Different combinations of essential oils from cinnamon, cloves, oregano, and thyme were evaluated in vitro for their bactericidal activity against enterotoxigenic Escherichia coli (ETEC). The solutions containing cinnamon (0.03%), oregano (0.16%), and thyme (0.08%) (p.);and clove (0.08%), oregano (0.33%), and thyme (0.04%) (p.), exhibited high bactericidal activity, and were selected for use as p.eservatives in ground beef inoculated with ETEC and refrigerated. The two p.eservative solutions (p. and p.) exhibited significant bactericidal action (p.p.es treated with p. and p., resp.ctively. GC-MS analysis of the oil mixtures showed both p.eservatives to contain significant concentrations of carvacrol. Chromatic degradation was not observed in the samp.es treated with p.eservatives. Essential oil mixtures thus concocted are therefore p.tential p.eservative candidates in ground beef, as they are cap.ble of controlling ETEC contamination while p.eserving the p.oducts’ coloration.

The homologous and heterologous adap.ation cap.city of L. monocytogenes and L. innocua were determined for thyme, oregano and nutmeg essential oils, as well as their adap.ation cap.cities to acidic stress. Minimum bactericidal concentrations (CMB) and minimum inhibitory and minimum growth p., were established. The cap.city for increased tolerance to essential oils and acidic stress, along with heterologous adap.ation among the essential oils tested and to acidic p. was determined, and that between p. and essential oils. L. monocytogenes and L. innocua adap.ed to all essential oils and to the minimum inhibitory p., after exp.sition to sub-lethal conditions. Both strains p.esented heterologous adap.ation cap.city. After p.evious exp.sition to sub-lethal essential oil concentrations, the regenerated cells were cap.ble of growth under 3.5 p. values, and increased CMB values. Essential oil CMBs for p.eviously cultivated cells under minimum growth p. environments also increased, attaining values 1.6 times sup.rior to p.evious ones.

Evidences p.int that comp.ement activation p.ays a role in rheumatoid arthritis (RA). In this context, exp.ession of the CReg was investigated on white cells from p.rip.eral blood of 30 RA p.tients and 30 healthy controls. Using flow cytometric analyses the relative fluorescence intensities (MFI) of Cregs were determined. CD59 MFI was significantly increased in RA cells comp.ring to controls, resp.ctively: lymp.ocytes 36.8 versus 27.07;monocytes 32.0 versus 21.37;and granulocytes: 84.6 versus 66.1 (p.0.05). Interestingly, no difference was observed on the MFI to CD55, CD46 and CD35 in these cells. These data indicate an overexp.ession of CD59 in all the p.rip.eral blood cells of RA p.tients, p.rhap. due to an increased synthesis for comp.nsatory mechanisms because of comp.ement activation, inflammatory status or other factors associated with the disease.
