Evaluation of Physicochemical,Microbiological and Sensory Stability of Frozen Stored Vacuum-Packed Lamb Meat

Nowadays, lamb meat represents only 7% of all meat produced in the world. In recent years the demand for standardized lamb meat cuts has been considered of great importance and the marketing occurs predominantly in the form of frozen cuts. Herewith, the main of this work was to evaluate the stability and safety of lamb meat during frozen storage. Meats were vacuum packed in high barrier multilayer plastic iflms and stored during 12 mon at （-18±1）℃. The meat stability was assessed by physical and chemical （lipid oxidation, objective color, pH value, cooking losses and instrumental texture）, microbiological （total count of psychrotrophic, coliform count at 45℃, coagulase-positive staphylococci and the presence of Salmonella） and sensory analysis （acceptance test and visual evaluation）. The vacuum packed lamb meat remained stable as to most physical and chemical indexes. Microbiological indexes showed good stability throughout the storage period according to Brazilian legislation standards to pathogenic microorganisms. Although a signiifcant reduction in tenderness （shear force increase from 3 to 8 kg）, it showed a good sensorial acceptance for all attributes tested, including texture, with scores of around 7 （like moderately） during the 12 mon of storage. Therefore, it can be concluded that, under the conditions applied in this study, lamb meat presents a shelf life of at least 12 mon when stored at-18℃.

Objective: To evaluate the phenolic profile and antioxidant activity in vitro of peanut skin extract(PSE) and effect of PSE on characteristics of sheep patties during ***: PSE phenolic profile was evaluated in LC–MS analysis and by total phenolic content, 1,1-diphenyl-2-picrylhydrazyl radical scavenging capacity and ferric reducing/antioxidant power. Patties elaborated with sheep meat were packaged in modified atmosphere and storage at(2 ± 1)C. The analyses were performed every 5 days for 20 days on microbial counts, physico-chemical properties, lipid oxidation, protein stability and sensory ***: The major group of phenolic compounds in PSE was the proanthocyanidins followed by other flavonoids, which are related to potential phenolic content and antioxidant activity. The addition of PSE and butyl hydroxytoluene(BHT) reduced the microbial counts during the storage time, caused reduction on the loss of redness and sensory properties over time. The lipid and protein oxidation in sheep patties was effectively inhibited by PSE and ***: The present results showed the potential application of PSE as a natural alternative to replace synthetic antioxidants(BHT) for increasing the quality and extending the shelf-life of sheep patties.

Prescription and delivery of Enteral Nutrition for ICU Patients: A Case Study of a Hospital in the Interior of Brazil

Background: The objective of the present study was to evaluate during one year the total delivery of volume, calories, and proteins and compare them with the total prescribed to ICU patients using ENT (Enteral Nutrition Therapy) exclusively. Methods: Data on the prescribed or infused volume, calories, and protein, as well as their respective needs for each individual, were collected. Anthropometric parameters and age data were also collected from the medical records of 41 patients admitted to the intensive care unit. Results: Prescribed versus infused enteral diet volume was presented in 5 weeks which corresponds to the maximum duration of ICU treatment. Regarding sampling, the majority corresponded to elderly people (>64 years old) and males (63.4%). The total average prescribed was 719.2 mL of enteral diet on an average of 649.7 mL delivered. In addition, there was no significant difference between the prescribed and delivered volume, caloric value, and protein content of the diet only in the last week of hospitalization, which corresponded to the range of 29 - 36 days. Several factors make it difficult to reach the patient’s caloric and protein recommendations. Most of the reasons are not recorded, corresponding to 57.1%, indicating the difficulty of assessing the inadequacy of the prescribed and delivered volume. Conclusion: To our knowledge, this is the first time that a prescription vs. delivery assessment has been carried out for patients in the Brazilian Midwest. In addition, although our research is a difficulty reported worldwide (in most hospitals), we also provide opportunities for how the problem was solved in our case, which may contribute to other cases.

Background: This study evaluated the effects of Eimeria spp. challenge and dietary supplementation with free methionine or methionine dipeptide on animal performance;expression of genes associated with the immune system, antioxidant system, and amino acid transport in the jejunum;and redox status of the jejunum of broiler ***: A randomized, 2 × 3 factorial design was used, in which Eimeria spp. challenge was the first factor(Eimeria-challenged, EC, or unchallenged, UC, broilers) and methionine supplementation was the second factor(non-supplemented, NS;free DL-methionine, DL-Met;and methionine dipeptide, DL-methionyl-DL-methionine, DLMMet). At 14 days of age, chickens were inoculated orally with sporulated oocysts of Eimeria acervulina, Eimeria praecox, Eimeria maxima, and Eimeria mitis. Birds were killed by cervical dislocation 144 h post-inoculation(PI), and the jejunum was collected for biochemical and molecular ***: EC broilers had a 13% lower feed intake(FI), 37% lower body weight gain(BWG), and 39% higher feed conversion ratio(FCR) than UC broilers. Chickens fed the DL-Met diet had higher BWG(about 12% higher) and better FCR(about 12% lower) than chickens fed the NS diet. EC chickens had lower relative weight of the bursa of Fabricius(51.8%) and higher relative weights of the spleen and whole intestine(53.6% and 26.3%, respectively) than UC chickens. Eimeria spp. challenge led to an increase in the levels of oxidative substances, such as nitrite and thiobarbituric acid reactive substances(TBARS), in the jejunum of chickens 144 h PI. Among UC chickens, those fed the DL-Met diet had higher total antioxidant capacity(TAC) and lower catalase(CAT) and superoxide dismutase(SOD) activities. EC chickens that received the NS diet had higher carbonylated protein content(CP). This result was associated with their lower TAC and catalase activity. Near Infrared(NIR)spectroscopy is an analytical technology widely used for the nondestructive characterisation of organic samples,considering both qualitative and quantitative *** the present study,the combination of Multi-target(MT)prediction approaches and Machine Learning algorithms has been evaluated as an effective strategy to improve prediction performances of NIR data from wheat flour *** different Multi-target approaches have been tested:Multi-target Regressor Stacking(MTRS),Ensemble of Regressor Chains(ERC)and deep Structure for Tracking Asynchronous Regressor Stack(DSTARS).Each one of these techniques has been tested with different regression methods:Support Vector Machine(SVM),Random Forest(RF)and Linear Regression(LR),on a dataset composed of NIR spectra of bread wheat flours for the prediction of qualityrelated *** combining all MT techniques and predictors,we obtained an improvement up to 7%in predictive performance,compared with the corresponding Single-target(ST)*** results support the potential advantage of MT techniques over ST techniques for analysing NIR spectra.

How Does Heat-Stress Intensity Affect the Stability of Microbial Activity and Diversity of Soil Microbial Communities in Outfields and Homefields’ Cultivation Practices in the Senegalese Groundnut Basin?

Agroecosystems in the Senegalese groundnut basin experience long periods of high temperatures and drought, which disrupt the stability of soil microbial communities. This study evaluated how that stability is affected by homefields and outfields’ agricultural practices and the duration of heat stress. Specifically, we collected soils from organically farmed fields that receive continual high inputs of manure (homefields), and from fields that are rarely manured (outfields). Soil samples were submitted to artificial heat stress at 60°C for 3, 14, and 28 days, followed by 28 days of recovery at 28°C. We examined the functional stability of microbial communities by quantifying C mineralization, and characterized the stability of the communities’ taxonomic compositions via high-throughput DNA sequencing. We found that the microbial communities have a low resistance to heat stress in soils from both types of fields. However, the manuring practice does affect how the functional stability of microbial communities responds to different durations of heat stress. Although functional stability was not recovered fully in either soil, microbial community resilience seemed to be greater in homefield soils. Differences in manuring practices also affected the structural taxonomic stability of microbial communities: relative abundances of Bacilli, Chloroflexia, Actinobacteria and Sordariomycetes increased in the homefield stressed-soils, but decreased significantly in outfield soils. In contrast, relative abundances of α-Proteobacteria, γ-Proteobacteria and Eurotiomycetes increased significantly in outfield stressed-soils, while decreasing significantly in the homefield soils. Relative abundances of Bacilli changed little in outfield soils, indicating that this taxon is resistant to heat stress. In summary, the microbial communities’ capacities to resist heat stress and recover from it depend upon the organic richness of the soil (i.e., manuring practice) and the adaptation of soil
