midday(Ψ_(w)_(Midday)),and maximum quantum efficiency of photosystemⅡ(F_(v)/F_(m)).Clones VC865and T144 showed lower reductions inΨ_(wMidday)and F_(v)/F_(m) under stress.VC865 had lower reductions in leaf number,leaf area and higher leaf dry mass,while clone I144 had higher height and lower reduction in root dry mass under.Both these clones showed higher water use efficiency with 3d of rehydration.These different phenotypic plasticities gave the clones VC865 and 1144 efficient mechanisms of acclimatization to stress and more drought tolerance,enhancing their greater capacity for recovery after stress,which allowed lower dry mass reduction.Clone 1224,however,was more susceptible to drought stress,undergoing greater physiological damage with only partial recovery during rehydration.

BACKGROUND The etiology of inflammatory bowel disease(IBD)is unknown,but it is believed to be multifactorial.The hygiene hypothesis proposes that better hygiene conditions would lead to less infectious disease during childhood and favor the development of immune-mediated diseases.AIM To test the hygiene hypothesis in IBD by assessing the environmental risk factors associated with IBD development in different regions of Brazil with diverse socioeconomic development indices.METHODS A multicenter case-control study was carried out with 548 Crohn’s disease(CD)and 492 ulcerative colitis(UC)outpatients and 416 healthy controls,from six IBD centers within different Brazilian states at diverse socioeconomic development stages.A semi-structured questionnaire with 87 socioeconomic and environmental questions was applied.Logistic regression model was created to assess the odds ratio(OR)with P value and 95%confidence intervals(CI).RESULTS Predictive variables for both diseases(CD and UC)were women[odd ratios(OR)=1.31;OR=1.69],low monthly family income(OR=1.78;OR=1.57),lower number of cohabitants(OR=1.70;OR=1.60),absence of vaccination(OR=3.11;OR=2.51),previous history of bowel infections(OR=1.78;OR=1.49),and family history of IBD(OR=5.26;OR=3.33).Associated risk factors for CD were age(18-39 years)(OR=1.73),higher educational level(OR=2.22),absence of infectious childhood diseases(OR=1.99).The UC predictive variables were living in an urban area(OR=1.62),inadequate living conditions(OR=1.48)and former smokers(OR=3.36).Appendectomy was a risk factor for CD(OR=1.58)with inverse association with UC(OR=4.79).Consumption of treated and untreated water was associated with risk of CD(OR=1.38)and UC(OR=1.53),respectively.CONCLUSION This is the first examining environmental exposures as risk factors for inflammatory bowel disease in Brazil.Most of the variables associated with disease risk support the role of the hygiene hypothesis in IBD development.

Ni/Carbon was prepared in two steps： initially cellulose as carbon source and NiCl2·6H2O as catalyst of the carbonization process were submitted to hydrothermal treatment at 200 ℃ and further to thermal treatment at 900 ℃ under argon atmosphere. The obtained material contains Ni nanoparticles with face-centered cubic （fcc） structure dispersed on amorphous carbon with graphitic domains. PtRu/C electrocatalysts （carbon- supported PtRu nanoparticles） were prepared by an alcohol-reduction process using Ni/Carbon as support. The materials were characterized by thermogravimetric analysis, energy-dispersive X-ray spectroscopy, Fourier transform infrared spectroscopy, X-ray diffraction, transmission electron microscopy and tested as anodes in single direct methanol fuel cell （DMFC）. The performances of PtRu/C electrocatalysts using Ni/Carbon as support were superior to those obtained for PtRu/C using commercial carbon black Vulcan XC72 as support.

FTIR Characterization of Gelatin from Chicken Feet

The objective of this study was characterizing the gelatin from the chicken feet by FTIR (Fourier transform infrared) spectroscopy. Two gelatin samples were prepared for the experiment which were extracted of 200 g of chicken feet by a thermal bath of 4% acetyl acid solution at 60 °C. A commercial gelatin was used to compare the results. FTIR spectra of gelatin samples were recorded using a Nicolet iS5 FTIR spectrometer equipped with an ATR/iD3 with argon horizontal cell in which the spectra were varied in the range of 400-4,000 cm-1 at 16 °C. The results showed that FTIR spectra of the chicken feet gelatin had the most with the vibration peak at wave numbers of 1,652.01 cm-1 to the amide I, of 1,539.87 cm-1 to the amide II, of 1,241.29 cm-1 to the amide III, of 2,923.72 cm-1 to the amide B and of 3,399.56 cm-1 to the amide A. The collagen composition of the chicken feet gelatins was twotimes larger than the commercial gelatin and the vibration bands to beef gelatin have been different from chicken feet gelatins. This demonstrates that chicken feet gelatins are very good nutritional quality when compared to the commercial gelatin.

Background: In the year of 2015, evidence of a relation between Zika virus and the development of microcephaly in pregnant women who acquired the infection started to come up. Thus, it is extremely necessary that the analysis of the affliction affects these women in a biopsychosocial context, in order to discuss and comprehend in a more reliable manner the affection from the perception of the disease, origin, and psychic pain mechanisms. Methods: Systematic review with meta-analysis, using the PRISMA protocol. The study period was 2016 and the keywords included “microcephaly” and “abortion”, one at a time and then combined with the Boolean operator “AND.” The statistical analysis was done using the BioEstat 5.0 program. Calculation was based on an adjustment of Mantel-Haenszel random effect. Results: 41,046 registrations were found. Of this total, 40,992 articles were excluded because they only mentioned the fact or referred to spontaneous abortion, did not analyze abortion on the eyes of microcephaly, only treated with Zika virus, or were repeated. Limitations: Psychic pain and suffering need studies in the mother/son/disease relation, which were not found in the databases. The article was based on other sources. Conclusions: The pains vary in different areas of the female life, since internal conflicts, gender violence, stress, fear, insecurity, psychologic torture, grieve, loneliness, among other kinds of psychic suffering. More studies on psycho-emotional themes need to be promoted to discuss the female suffering on a wider vision, closer to the reality faced by these women.
