Effect of Pure Culture Fermentation on Biochemical Composition of <i>Moringa oleifera</i>Lam Leaves Powders

This study was carried out to determine the effect of the age of the leaves and fermentation on in vitro protein digestibility and biochemical properties of leaves powder of Moringa oleifera. A 6 × 2 × 2 factorial design with two ages of the leaves (one and seven-month-old leaves), six times of fermentation and two fermentation temperatures was used for this purpose. One and seven-month-old fresh leaves were dried at 45 ℃ for 24 h, crushed to 1000 μm then fermented at 30℃ and 37℃ for 120 hours with Lactobacillus plantarum A6 at 108 CFU/g. Samples were withdrawn every 24 hours for physico-chemical analyses. Results showed that 7 month-old leaves were richer in iron, proteins, polyphenols and phytates than one month old leaves. The phytates content dropped from 66.92% and 61.95% in the seven and one month-old leaves powders respectively fermented at 37℃, and from 54.15% and 67.95% in the seven and one month-old leaves powders respectively fermented at 30℃. Protein content increased by 26.34% and 24.48% for the 1and 7-month-old leaves powders respectively fermented at 37℃, and by 13.06% and 13.97% for the 1and 7month-old leaves powders respectively, fermented at 30℃. Iron availability increased from 35.97% to 40.57% and 20.74% to 30.98% for the 1and 7-month-old leaves powders respectively, fermented at 37℃ and from 35.97% to 39.79% and 20.76% to 23.72% for the 1and 7-month-old leaves powders respectively, fermented at 30℃. There was a negative correlation between pH, total and reducing sugar contents, time as well as fermentation temperature, whereas there was a positive correlation between total protein content and pepsic digestibility of protein and fermentation time. From these results, fermentation of M. oleifera leaf powder by Lactobacillus plantarum A6 increases protein content, pepsic digestibility of protein and availability of iron and reduces the phytates content of these powders.

The Adansonia digitate L. known as Baobab is the only species present in West Africa and grows wild. All parts of the plant are used by humans. In Senegal, baobab pulp is widely consumed;it is used as raw material in small and medium enterprises (SMEs) for making juices, concentrates, jams, powder. Drinks or juices from baobab are highly appreciated by consumers;however rapid fermentation can happen even after pasteurization that can shorten their shelf-life. A Doehlert experimental design was used to find a good scale of heat treatment ensuring a proper conservation of baobab juice. Results of the experimental design showed that a heat treatment of 80°C for 10 min gives a baobab juice with good sanitary quality that meets the international standards.

The aim of this work was to contribute to our knowledge of the proximate composition, mineral and vitamin content of 20 edible wild plants used as spices in Cameroon. The plant species were collected from 3 different markets in the West Region of Cameroon and analysed for their content of crude proteins, and lipid, ash, moisture, available sugars, total phenols, carotenoids, minerals (Ca, Zn, K, Na, Mg, Al, Mn, Cu and Se), and vitamins (A, E and C) as well as for their pH and colour. Results revealed that all the plants were low in moisture (7.7 to 10.5 g/100 g) but high in ash content (7.7 to 10.5 g/100 g). Hua gabonii (bark) (1594.5 mg/100 g) was relative source of calcium, Echinops giganteus (206.4 mg/100 g) exhibited the highest level of iron and Scorodophleus zenkeri (310.0 μg/100 g) the highest level of selenium. Generally all the plants were found to contain low levels of Zn, Cu and Mg. Wide variations were observed for the pro- teins and available sugars among the samples. The lipid content of some of the plants were surprisingly relatively high as was the case with Monodora myristica (53.4 g/100 g), Xylopia aethiopica (33.7 g/100 g), Fagara leprieuri (32.1 g/100 g), and Aframomum daniellii (23.1 g/100 g). All the plants were rich in phenols, carotenoids, vitamin E and C. They are dark in colour and in solution they tended to provoke a fair acidification.

Macadamia nuts (Macadamia integrifolia) grown in Venezuela have showed an average total fat content of 70%. Oleic acid (18:1) was the main monounsaturated fatty acid (MUFA) (51.3%), followed by palmitoleic acid (16:1, 22.6%). The content of polyunsaturated fatty acids (PUFAs), C18:2 and C18:3 represented 5.4%. Thus, MUFAs and PUFAs together constituted more than 80% of the total fatty acids present. Trans-vaccenic acid was also present (3%). As regards to other phytochemical compounds, tocopherols and tocotrienols were not found in the sample, but the presence of squalene was *** antioxidant activity (44.2%) of the extract was produced by the phytochemicals present.

The rational design of efficient bimetallic nanoparticle (NP) catalysts is challenging due to the lack of theoretical understanding of active components and insights into the mechanisms of a specific reaction. Here, we report the rational design of nanoreactors comprising hollow carbon sphere-confined PtNi bimetallic NPs (PtNi@HCS) as highly efficient catalysts for hydrogen generation via ammonia borane hydrolysis in water. Using both density functional theory calculations and molecular dynamics simulations, the effects of an active PtNi combination and the critical synergistic role of a hollow carbon shell on the molecule diffusion adsorption behaviors are explored. Kinetic isotope effects and theoretical calculations allow the clarification of the mechanism, with oxidative addition of an O-H bond of water to the catalyst surface being the rate-determining step. The remarkable catalytic activity of the PtNi@HCS nanoreactor was also utilized for successful tandem catalytic hydrogenation reactions, using in situ-generated H2 from ammonia borane with high efficiency. The concerted design, theoretical calculations, and experimental work presented here shed light on the rational elaboration of efficient nanocatalysts and contribute to the establishment of a circular carbon economy using green hydrogen.

Variations in Soil Organic Matter Content in Cultivated and Uncultivated Calcareous Soils from the Mediterranean Island of Malta after 15 Years of Cultivation

The soils of Malta are calcareous and generally undeveloped. Organic matter (OM) in these soils is low and farmers are constantly urged to increase it. The objective of this study was to evaluate any temporal variation in soil OM after 15 years of cultivation, and determine whether soil series, soil depth, and cultivation influence variation. OM was determined in the topsoil and subsoil of 7 agricultural and 4 non-agricultural sites. The sites represented 7 different soil series that are present on the island. In sampling periods 1 (t = 0 years) and 2 (t =15 years), the OM content in the collective (all soil series) bulk (topsoil and subsoil) uncultivated soil was 3.9 % and 3.8 % respectively. This was significantly greater than that of the collective bulk cultivated soil (2.4% and 2.3%). The OM in the collective uncultivated topsoil was 5.4% and 5.2% in periods 1 and 2 and was significantly higher than that of the cultivated topsoil (2.5% in both periods). The OM content in the collective uncultivated subsoil was 2.3% and 2.5% in periods 1 and 2 respectively but only that measured in period 2 was significantly higher than that of the cultivated subsoil (2.2% in both periods). On an individual soil series basis, the OM in the uncultivated topsoils was significantly higher than that of their cultivated counterparts. The differences in the subsoils were not significant. Across the uncultivated soil series, OM was significantly higher in the topsoil than in the subsoil but in the cultivated soil series the differences between topsoil and subsoil were not significant. There was no significant difference in OM between the uncultivated soils of different series, but in the cultivated the OM content was higher in soils that were more mature. After 15 years, no significant change in OM occurred in both the collective cultivated and uncultivated bulk soils, the collective topsoil and subsoil, and in most of the individual series.
