负载肉桂醛-单宁酸纳米乳液的壳聚糖涂层的制备及其对冷鲜肉保鲜效果

为延长冷鲜猪肉货架期,制备了负载肉桂醛(Cinnamaldehyde,CIN)-单宁酸(Tannic acid,TA)纳米乳液的壳聚糖涂层(CS/CIN-TAs),并研究了该涂层对冷鲜猪肉保鲜效果的影响。结果表明,当TA和CIN的质量比为1:4时,纳米乳液(CIN-TAs)的平均粒径为212.60 nm,PDI值为0.365,形貌为球形,且在4℃条件下具有良好的贮藏稳定性。与壳聚糖涂层相比,CS/CIN-TAs对金黄色葡萄球菌(Staphyloccocus aureus)、大肠杆菌(Escherichia coli)和铜绿假单胞菌(Pseudomonas aeruginosa)的抑菌性能更好;且CS/CIN-TAs可以更显著地清除ABTS+和DPPH自由基。在贮藏过程中,CS/CIN-TAs可显著减缓感官评分值的降低,抑制pH、硫代巴比妥酸含量、挥发性盐基氮含量(TVB-N)和菌落总数的增加,保持肉色,并能明显抑制假单胞菌属的生长繁殖。在保鲜方面,TA和CIN具有协同效应,CS/CIN-TAs的作用具有浓度依赖性。当贮藏9 d后,冷鲜猪肉空白组的TVBN和总菌数分别为15.07 mg/100 g和6.36 lg CFU/g,均超过中国国标中的限值(15 mg/100 g和6 lg CFU/g)。而贮藏12 d后,CS/CIN-TAs组的TVB-N和总菌数仍然低于限值。负载肉桂醛-单宁酸纳米乳液的壳聚糖涂层可有效地延长冷鲜猪肉的货架期,具有良好的应用前景。

This study examines an incentive of the credit rating agency(CRA)to exert effort to observe projects’signals and strategically disclose ratings when the upfront fee and performance-based fee scheme are *** the upfront fee scheme,the CRA obtains an upfront fee in exchange for its services but gains a performance-based fee only if its ratings accurately foresee the rated project’s *** the setting,an issuer solicits a rating from the CRA,whose conduct of inflating and deflating ratings is *** addition,the CRA can endogenously exert effort to observe a project’s signal,which specifies the signal accuracy and how much operating costs the CRA *** receiving the observed signal,the CRA can strategically decide to announce a rating corresponding to or contradicting the observed *** findings reveal that the performance-based fee scheme incentivizes the CRA to exert greater effort and truthfully disclose a more accurate rating.

鱼袋保活中团头鲂存活率和肌肉品质的变化

为促进活鱼电商物流的发展，本实验采用鱼袋保活运输团头鲂，研究了保活条件对存活率的影响，以及保活过程中血液应激指标、肌肉品质的变化。结果显示，当运输环境温度为10°C，鱼和水质量比为1∶3，运输中使用水为曝气自来水时，鱼体存活率最高。在保活过程中，团头鲂血液的应激指标均呈现波动性变化趋势。但是整体上，皮质醇、尿素和丙二醛含量先增加后降低；乳酸脱氢酶含量先降低后增加；超氧化物歧化酶含量逐渐降低；过氧化氢酶、天冬氨酸转移酶和肌酐含量逐渐增加。在肌肉品质方面，白度值、剪切力、滴水损失整体上呈现先增加后降低的趋势；与0 h相比，保活72 h后粗蛋白、乳酸和糖原含量分别下降了19.0%、27.2%和50.0%；鲜味和苦味核苷酸类物质以及鲜度值K整体上均呈现逐渐增加的趋势；肌纤维间隙随保活时间的延长而逐渐增大。研究表明，在保活过程中，鱼体受到持续的应激，肌肉品质劣变。本研究可为鱼类的电商活运提供理论依据。

AIM: To prove that the terminal ileum is intussuscepted into the cecum creating the ileocecal junction,contrary to previous valvular concept which has been widely believed. METHODS: This study is based on gross and microscopic examinations of fresh specimens derived from colonic operations (right hemicolectomy or subtotal colectomy). Data compiled from observing and dissecting of specimens of seven patients are used to examine both gross and microscopic appearance of ileocecal junction. RESULTS: Intussusception of the terminal ileum was found in every specimen. However,the length of intussusception was different in each specimen. CONCLUSION: Gross and microscopic appearance studies suggest that the terminal ileum is intussuscepted into the cecum.

BACKGROUND Despite the infrequency of trocar site hernias(TSHs),fascial closure continues to be recommended for their prevention when using a≥10-mm *** To identify the necessity of fascial closure for a 12-mm nonbladed trocar incision in minimally invasive colorectal *** Between July 2010 and December 2018,all patients who underwent minimally invasive colorectal surgery at the Minimally Invasive Surgery Unit of Siriraj Hospital were retrospectively *** patients underwent cross-sectional imaging for TSH *** characteristics were *** rates of TSH and postoperative results were *** Of the 254 patients included,70(111 ports)were in the fascial closure(closed)group and 184(279 ports)were in the nonfascial closure(open)*** median follow up duration was 43 *** follow up,three patients in the open group developed TSHs,whereas none in the closed group developed the condition(1.1%vs 0%,P=0.561).All TSHs occurred in the right lower *** whose drains were placed through the same incision had higher rates of TSHs compared with those without the *** open group had a significantly shorter operative time and lower blood loss than the closed *** Routine performance of fascial closure when using a 12-mm nonbladed trocar may not be ***,further prospective studies with cross-sectional imaging follow-up and larger sample size are needed to confirm this finding.

改性魔芋葡甘聚糖的疏水性对鱼糜凝胶特性的影响

以接触角60.6°的魔芋葡甘聚糖(konjac glucomannan,KGM)为原料,制备脱乙酰魔芋葡甘聚糖(de-acetylated konjac glucomannan,DKGM)(接触角42.7°和53.5°)和羧甲基化魔芋葡甘聚糖(carboxymethlated konjac glucomannan,CKGM)(接触角68.5°和72.7°),研究改性KGM的疏水性对白鲢鱼糜凝胶特性的影响。结果表明:添加KGM的鱼糜凝胶的白度为78.20,添加DKGM、CKCM组分别为76.77~76.83和75.75~75.97;添加DKGM鱼糜凝胶的凝胶强度相比KGM组分别提升50%、73%,而添加CKGM鱼糜凝胶强度则分别提升60%、43%;硬度、弹性、内聚性、咀嚼性、回复性和持水性的变化与凝胶强度的变化趋势一致;随着疏水性的增大,DKGM鱼糜凝胶的化学作用力增强、α-螺旋相对含量降低、β-折叠相对含量增加、肌球蛋白的热稳定性增加、网络结构更为致密,CKGM鱼糜凝胶以上特性的变化趋势与DKGM相反。综上,KGM的改性方式和疏水性共同影响鱼糜凝胶特性。
