Microbiological Quality, Transmission of Resistant Bacteria, and Genetic Characterization in Fish Sold in Town Fairs in the Recôncavo da Bahia Region, Brazil

Informal fish marketing is an important source of food and income for many families. However, it is also a public health issue, since the quality of fish can be compromised during marketing. The microbiological quality of fish sold in town fairs in the municipalities of the Bahia Reconcavo region, Brazil, was assessed to characterize isolates based on antimicrobial susceptibility and to investigate gene virulence. Samples of mullets (Mugil sp.), mussels (Mytella sp.), and mollusks (Anomalocardia brasiliana) were collected in town fairs in the municipalities of Cachoeira, Cruz das Almas, and Santo Ant ?nio de Jesus. The presence of mesophylls, molds and yeasts, total coliforms, escherichia coli, and Staphylococcus aureus was evaluated. e. coli and S. aureus isolates were subjected to antimicrobial susceptibility tests and the presence of the gene stx in e. coli isolates was investigated. Total coliforms and S. aureus ranged between 0 and 9.50 log CFU/g, while high counts of mesophylls, molds, and yeasts were detected. e. coli had greater resistance (76.8%) to amoxicillin and S. aureus had greater sensitivity to gentamicin. The stx gene was not identified in any of the samples studied. Results showed that some fish sold in the town fairs of the three municipalities possessed unsatisfactory microbiological quality, which may pose risks to consumer health, and may be vectors for the dissemination of bacteria resistant to different antimicrobial agents.

The aim of the study was to examine microorganisms in samples of fermented milk beverage and water from dairy under state inspection. In a dairy located in the Recôncavo of Bahia, fifteen samples of fermented milk beverage were collected, corresponding to three different batches, and six water samples, two from each point of use in the industry: Point 1—Sanitary barrier;Point 2—Internal faucet for cleaning surfaces and utensils;Point 3—Drinking fountain for employees. All samples were submitted to microbiological research of total coliforms, Escherichia coli and Aeromonas spp. In the water samples, there was also quantification of heterotrophic bacteria and analysis of free residual chlorine. The fermented milk beverage samples did not show growth of total coliforms, E. coli and Aeromonas spp. With regard to water, no sample showed measurable levels of free residual chlorine, while in the microbiological analysis the count of heterotrophic bacteria in the drinking water exceeded the limit established by legislation (5.6 × 102 CFU.mL-1). In addition, the water from the sanitary barrier revealed total coliforms above the allowed value (1.3 × 101 CFU됔 mL-1) and showed contamination by Aeromonas spp. (7.0 × 101 CFUe="color:#4F4F

Growing concern to increase life expectancy has promoted several studies in the field of nutrition, especially those on food and their effects on the human body. Assays have been performed to improve their nutritional quality. In fact, there is considerable interest in encouraging development of new ingredients, with the innovation in food products and the establishment of new market niches for these ingredients. The global market for functional foods is growing and always envisages new products with functional technological and physiological characteristics. The petitsuisse cheese is a product of high nutritional value, rich in calcium, phosphorus and fat-soluble vitamins, with a high percentage of milk proteins, coupled to excellent digestion and assimilation by the human body. Current assay describes the production of a petit-suisse cheese to which was added the probiotic Lactobacillus casei BGP 93, and determines the physical, chemical and microbiological viability of lactobacilli in cheese during storage period. Levels of protein, fat in the dry extract, moisture and pH were analyzed for physical and chemical parameters;likewise, detection of coliforms, Staphylococcus, Salmonella, Listeria monocytogenes, and yeasts and molds was performed for microbiological parameters;monitoring of the viability of Lactobacillus casei BGP 93 during its life time was conducted. The petit-suisse cheese proved to be a good vehicle for the addition of probiotic microorganism. Lactobacillus casei remained viable during shelf life even with decreasing pH, and may be considered a functional product during 30 days of storage.

Since amateur fishing in fishponds has been on the increase in Brazil, there is a great concern on the microbiological quality of fish. One hundred and thirty-eight samples were collected during the dry and rainy periods in ten fish farms. Aeromonas spp. counts and tests for sensitiveness to antimicrobials were performed, coupled to the physical and chemical analyses of water. Tests revealed that 70% of samples were contaminated by Aeromonas spp., with water averaging 2.92 Log CFU/100 mL during the rainy period and 3.16 Log CFU/100 mL during the dry one. Fish contaminated by Aeromonas spp. averaged 2.58 Log CFU/100 mL during the rainy period and 3.53 Log CFU/100 mL during the dry one. Aeromonas spp. samples were multi-resistant to 2 or 8 antimicrobials in 62.5% of the samples. Ampicillin was the antimicrobial with the highest resistance percentage rate. Results showed that fish bred in amateur fish farms constituted a health risk for the population.

Tuberculosis and the taeniasis-cysticercosis complex, typical cases of zoonosis, have great importance for public health, since they cause economic liabilities to the Brazilian beef production chain. They are actually a synonym of technical inadequateness in Good Production Practices. Both diseases have existed since ancient times and their occurrence should be controlled by basic sanitary measures. However, there is a significant neglect attitude by authorities of countries with high occurrence rates, or rather, tropical underdeveloped nations, to focus on public policies for the control and decrease of the prevalence and the occurrence of these diseases. Current review elucidates the epidemiological profile of the diseases and contributes towards the elucidation and establishment of measures ensuring control.

Hygiene-sanitary conditions, the presence of Salmonella spp. and indicator microorganisms of chicken cuts sold on the market in the Rec?ncavo da Bahia area, are analyzed and their co-relationship with conditions of commercialization is verified. Sixty samples were collected between May and August 2016 at informal selling sites (fairs, butcher shops, abattoirs) and in supermarkets of ten municipalities of the Rec?ncavo da Bahia region. Hygiene and sanitary conditions were assessed through a check list. Total coliforms, escherichia coli, mesophylls, psychrotrophic organisms, molds and yeast, and Salmonella spp. were counted. Results revealed statistical difference for total coliforms and escherichia coli only, featuring greater concentration rates in fairs, butcher shops and abattoirs. Further, 31.7% of samples indicated 31.7% Salmonella spp. and 16.6% of samples failed to comply with sanitary legislation on escherichia coli. Observational analysis demonstrated that 61.83% and 38.1% of the samples respectively on informal sites and in supermarkets did not comply with legislation and indicated a co-relationship of some variables with the growth of total coliforms, escherichia coli and mesophylls. Pathogenic and indicator microorganisms suggest flaws in hygiene and sanitary conditions in the commercialization of chicken cuts and health risks to consumers.

High nutritional content coupled with low cost and ease of purchase justifies the frequent use of chicken eggs. even with technological innovations in the production, storage, and distribution of eggs, food poisoning continues to occur. Therefore, in the present study, we 1) evaluated the microbiological profile and the hygienic and sanitary quality of eggs commercialized in town fairs and markets and 2) verified whether there is any correlation between microbiological results and commercialization conditions. Thirty-six samples were collected from six municipalities in the region of Rec?ncavo from Bahia, Brazil. The hygienic and sanitary conditions were analyzed by quantifying the total coliforms, e. coli, mesophilic and psychrotrophic microorganisms, molds, and yeasts, and by the presence of Salmonella sp. The observational analysis showed that 91% and 68% of the samples in town fairs and markets, respectively, did not comply with the requirements of the current Brazilian legislation. There was no significant difference in the microbiological profile among samples from the fairs and markets. Several samples presented relevant significant values, indicating inadequate hygienic conditions and fecal contamination. Salmonella sp. was found in one sample. There was co-relationship between microorganism count and the variables “external dirt”, “external stains”, and “closeness to other products”, with high concentrations of total coliforms and e. coli in the non-conforming samples. Although no limits exist for mold and yeast counts, the presence of fungi makes the product unfit for consumption. Thus, the commercialization of eggs would benefit from more attention and supervision by the relevant authorities.

Background: Gastroesophageal varices are the most common and clinically important part of the portosys-temic collaterals due to their tendency to rupture and cause massive gastrointestinal bleeding. Objective The aim of this work was to evaluate retrospectively the incidence and the factors of prediction for the treatment of bleeding by gastroesophageal varices in the patients attended in the emergency Room of the Hospital State University of Campinas (Brazil) from the last ten years. Methods: The method used here consisted of a descriptive and retrospective study carried out from the analyses of the medical records of 769 patients with upper gastrointestinal bleeding of which 220 were admitted because of upper gastrointestinal bleeding caused by gastroesophageal varices during this same period. Results: The results showed that the gastroe-sophageal varices appeared in 28.6% of the patients and they were the second most common cause of upper gastrointestinal bleeding. While evaluating factors such as age, sex and the common individual records, it was proved that this disease occurs mainly among people between the third and the fifth decade of life, with the great majority of cases occurring in the fourth decade (29.2%), of which 76.8% were male. There was an association of hematemesis and melena in the admission of 57.7% of the patients and even ascites was a common diagnosis in 48.2% of them. Most of these patients (40%) were classified as Child class B at admis-sion. The early endoscopic exam was used for 96.8% of them and showed the presence of F3 varices in 38.5%, CB varices in 25.1% and RCS varices in 12.6%. Most of these varices (41.5%) were situated in the distal third of the esophagus. The most used pharmacological treatment was based on octreotide in 45.9% of the patients. They received 0.05 mg of intravenous octreotide and a maintenance dose of 1 mg per day in 98.6% of the cases, with efficacy in 74.2% of the patients. The tamponade with Sengstaken-Blakemo
