Aflatoxin M1 (AFM1) occurrence in milk and milk products has been a major concern among food scientists over the past three decades owing to its possible health risk in humans. The well-documented AFM1 associated adverse health outcomes include hepatocarcinogens, mutagens genotoxins, mutagenicity, and teratogen. The paper reviews the occurrence of AFM1 in milk, milk products, and human milk in developing and developed countries, with its safety standards of regulation. The health associated risks with AFM1 are the important methods used in detecting and reducing AFM1 in milk and other milk products are presented.

Probiotics have become essential in food safety and health discourse with interest in their availability, stability, nutrition, and health implications. In this paper, an overview of probiotics of yeast and lactic acid, bacterial fermented food is presented. Probiotics of Lactobacillus spp. and Bifidobacterium spp.’s activities and processes within the human intestinal system are examined. Yeast and lactic acid bacterial (LAB) fermented foods from classified food groups such as vegetables, cereals, and grains, soybean, milk, fish, meat, and beverages are examined. This paper focuses on probiotic (microorganism) strains identified with food and their potential health and nutrition benefits. Finally, the impact of processing parameters and non-process factors on probiotics potential in fermented food is investigated.

Livestock such as poultry is consumed as food worldwide and it constitutes one of the main protein sources for diners, as well as an important source of revenue generation for farmers. Poultry meat production chain identifies a significant role of the farm to folk. Most often, the systems used in poultry production can result in a higher prevalence of Campylobacter, Salmonella, and Escherichia coli contamination, leading to adverse health effects with detrimental consequences. The method of poultry keeping plays a significant role in the poultry meats’ outcome and its food safety standards. Farmers attempt to develop new poultry operations, however, there are two main possibilities;to operate within the present vertically integrated system which is incredibly good for disease prevention and to develop independently, or a smaller operation that is more animal friendly. This article reviews the available research on the impact of free-range poultry production systems on food safety, most importantly the prevalence and control of Campylobacter, Salmonella and Escherichia coli in free-range production systems. The results suggest a conflicting view when bacterial loads of poultry meat from conventional and free-range systems are compared. Studies have shown increased bacterial loads in a free-range production system.

Plantain (Musa spp.) constitutes an essential food crop in both tropical and subtropical areas. The staple’s nutritional value and provitamin A carotenoid potential has attracted more interest and usage. Plantain (Musa spp.) optimization into food recipes has been identified to increase patronage and minimises food wastage, due to the fruit’s (pulp) high perishability nature. In this study, local over ripe plantain (Musa spp.) was sampled and used in a beverage production. The beverage was processed from pureed ripe plantain, by three days fermentation of the pureed plantain mixture, boiling, and spicing, preservation with syrup, storage, and usage. The product’s processing was followed with a sensory evaluation of the new beverage on taste, appearance, color, flavour, and overall acceptability. Water pollution caused by organic dyes is a critical environmental *** activated carbon(AC)is commonly used for dye adsorption,its effectiveness is limited by challenges in separation and *** address these limitations,a convenient recyclable magnetic activated carbon(MAC)was fabricated via co-precipitation and calcination method,serving as adsorbent and catalyst for methyl orange(MO)removal through a Fenton-like degradation *** techniques,including XRD,FTIR,SEM and TEM,confirmed that Fe_(3)O_(4) nanoparticles(10–20 nm)were uniformly dispersed on AC *** MAC maintaining a high surface area(997 m^(2)/g)and pore volume(0.795 cm^(3)/g)and exhibited superparamagnetic properties with a saturated magnetization of 5.52 emu/g,enabling effective separation from aqueous solutions by *** adsorption studies revealed that MO adsorption onto MAC followed pseudo-second-order kinetic and Freundlich isotherm model,with a maximum adsorption capacity of 205 mg/g at 25℃.Thermodynamic analysis showed that the adsorption process was spontaneous and *** degradation of MO and in-situ regeneration of MAC were achieved via Fenton-like reaction using sodium persulfate(PS).Under a PS concentration of 9 mmol/L,the MO removal efficiency near 95%after 60 min,with a total organic carbon(TOC)reduction of 83.1%.The reaction of Fe_(3)O_(4) and oxygen functional groups on AC surface with PS facilitated the generation of SO_(4)^(·-),thereby enhancing catalytic degradation of *** degradation efficiency improved as the temperature increased from 25℃ to 45℃.Cycle tests demonstrated that the MO removal efficiency of MAC remained above 90%after 5 cycles of ***,this study highlights the potential of MAC for efficient removal of organic dyes from water through the coupling of adsorption and Fenton-like degradation,providing a promising solution for addressing water pollution challenges.

The global burden of chronic kidney diseases(CKDs)kept increasing,and it is a leading cause of mortality and morbidity rate in most African *** burden of CKD is felt more in developing countries where there is no adequate social security system or health insurance to meet the huge financial demands the disease places on its sufferers and their *** is also noted that this disease affects the economically productive age group unlike in developed countries where the elderly are more *** prevalence of CKD was found to be highly related to age,gender,hypertension,obesity,history of diabetes mellitus,use of herbal medicines,and prolonged use of nonsteroidal anti-inflammatory drugs in *** majority of CKD cases were not clinically recognized promptly,mainly because of the lack of patients’awareness about CKD and associated risk ***,health awareness should be intensified by the nurses on lifestyle modification by individuals at risk of CKD,prompt management,good compliance with prescribed medications,avoidance of self-medication,and indiscriminate use of over-the-counter *** addition to that,nurses also need to advocate for regular population screening,and efforts should be made at all levels of care to reduce the negative impact of the disease and complications on the patients.

块根和块茎作物是重要的粮食作物,富含淀粉,通过人们各种饮食己成为人类主要热量摄入来源。近年来,随着人们对新淀粉产品兴趣日益增长,研究导向倾向于根和块茎淀粉的性质和改性。因此,本研究探讨了11个普遍在中国淀粉工业上使用的甘薯品种（川薯217,密选-1号,川薯34,商薯19,洛10,食5,西城薯007,徐薯18,徐薯22,徐薯27,徐薯28）淀粉的物化特性。2个尼日利亚红薯品种（NSP1＆2）淀粉,并以中国马铃薯（CP）和中国木薯（CC）作对比。测定了CC,CSP,CP,NSP1＆2的矿物质含量（钾,镁,锰,磷,钙,铜,铁,锌,砷,镉,铬,铅）和化学组成。研究了不同热处理温度（45和60℃处理30min）对甘薯和木薯淀粉水解的影响。评估了不同程度高压处理（200,400,600MPa）对甘薯淀粉粒径,结构和淀粉回生性能的影响。对CC,CSP,CP,NSP1＆2矿物元素分析结果表明,甘薯的K含量较高,在7164-13087μg/g范围内：Cu含量较低,在2.52-5.82pg/g范围内。与中国甘薯块根类相比,中国块茎类的蛋白质,灰分和水分含量偏高。不同淀粉的水分,蛋白质,灰分,脂质和磷含量分别在3.86-9.48%,0.05-0.75%,0.10-0.47%,0.14-0.26%及0.02-1.00%之间。淀粉直链淀粉含量在13.33-26.83%之间不等。不同淀粉的平均颗粒大小,粒度分布,膨润力,溶解度和胰酶敏感性不同。具有回生速率高的淀粉其直链淀粉含量也高。热特性和黏度特性依淀粉品种各异。甘薯和木薯淀粉性质相似,而均不同于马铃薯淀粉。Pearson相关分析表明：直链淀粉,平均颗粒大小和磷含量对淀粉的物化特性产生重要影响。热特性和黏度也显着相关。先热处理后水解可显著改变淀粉的物化特性。水解后,淀粉的膨胀力和回生性能明显改变。FTIR研究表明,水解的热处理淀粉有序结构消失。X射线衍射分析发现,水解的热处理淀粉类型没有变化,但结晶峰更尖锐。这些结果表明,水解主要发生在非结晶区域。与天然淀粉相比,热处理淀粉的物化特性均发生改变;且与45℃处理相比,60℃处理的淀粉水解度偏高。经200,400及600MPa处理后的淀粉结构,糊化和回生特性发生改变。天然和经高压处理后的淀粉平均颗粒大小无显著差异;但随着压力的增加,淀粉大颗粒的比例越来越多。DSC分析表明,随着压力的增加,淀粉的糊化温度（Tp）和糊化焓（△Hgel）略有下降。在天然淀粉相比,经高压处理后的淀粉回生速率提高,400MPa达到最高。

Understanding the determinants of household cooking-fuel choice in sub-Saharan Africa:evidence from Nigeria

Overreliance on traditional cooking fuels by agricultural households poses a significant obstacle to achieving the United Nations Sustainable Development Goal 7 by 2030 in *** the emerging recognition of remittances as a crucial factor influencing cooking-fuel choices in the energy-transition literature,there is a paucity of studies examining this influence in *** data from 4400 agricultural households sourced from the fourth wave of the Nigerian Living Standard Measurement Survey data sets,this study examined the influence of remittances on cooking-fuel choices,among other factors in *** descriptive statistics and the multinomial logit regression model,the analysis reveals that traditional cooking fuels,including wood,crop residue and animal dung,continue to dominate the cooking-fuel *** empirical result of the multinomial logit model showed that households that receive remittances are more likely to use modern cooking ***,wealthier,more educated households with access to electricity are more likely to use modern and transitional cooking fuels than traditional cooking *** on the findings,the study suggests the incentivization of remittances into the country through the reduction in associated transaction costs and accelerated public infrastructural investment in affordable electricity and good road networks to connect rural areas to gas-supply networks to drive the transition to modern cooking ***,educational and awareness campaigns about the health risks associated with traditional cooking energy,particularly indoor air pollution,should be encouraged,especially in rural areas.

Treatment satisfaction and medication adherence among hypertensive patients in a teaching hospital in Ekiti State, Nigeria

Objective:This study investigates treatment satisfaction and medication adherence among hypertensive patients attending the medical outpatient clinic of a teaching hospital in Ekiti State,*** and Methods:The study design was descriptive and cross-sectional using quantitative research strategy.A systematic sampling technique was used in selecting 270 participants;a structured questionnaire was used for data *** adherence was assessed using the 8-item Morisky Medication Adherence Scale,and treatment satisfaction was assessed using the 14-item Treatment Satisfaction Questionnaire for ***:The study findings revealed that majority(73.7%)of the study participants had good knowledge of hypertension,while 44.4%had a good level of treatment *** of association of participants’sociodemographic characteristics revealed age(χ^(2)=23.773,P=0.003)and occupation(χ^(2)=21.251,P=0.019)to be significantly associated with treatment *** level of medication adherence by the participants was observed to be relatively poor(50.4%).The educational status(χ^(2)=23.914,P=0.001)and monthly income(χ^(2)=10.406,P=0.034)of the participants showed significant association with medication ***:The study recommends that improving patients’understanding of their disease and treatment with subsidizing hypertensive medications by the government will enhance medication adherence.
