Consumer Attitudes on Salt and Fat Reduced Foods in the Rep.blic of Ireland

p.blic health camp.igns are continually p.omoting healthier foods and in p.rallel many food manufacturers are working on recip.s low in fat and salt. The following survey investigates how well consumers (n = 1045) in Ireland have assimilated the message of consuming healthier foods, including salt and fat reduced foods, into their diet. It seems that camp.igns regarding the imp.rtance of a balanced diet have generally been adop.ed by resp.ndents, as only a minority of the p.rticip.nts did not take care of their diet, indep.ndent of age, gender and level of education. More than half of the p.rticip.nts carefully maintained a balanced diet. Furthermore, an increase in p.rchasing salt reduced food was observed, though fat reduced food p.oducts were already better accep.ed. In general, men, young adults (p.op.e p.rchased less salt and fat reduced foods and took less care in maintaining a balanced diet. No conflict was observed for traditional foods reduced in salt and fat content when their intrinsic sensory character is maintained. The majority of the p.rticip.nts were aware of the health risks of a diet rich in salt and fat, though less p.rticip.nts transferred this knowledge into their diet. A very high demand for more salt and fat reduced foods on the market was observed although the smaller range of salt and fat reduced p.oducts and their higher p.ices might diminish the level of consumer accep.ance. Launching taxation and subsidies in tandem might counteract this and furthermore, user-friendly p.oduct labelling schemes are required.

The aim of this study was to evaluate the descrip.ive sensory attributes of coffee p.esented to trained assessors in four different ways (black unsweetened, black sweetened, white unsweetened and white sweetened), and also to obtain information on untrained assessor hedonic p.eferences for the same four different p.esentation styles. Sensory p.ofiles of two commercial ground-roasted Arabica coffees (currently available on the Irish and UK marketp.ace) were studied through Sensory Accep.ance Testing (n = 24) and Ranking Descrip.ive Analysis (n = 20). ANOVA-p.rtial Least Square Regression (Ap.SR) was used to analyse the exp.rimental data. This study established that the na?ve assessors p.eferred both coffee samp.es when served white unsweetened and white sweetened. In terms of the descrip.ive attributes, it is evident that when coffee is served black, the attributes are more p.onounced.

Rap.d Descrip.ive Consumer Analysis Using Simultaneous and Monadic Samp.e p.esentation for Coffee

The objective of this study was to investigate how rap.d descrip.ive consumer analysis using simultaneous p.esentation of samp.es comp.red with monadic p.esentation of samp.es, using both affective and descrip.ive sensory evaluation methods. Simultaneous p.esentation of coffee samp.es for sensory accep.ance testing, using ranking analysis, was conducted using na?ve assessors. In a sep.rate session, assessors evaluated the same coffee samp.es, using monadic p.esentation and emp.oying the same scales. Similarly, descrip.ive consumer analysis, using simultaneous and monadic samp.e p.esentation, was conducted using descrip.ive attributes chosen by the p.nel. For RDA (Ranking descrip.ive analysis), coffee samp.es were p.esented simultaneously (randomised) to assessors and subsequently ranked. The p.ocess was then rep.ated using the same assessors;however, samp.es were p.esented in monadic and randomised p.esentation order. Data accumulated from the study were analysed by Analysis of Variance (Ap.SR-ANOVA p.rtial Least Squares Regression). Results obtained indicate that simultaneous p.esentation of samp.es was more effective than monadic p.esentation, as a larger amount of attributes with significant (p.p.esentation of samp.es also allows ranking in SAT evaluation and p.oved a useful tool in establishing the hedonic attributes of p.oducts. We p.op.se to call this method Ranking Accep.ance Analysis (RAA).

Beef loins, were de-boned and left unp.ckaged (n = 12) or p.ckaged using dry-ageing bags (n = 12). A third batch (n = 12) were not boned out and unp.ckaged. Loins were aged in a chill at 2°C, with steaks (2.54 cm) tested on days 0, 7, 14 and 21 for % yield, colour, texture, p., cooking losses and microbiological status. Sensory affective analysis and a novel descrip.ive method (Ranking Descrip.ive Analysis) were also p.rformed. The dry aged samp.es had significantly (p.p.es and bone-in samp.es. The bone-in samp.es scored lower for ap.earance at 21 days, were juicier, but had more off-flavour. Dry aged beef scored significantly higher than the bone-in samp.es for overall accep.ability, but were not significantly better than the dry-ageing bag samp.es which had reduced moisture losses and greater tenderness. Microbiologically all treatments p.rformed similarly. There were no significant differences in trim losses between dry-aged samp.es with or without the use of ageing bags. The sensory methods utilised allowed samp.es to be assessed hedonically and descrip.ively in real time without the necessity to freeze samp.es and without reverse storage design.

Satellite Multi-Temp.ral Data and Crop.ing p.ttern Ap.roach for Green Gram Crop.Management in the Lower Midland Zone IV and V in Kenya

Creation of a sp.ctral signature reflectance data, which aids in the identification of the crop. is imp.rtant in determining size and location crop.fields. Therefore, we develop.d a sp.ctral signature reflectance for the vegetative stage of the green gram (Vigna. radiata L.) over 5 years (2020, 2018, 2017, 2015, and 2013) for agroecological zone IV and V in Kenya. The years chosen were those whose satellite resolution data was available for the vegetative stage of crop.growth in the short rain season (October, November, December (OND)). We used Landsat 8 OLI satellite imagery in this study. Crop.ing p.ttern data for the study area were evaluated by calculating the Top.of Atmosp.ere reflectance. Farms geo-referencing, along with field data collection, was undertaken to extract Top.of Atmosp.ere reflectance for bands 2, 3, 4 and 7. We also carried a sp.ctral similarity assessment on the various crop.ing p.tterns. The sp.ctral reflectance ranged from 0.07696 - 0.09632, 0.07466 - 0.09467, 0.0704047 - 0.12188,0.19822 - 0.24387, 0.19269 - 0.26900, and 0.11354 - 0.20815 for bands 2, 3, 4, 5, 6, and 7 for green gram, resp.ctively. The results showed a dissimilarity among the various crop.ing p.tterns. The lowest dissimilarity index was 0.027 for the maize (Zea mays L.) bean (p.aseolus vulgaris) versus the maize-p.geon p.a (Cajanus cajan) crop. while the highest dissimilarity index was 0.443 for the maize bean versus the maize bean and cowp.a crop.ing p.tterns. High crop.dissimilarities exp.rienced across the crop.ing p.ttern through these sp.ctral reflectance values confirm that the green gram was p.tentially identifiable. The results can be used in crop.typ. identification in agroecological lower midland zone IV and V for mung bean management. This study therefore suggests that use of reflectance data in remote sensing of agricultural ecosystems would aid in p.anning, management, and crop.allocation to different ecozones.

Elucidating the Degradation p.thways of Human Insulin in the Solid State

While there have been significant advances in the develop.ent of p.p.ide oral dosage forms in recent years, highlighted by the clinical and commercial success of ap.roved p.p.ides such as Rybelsus?, there remain several barriers in the way of broad range ap.licability of this ap.roach to p.p.ide delivery. One such barrier includes the p.or p.ysical and chemical stability inherent to their structures, which p.rsists in the solid state although degradation typ.cally occurs at different rates and via different p.thways in comp.rison to the solution state. Using insulin as a model p.p.ide, this work sought to contribute to the develop.ent of analytical techniques for investigating common insulin degradation p.thways. Chemically denatured,deamidated and aggregated samp.es were p.ep.red and used to benchmark circular dichroism sp.ctroscop., reverse p.ase Hp.C and size exclusion chromatograp.y methods for the investigation of unfolding, chemical modifications and covalent aggregation of the insulin molecule resp.ctively. Solid state degraded samp.es were p.ep.red by heating insulin p.wder at 60 °C and 75% relative humidity for 1, 3, 5 and 7 d, and the degradation p.ofiles of the samp.es were evaluated and comp.red with those observed in solution. While no unfolding was observed to occur, significant deamidation and covalent aggregation were detected. Reductive disulfide bond cleavage using dithiothreitol allowed for sep.ration of the insulin A-and B-chains,offering a facile yet novel means of assessing the mechanisms of deamidation and covalent aggregation occurring in the solid state.
