Effect of Radiant Energy Vacuum on Physical and Microbial Properties of Beef Jerky

To test the feasibility of radiant energy vacuum （REV） dehydration, a technology that couples microwave cooking with vacuum pressure, on beef jerky preparation, the physical and microbial properties of the final jerky product was compared to conventional preparation methods. Physical characteristics assessed using puncture and shear tests of samples prepared using REV dehydration compared to the traditional method were not statistically different （P 〈 0.05）. Moisture content and water activity levels were also very similar between the two products, To test microbiological quality, samples were homogenized in a stomacher and a variety of 3 M Petrifilms were used to evaluate the microbial load. Raw beef harboured low numbers of microbes, but the post-marination pasteurization/smoking step used in both treatments eliminated all culturable microorganisms tested for. To further investigate the ability of REV dehydration to kill microbes, samples were spiked with Listeria innocua after the pasteurization/smoking step but prior to REV dehydration. Samples were taken at different time intervals for microbial enumeration, and a decimal reduction time of 1 min was calculated, with 99.99% of 1.98 × 10^7 CFU g^-1 Listeria being killed in five min. Improved drying times were observed for jerky samples prepared using the REV method offering potential energy savings during jerky preparation.

The publication of the first study to use gene editing tech-niques in human embryos （Liang et al., 2015） has drawn outrage from many in the scientific community. The presti-gious scientific journals Nature and Science have published commentaries which call for this research to be strongly discouraged or halted all together （Lanphier et al., 2015; Baltimore et al., 2015）. We believe this should be ques- tioned. There is a moral imperative to continue this research.

Analyzing Virtual World Region Fidelity on Scalability and Simulation Performance

Virtual world simulation offers tremendous potential opportunities to improve, and optimize, individual and collective echelon training for the military. The US Army Research Laboratory (ARL) Military Open Simulator Enterprise Strategy (MOSES) project’s charter is to investigate simulation-based training technology for use in military specific training domains. Of particular interest are attributes of virtual worlds such as geographically distributed large-scale trainee support. We have initiated a series of experiments to determine appropriate benchmarks for simulator performance and to determine appropriate independent variables in order to create a robust predictive model that will enable virtual world training scenario designers to calculate, a priori, the number of trainees that may synchronously operate in a virtual world. The present paper’s purposes were to determine the effect that virtual world region fidelity had on server performance and determine whether this independent variable would be appropriate for inclusion into our predictive model. We found that region fidelity had a statistically significant effect on the simulator’s processor memory usage but had no significant effect on the simulator’s vertical scalability, CPU usage nor network performance. In this paper, we discourse on the purpose of this research, our experimental methodology and results, and discuss the significance of our findings.

A Clinical Dosimetry Analysis of Total Body Irradiation for Leukemia Patients

Background and Purpose: To perform a retrospective in vivo dosimetry study of 129 total body irradiation (TBI) on leukemia and bone marrow transplant patients treated in our clinic from 2008 to 2011 and to find out if there is any indication of the necessity of developing a new efficient TBI approach. Materials and Methods: The in vivo dosimetry data of 129 patients treated with TBI between 2008 and 2011 were retrieved from the database and analyzed. These patients were mostly treated with the regime of a single fraction or 6 fractions with some exceptions of 8-fraction or 2-fraction treatments depending on the protocols that were applied. For every fraction of treatment, 10 pairs of diode dosimeters were used to monitor the doses to the midline of head, neck, arms, mediastinum, left lung, right lung, umbilicus, thigh, knee, and ankle for both AP and PA fields. The doses to the midline of the above body parts were considered to be the average of the AP and PA readings of each diode pair. Dose deviation from the prescribed value for each body part was studied by plotting the histogram of the frequency versus deviation and comparing this with the dose delivered to the midline of the umbilicus to where the dose was prescribed. The correlation of dose deviation to body part thickness was also studied. By studying the dose deviations, we can find the uniformity of general dose distributions for conventional TBI treatments. Results: The retrospective dosimetry study of the 129 TBI patient treatments indicates that for most of the patients treated in our clinic, the doses received by different body parts monitored with in vivo dosimetry were within the window of 10% difference from the prescribed dose. The inhomogeneity of dose on different body parts could be manually improved by using compensators, but the method is cumbersome and time consuming. Virtual Music is about artificial creativity. Focusing on the author's Experiments in Musical Intelligence computer music composing program, the author and a distinguished group of experts discuss many of the issues surrounding the program, including artificial intelligence, music cognition, and aesthetics. The book is divided into four parts. The first part provides a historical background to Experiments in Musical Intelligence, including examples of historical antecedents, followed by an overview of the program by douglas Hofstadter. It includes, in sophisticated lay terms, relatively detailed explanations of how each step in the process contributes to the final composition. The fourth part presents the author's responses to these commentaries, as well as his thoughts on the implications of artificial creativity. AIM: To ascertain fine needle aspiration(FNA) tech-niques by endosonographers with varying levels of ex-perience and ***: A survey study was performed on United States based endosonographers. The subjects complet-ed an anonymous online electronic survey. The main outcome measurements were differences in needle choice, FNA technique, and clinical decision making among endosonographers and how this relates to years in practice, volume of EUS-FNA procedures, and prac-tice ***: A total of 210(30.8%) endosonographers completed the survey. Just over half(51.4%) identified themselves as academic/university-based practitioners. The vast majority of respondents(77.1%) identified themselves as high-volume endoscopic ultrasound(EUS)(> 150 EUS/year) and high-volume FNA(> 75 FNA/year) performers(73.3). If final cytology is non-diagnostic, high-volume EUS physicians were more likely than low volume physicians to repeat FNA with a core needle(60.5% vs 31.2%; P = 0.0004), and low volume physicians were more likely to refer patients for either surgical or percutaneous biopsy,(33.4% vs 4.9%, P < 0.0001). Academic physicians were more likely to repeat FNA with a core needle(66.7%) compared to community physicians(40.2%, P < 0.001). CONCLUSION: There is significant variation in EUS-FNA practices among United States endosonographers. Differences appear to be related to EUS volume and practice environment.
