[目的]本文旨在阐明不同热处理方式(烤制、炸制、煮制、煎制、高压炖煮)鸭胸肉经不同时间冻藏(-20℃,分别贮藏0、10、20、30、40 d)后,氧化(脂质和蛋白质氧化)与蛋白质结构改变对羧甲基赖氨酸(CML)形成的影响。[方法]采用酶联免疫、多光谱分析、相关分析等技术方法测定经热/非热处理鸭胸肉冻藏期间的脂质氧化、游离氨基、表面疏水性、内源性色氨酸和蛋白质氧化等指标,探究冷冻贮藏对鸭肉肌原纤维蛋白(MP)结构修饰及CML形成的关联机制。[结果]在40 d、-20℃的冻藏条件下,各组冻藏过程中游离态和结合态CML生成量不同,主要受到蛋白质氧化聚集和脂质氧化的影响。在冻藏过程中CML生成量主要与羰基含量、总巯基含量、脂质氧化显著相关(P<0.05)。与其他组相比,高压炖煮组在冻藏期间CML含量最高,炸制与高压炖煮促进鸭胸肉蛋白质羰基化并导致其结构改变,烤制和煮制组促进脂质氧化进程。[结论]热加工肉经冻藏后促进蛋白质分子降解、二次聚集、开链等行为,从而影响CML生成量。

This study mainly monitored the dominant bacterial populations and identified the spoilage-related microorganisms of braised chicken meat stored under different CO_(2)-modified atmosphere packaging(MAP)during refrigerated storage using a culture-dependent method and 16S rDNA *** quality changes and shelf life of the meat were also *** growth rate of total viable count(TVC)in braised chicken was slower with an increase of CO_(2) content in MAP,which also occurred in the remaining bacterial species monitored(lactic acid bacteria,Pseudomonas spp.,Brochothrix thermosphacta).The MAP exerted beneficial effects on the quality of braised chicken,as demonstrated by retarding the production of total volatile basic nitrogen(TVB-N)and delaying lipid oxidation(TBARS test).A total of 14 isolates were identified from braised chickens with different packaging at the end of storage,these included ***(6 isolates),***(2 isolates),Enterococcus faecalis(3 isolates),***(2 isolates),Staphylococcus equorum(1 isolate).

Stress field plays a key role in geodynamics. In this study, an algorithm to determine the stress tensor and its confidence range from focal mechanism data by using grid search method was proposed. The experiment uses artificial focal mechanism data which were generated by extensional, compression and strike-slip stress regime and different level of noise, shows that the precision of the estimated stress tensor based on this algorithm is greatly improved compared with traditional algorithms. This algorithm has three advantages：（1） The global optimal solution of the stress tensor is determined by fine grid search of 1o×1o×1o×0.01 and local minimum value is avoided; （2） precision of focal mechanism data can be considered, i.e., different weight of the focal mechanism data contributes differently to the process of determining stress tensor; （3） the confidence range of the determined stress tensor can be obtained by using F-test. We apply this algorithm in the boundary zone of China, Vietnam and Laos, and obtain the stress field with SSE-NNW compressive stress direction and NEE-SWW extensional stress direction. The stress ratio is 0.6, which shows that the eigen values of the stress tensor are nearly in arithmetic sequence. The stress field in this region is consistent with the left-lateral strike slip of the Dienbien-Lauangphrabang arc fault. The result will be helpful in studying the geological dynamic process in this region.

This study investigated the effect of different dielectric barrier discharge cold plasma(DBD-CP) treatment voltages on the microbiological growth and quality characteristics of braised chicken during storage at(4 ± 1) ℃. Argon-packed samples were subjected to DBD-CP treatment for 3 min at voltages of 50, 60 and 70 k V. As a result, there was no significant(P > 0.05) difference in L*, a*, b* and p H of braised chicken between control and treatment groups at the same storage time. However, the development of lipid oxidation in DBD-CP treatment samples was slower than that in air-packed samples. Compared to air-packed samples, the reduction of total viable count, yeasts and molds, lactic acid bacteria and Pseudomonads spp. in 70 k V treated samples on day 15 were 3.21, 2.41, 2.44 and 1.96 lg(CFU/g), respectively. The results indicate that DBD-CP treatment could extend the shelf life of braised chicken without negative impacts on quality characteristics.

目的探究单孔全胸腔镜(complete video-assisted thoracoscopic lobectomy,cVATS)解剖性肺段切除术治疗早期非小细胞肺癌(non-small cell lung cancer,NSCLC)的效果。方法方便选取2021年1月—2023年12月沭阳县中医院收治的86例NSCLC患者为研究对象,依据治疗方法分为对照组(n=43)与观察组(n=43),分别给予单孔cVATS解剖性肺叶切除术治疗和单孔cVATS解剖性肺段切除术治疗。比较两组手术指标、肺功能、临床疗效及并发症发生情况。结果观察组术中出血量、术后引流量少于对照组,手术时间更长,拔管及住院时间更短,差异有统计学意义(P均<0.05)。术后,观察组肺功能指标优于对照组,差异有统计学意义(P<0.05)。观察组治疗总有效率为93.02%(40/43),高于对照组的72.09%(31/43),差异有统计学意义(χ^(2)=6.541,P<0.05)。观察组并发症总发生率为4.65%(2/43),低于对照组的18.60%(8/43),差异有统计学意义(χ^(2)=4.074,P<0.05)。结论经单孔cVATS解剖型肺段切除术治疗有效减轻患者肺组织损伤,且出血量和并发症较少,可促进NSCLC患者尽早康复,效果显著。

A dense seismic network was installed in the capital region of China in recent years,which makes it possible to resolve the focal mechanisms of small earthquakes. We gathered large earthquake focal mechanisms from the last fifty years and moderate or small earthquake focal mechanisms from between 2002 and 2004,and calculated the present tectonic stress field of the capital region by the grid search method, which weighs different sized earthquakes and can improve the accuracy of the stress field inversion. The analysis of inversion results of different sub-regions shows that the azinuth of the maximum principal compressive stress axis is NE43°- 86° in the Beijing-Zhangjiakou-Datong area,NE38°-86° in the Tangshan area,and NE79°- 81° in the Xingtai area. Inversion results of this paper are similar to previous results,which proves the correctness of the approach. As revealed by the results,the stress field of the capital region is characterized by overall consistency and sub-regional differences. This study provides reference for earthquake mechanism explanation and geodynamics research.

地下水环境问题会导致可利用的地下水资源减少、地下水环境的恶化,从而对人类生活和环境造成严重影响。采用资料收集、开展水文地质调查、评价分析等方法,查明研究区地下水水文地质条件变化特征和矿区水文地质特征,分析地下水环境产生影响的各种因素。研究表明,由于煤矿开采导致地下水水位下降,已造成局部地区地下水径流场发生改变;水位下降导致河渠及泉水排泄地下水的形式消失;目前地下水位降落漏斗仍在扩大,郇封漏斗与温孟漏斗有相互连通而成为一个大复漏斗的趋势;煤矿开采致使地下水水质污染有向“深度”扩展的趋势;矿区排水造成疏干区扩大会进一步加剧诱发地面沉陷(塌陷)问题的产生。研究结果为保障水资源的可持续利用、促进经济、社会和环境的协调发展提供了科学依据。

Co-seismic fault geometry and slip distribution of the 26 December 2004, giant Sumatra–Andaman earthquake constrained by GPS, coral reef, and remote sensing data

We analyze co-seismic displacement field of the 26 December 2004, giant Sumatra–Andaman earthquake derived from Global Position System observations,geological vertical measurement of coral head, and pivot line observed through remote sensing. Using the co-seismic displacement field and AK135 spherical layered Earth model, we invert co-seismic slip distribution along the seismic fault. We also search the best fault geometry model to fit the observed data. Assuming that the dip angle linearly increases in downward direction, the postfit residual variation of the inversed geometry model with dip angles linearly changing along fault strike are plotted. The geometry model with local minimum misfits is the one with dip angle linearly increasing along strike from 4.3oin top southernmost patch to 4.5oin top northernmost path and dip angle linearly increased. By using the fault shape and geodetic co-seismic data, we estimate the slip distribution on the curved fault. Our result shows that the earthquake ruptured ＊200-km width down to a depth of about 60 km.0.5–12.5 m of thrust slip is resolved with the largest slip centered around the central section of the rupture zone78N–108N in latitude. The estimated seismic moment is8.2 9 1022 N m, which is larger than estimation from the centroid moment magnitude（4.0 9 1022 N m）, and smaller than estimation from normal-mode oscillation data modeling（1.0 9 1023 N m）.
