Development and Production of Fermented Flour from Sweet Potato （Ipomea Batatas L,） as a Potential Food Securitv Product

The research investigated the possibility of producing acceptable fermented sweet potato （Ipomea batatas L.） flour. Raw sweet potato was size reduced, fermented （submerge） for 72 hours, drained, dried and milled to produce fermented sweet potato flour The proximate composition of the final fermented flour was determined and compared with that of the raw sweet potato. The result revealed that the crude protein （4.27%） and carbohydrate （84.81%） contents of the fermented sweet potato flour were significantly higher （P 〈 0.05） than in the raw sweet potato which were 1.86% and 31.11% respectively. Also, the fat, crude fibre and ash contents of the fermented flour were significantly lower （P 〈 0.05） than in the raw sweet potato which were 0.21%, 0.06% and 1.78% for fermented sweet potato flour as against 0.59%, 0.73% and 2.52% for the raw sweet potato flour. During the fermentation period, the microbial profiles of the fermenting medium increases with increase in time while the pH of the medium decreases with time. Pasting properties of the flour showed that the peak viscosity was attained at 278.67 RVA with pasting temperature of 80.35 ~C, pasting time of 5 minutes, final viscosity of 391.58 RVA and breakdown viscosity of 78.53 RVA. The study revealed the nutritional quality as well as the pasting characteristics of the fermented sweet potato flour that has a great influence and implication on its utilization as a food security crop.

Language Policy in Nigeria and Nigerian Language Policy： Implications for Effective Communication in Non-Monolingual Nations

In Nigeria, almost 500 indigenous languages continue to compete with the English language that has assumed the status of a global linguistic code. The contact, in different domains between English and indigenous languages in the country continues to affect performance in English and contact languages, making effective communication in either English or any of the indigenous languages unattainable. The purpose of this study is to show that although no particular document, so named, exists expressing the nation＇s policy on language, nonetheless, the country has a policy on language that accommodates the indigenous languages as substrates, while the English language holds sway in various linguistic domains. Using a simple descriptive survey with data from previous studies, this paper examines the linguistic implications of the contact between English and indigenous languages on the younger generations who are losing contact with the mother tongue, and also not demonstrating enough proficiency in the English language. It is recommended that the opportunities that competence and maturation afforded a second language learner should be latched onto to gain the needed proficiency in English thus making them effective bilinguals and communicators in a world that is fast becoming a global village, and the inhabitants global citizens.

Customer churn poses a significant challenge for the banking and finance industry in the United States, directly affecting profitability and market share. This study conducts a comprehensive comparative analysis of machine learning models for customer churn prediction, focusing on the U.S. context. The research evaluates the performance of logistic regression, random forest, and neural networks using industry-specific datasets, considering the economic impact and practical implications of the findings. The exploratory data analysis reveals unique patterns and trends in the U.S. banking and finance industry, such as the age distribution of customers and the prevalence of dormant accounts. The study incorporates macroeconomic factors to capture the potential influence of external conditions on customer churn behavior. The findings highlight the importance of leveraging advanced machine learning techniques and comprehensive customer data to develop effective churn prevention strategies in the U.S. context. By accurately predicting customer churn, financial institutions can proactively identify at-risk customers, implement targeted retention strategies, and optimize resource allocation. The study discusses the limitations and potential future improvements, serving as a roadmap for researchers and practitioners to further advance the field of customer churn prediction in the evolving landscape of the U.S. banking and finance industry.

Blockchain-Based System for Secure and Efficient Cross-Border Remittances: A Potential Alternative to SWIFT

This paper proposes a blockchain-based system as a secure, efficient, and cost-effective alternative to SWIFT for cross-border remittances. The current SWIFT system faces challenges, including slow settlement times, high transaction costs, and vulnerability to fraud. Leveraging blockchain technology’s decentralized, transparent, and immutable nature, the proposed system aims to address these limitations. Key features include modular architecture, implementation of microservices, and advanced cryptographic protocols. The system incorporates Proof of Stake consensus with BLS signatures, smart contract execution with dynamic pricing, and a decentralized oracle network for currency conversion. A sophisticated risk-based authentication system utilizes Bayesian networks and machine learning for enhanced security. Mathematical models are presented for critical components, including transaction validation, currency conversion, and regulatory compliance. Simulations demonstrate potential improvements in transaction speed and costs. However, challenges such as regulatory hurdles, user adoption, scalability, and integration with legacy systems must be addressed. The paper provides a comparative analysis between the proposed blockchain system and SWIFT, highlighting advantages in transaction speed, costs, and security. Mitigation strategies are proposed for key challenges. Recommendations are made for further research into scaling solutions, regulatory frameworks, and user-centric designs. The adoption of blockchain-based remittances could significantly impact the financial sector, potentially disrupting traditional models and promoting financial inclusion in underserved markets. However, successful implementation will require collaboration between blockchain innovators, financial institutions, and regulators to create an enabling environment for this transformative system.
