Techniques for postmortem tenderisation in meat processing:effectiveness,application and possible mechanisms

Developing efficient and promising tenderising techniques for postmortem meat is a heavily researched topic among meat scientists as consumers are willing to pay more for guaranteed tender ***,emerging tenderising techniques are not broadly used in the meat industry and,to some degree,are controversial due to lack of theoretical ***,understanding the mechanisms involved in postmortem tenderisation is *** article first provides an overview of the relationship of ageing tenderisation and calpain system,as well as proteomics applied to identify protein biomarkers characterizing *** general,the ageing tenderisation is mediated by multiple biochemical activities,and it can exhibit better palatability and commercial benefit by combining other *** calpain system plays a key role in ageing tenderisation functions by rupturing myofibrils and regulating proteolysis,glycolysis,apoptosis and metabolic ***,tenderising techniques from different aspects including exogenous enzymes,chemistry,physics and the combined methods are discussed in ***,innovation of home cooking could be recommended to prepare relatively tender meat due to its convenience and ease of operation by ***,the combined interventions provide better performance in controlled ***,future trends in developing new tenderising techniques,and applied consideration in the meat processing industry are proposed in order to improve meat quality with higher economical value.

Since 2007,the large-scale green tide caused by Ulva prolifera(***)have occurred as a recurrent phenomenon in the southern Yellow Sea of *** surveys and satellite remote sensing showed that the small scattered patches of green tide algae were first observed along the Porphyra agriculture area of the Subei Shoal in late *** this study,we attempted to identify the role of eutrophication in the origin of the green tide in the Subei Shoal and its adjacent *** Shoal and its adjacent area are characterized by rich nutrients,especially NO_(3)^(-)-N,NH_(4)^(+)-N,PO_(4)^(3-)-P,and other bioavailable components(such as urea-N and amino acids).In the spring of 2017,the average concentrations of NO_(3)^(-)-N were 19.01±11.01μmolL^(-1),accounting for 86.68%of the dis-solved inorganic nitrogen(DIN).In addition,the average concentration of NH4^(+)-N was 2.51±1.60μmolL^(-1).PO_(4)^(3-)-P had an average concentration of 0.14±0.13μ*** average concentrations of urea-N and total hydrolyzed amino acids(THAA)were 1.73±1.36μmolL^(-1)and 1.33±0.80μmolL^(-1),*** nutritive substances play a key role in the rapid production of *** and make the Jiangsu coastal water an incubator for green tide.

Learning to Combine Answer Boundary Detection and Answer Re-ranking for Phrase-Indexed Question Answering

Phrase-indexed question answering(PIQA) seeks to improve the inference speed of question answering(QA) models by enforcing complete independence of the document encoder from the question encoder,and it shows that the constrained model can achieve significant efficiency at the cost of its accuracy. In this paper, we aim to build a model under the PIQA constraint while reducing its accuracy gap with the unconstrained QA models. We propose a novel framework —Ans DR,which consists of an answer boundary detector(Ans D)and an answer candidate ranker(Ans R). More specifically, Ans D is a QA model under the PIQA architecture and it is designed to identify the rough answer boundaries; and Ans R is a lightweight ranking model to finely rerank the potential candidates without losing the efficiency. We perform the extensive experiments on public datasets. The experimental results show that the proposed method achieves the state of the art on the PIQA task.

Cisplatin, a widely used anticancer drug, damages hair cells in cochlear organotypic cultures at low doses, but paradoxically causes little damage at high doses resulting in a U-shaped dose-response function. To determine if the cisplatin dose-response function for vestibular hair cells follows a similar pattern, we treated vestibular organotypic cultures with doses of cisplatin ranging from 10 to 1000 μM. Vestibular hair cell lesions progressively increased as the dose of cisplatin increased with maximum damage occurring around 50-100 μM, but the lesions progressively decreased at higher doses resulting in little hair cell loss at 1000 μM. The U-shaped doseresponse function for cisplatin-treated vestibular hair cells in culture appears to be regulated by copper transporters, Ctrl, ATP7A and ATP7B, that dose-dependently regulate the uptake, sequestration and extrusion of cisplatin.

A hierarchical closed-loop production control scheme integrating scheduling,control and performance evaluation is ***,the production process is divided into two main hierarchies:the lower level is the physical operation level and the upper one is the management ***,the schedule template for the management level and the activity template for the physical operation level are constructed separately,the tasks in the schedule have the ability to make partial decisions,and the per- formance parameters are introduced into activity ***,the two levels use different model representations:stochastic process algebra for the management level whose output is the control commands and stochastic Petri net for the physical operation lev- el which is the execution of the control ***,the integration of the two levels is the control commands mapping into the lower physical operations and the responses feeding back to the upper decision-making that are defined by some transition functions. Under the proposed scheme,the production process control of a flexible assembly is *** is concluded that the process con- trol model has partial ability to make decision on-line for uncertain and dynamic environments and facilitates reasoning about the be- haviors of the process control,and performance evaluation can be done online for real-time scheduling to ensure the global optimiza- tion.

Eleven organophosphate esters(OPEs)in the air and seawater were investigated from the northwestern Pacific Ocean to the Southern Ocean during the 2018 Chinese 34th Antarctic Scientific *** concentration of total OPEs ranged from 164.82 to 3501.79 pg/m~3in air and from 4.54 to 70.09 ng/L in *** halogenated OPEs,tri(chloropropyl)phosphate(TCPP)and tri(2-chloroethyl)phosphate(TCEP),were generally more abundant than the non-halogenated OPEs.A levelⅢfugacity model was developed to simulate the transfer and fate of seven OPEs in the air and seawater regions of the central Ross *** model results indicate that OPEs are transferred from the air to the seawater in the central Ross Sea in summer,during which the Ross Sea acts as a final OPE *** and wet deposition dominated the processes involving OPE transfer to *** OPE degradation process was also found to be more pervasive in the atmosphere than in the seawater *** findings highlights the importance of long-range transport of OPEs and their air–seawater interface behavior in the Antarctic.

The imbalance of reactive oxygen species and antioxidants is considered to be an important factor in the cellular injury of the inner ear. At present, great attention has been placed on oxidative stress. However,little is known about fighting oxidative stress. In the current study, we evaluated antioxidant-induced cochlear damage by applying several different additional antioxidants. To determine whether excessive antioxidants can cause damage to cochlear cells, we treated cochlear explants with 50 m M M40403, a superoxide dismutase mimetic, 50 m M coenzyme Q-10, a vitamin-like antioxidant, or 50 m M d-methionine, an essential amino acid and the important antioxidant glutathione for 48 h. Control cochlear explants without the antioxidant treatment maintained their normal structures after incubation in the standard serum-free medium for 48 h, indicating the maintenance of the inherent oxidative and antioxidant balance in these cochlear explants. In contrast, M40403 and coenzyme Q-10-treated cochlear explants displayed significant hair cell damage together with slight damage to the auditory nerve ***, d-methiodine-treated explants exhibited severe damage to the surface structure of hair cells and the complete loss of the spiral ganglion neurons and their peripheral fibers. These results indicate that excessive antioxidants are detrimental to cochlear cells, suggesting that inappropriate dosages of antioxidant treatments can interrupt the balance of the inherent oxidative and antioxidant capacity in the cell.
