Utilization of Amaranth Flour in Preparation of High Nutritional Value Bakery Products

Amaranth has become an unconventional crop that interesting of scientists and researchers due to its unique nutritional properties, in addition to bear the water lack and be suitable for all types of soil. The objective of this study was to utilize amaranth flour in preparation of high nutritional value bakery products, crackers and tortilla produced by using amaranth flour instead of corn flour (w/w) by 0%, 25%, 50%, 75% and 100% levels substitution. The prepared products were evaluated for its chemical composition, minerals content, amino acids composition, fatty acid composition, color analysis, biological active compounds analysis and sensory evaluation. Results showed that substitution with amaranth flour increased protein, fat, ash and fiber. As for minerals and amino acid, it indicated that the formula No. 3 (25% corn flour/75% amaranth flour) in crackers and the formula No. 2 (50% corn flour/50% amaranth flour) in tortilla contained higher amount of minerals such as iron, calcium, potassium, zinc, magnesium, manganese, copper and phosphorus, and of the essential amino acids such as Leucine, Lysine and valine. On the other hand the formula No. 3 in crackers had the highest unsaturated fatty acids content and lowest of total saturated fatty acids content. While the formula No. 2 in tortilla had the highest saturated fatty acids content and lowest of unsaturated fatty acids content. The results also showed that the incorporation of amaranth flour in the preparation of the crackers and tortilla led to significantly decreased yellowness and lightness compared with control. Also, results indicated that crackers and tortilla which prepared with amaranth flour exhibited higher antioxidant activity than control formulas. Concerning sensory evaluation of crackers, results showed significant decrease in appearance, color and overall acceptability while, tortilla had significant decrease in general appearance, color and total score at all formulas. Novel synthesis of stabilized Bi1-x-yGdxDyyO1.5 solid electrolytes with enhanced conductivity for intermediate temperature solid oxide fuel cells（SOFCs）

Herein,we report the synthesis of a Dy-Gd co-doped cubic phase-stabilized Bi2O3solid electrolyte system via solid-state processing under atmospheric *** with Dy3+and Gd3+has been observed to significantly enhance the densification process during sintering for stabilization purposes,thereby improving the electrical properties of δ-Bi2O3-type *** synthesized ceramics were characterized using X-ray diffraction（XRD）,field emission scanning electron microscopy-energy dispersive X-ray spectroscopy（FESEM-EDX）,thermal gravimetry/differential thermal analysis（TG/DTA）,and the four-point probe technique（4PPT）.XRD analysis reveals that the samples Bi1-x-yGdxDyyO1.5（y=0.05/x=0.05,0.10,0,15,and 0.20,and x=0.05/y=0.10,0.15,and 0.20） exhibit a stable face-centered cubic δ-phase and a mixed-phase crystallographic *** XRD analysis of the stabilized δ-phase suggests that the prepared oxides show a face-centered cubic（FCC） structure with a space group of *** micrographs reveal that the composition Bi0.90Gd0.05Dy0.05O1.5has no significant ***,an evident increase in the pore formation is observed as the amount of Gd2O3increases until it reaches 20%.This finding suggests that dense pellets are formed during the sintering process at 900-1000℃.The DTA analyses were performed to verify the phase stability,which agrees with the XRD *** electrochemical performance of the synthesized Dy-Gd co-doped Bi2O3solid electrolyte system was evaluated and analyzed in detail by using the electrochemical impedance spectroscopy（EIS） technique,Based on EIS and conductivity measurements,Bi0.75Gd0.20Dy0.05O1.5exhibits the lowest activation energy of 0.519 eV and the highest conductivity value of 0.398 S/cm at 627℃compared to the other samples;this composition can be used as a solid electrolyte for intermediatetemperature solid oxide fuel cells（SOFCs）.

This study explores the challenges faced by congenitally blind individuals in navigating urban ***,this research investigates the factors that contribute to the construction of city mental mapping for individuals who are born ***-one congenitally blind individuals from the University of Jordan were asked to define and describe specific elements of the city based on their personal experiences and ***,participants were guided through two urban paths:familiar and *** participants were asked to complete a survey regarding their experiences during the *** collected data was analyzed by using thematic *** results revealed that congenitally blind individuals construct their mental image of the city by using their three senses of touching,hearing,and smelling,as well as their safety and *** mental image consists of five key elements:links,reference points,areas,separators,and *** the small size of the study sample and the specificity of the context,the results of this study will tremendously help planners in designing highly inclusive urban *** characteristics that can be recognized by the blinds will enhance their accessibility of urban spaces,encourage independent mobility,increase the quality of life and social inclusion for them.

Frequency of Rotavirus among under 5 Children Admitted to Wad Madani Pediatric Teaching Hospital with Diarrhea, Gezira State, Sudan (2021-2022)

Rotavirus is the leading cause of acute gastroenteritis and responsible for 20% of death in children under 5 years of age approximately 111 million episodes of gastroenteritis due to Rotavirus in under 5 children, which result in 25 million visits to clinic, 2 million hospitalization and 352,000 - 592,000 deaths. Children in the poorest countries account 82% of rotaviruses death. Diarrhea disease are major cause of death and disease among children under five years, a child on average suffers 2 to 3 attacks of diarrhea every year. Stools samples were collected from 196 children suffering from diarrhea and were tested for rotaviruses by immune chromatography test antigen (ICT-Ag), ELISA and RT PCR The data were analyzed using statistical package for the Social Sciences (SPSS). The results showed that prevalence of rotavirus was 26/196 (13.3%) by ICT Ag and ELISA and confirmed by RT-PC R. 87.8% of the children were vaccinated by Rota vaccine, 70% of their mothers not using soap for cleaning the children and thought diarrhea not infectious disease and believed it was caused by teething. In conclusion there was a decrease in prevalence of diarrhea by Rotavirus due to insertion of Rota vaccine in routine vaccination, rotavirus infection mostly occurs in poor family that not able to provide safe water and due to poor sanitation and low education of mother beside that some children suffered from malnutrition, so it recommended to incorporate ELISA as a diagnostic tool in routine diagnosis of rotavirus among children suffered from gastroenteritis.
