Physicochemical investigations were performed on seeds of Nymphea lotus and N. micrantha consumed in the Senegal River valley. They revealed a composition similar to that of cereals. In order to estimate their intrinsic quality, the determination of their amino acid, fatty acid and monosaccharids profiles was done. The results indicate that monosaccharides are represented specifically by saccharose (7%) and glucose (0.67%);a predominance of stearic acid and linoleic acid as unsaturated acids (24.86%);arachidic and palmitic acids as the only saturated acid found (11.12%);a good ratio of unsaturated/saturated acid (2.23);a lack of oleic acid, linoleic, palmitoleic, myristic, caprylic acids;a poor-quality index protein due to low quantity amino acids. Nevertheless, all essential amino acids are present in the seeds. The Nymphea sp grains consumed by the populations around the Senegal River valley offer an interesting nutritional quality linked to fatty acids and carbohydrates.

Introduction: The SARS-CoV-2 infection is a major public health emergency. Several risk factors are involved in the occurrence of respiratory distress that can lead to death despite resuscitation measures. Objectives: The aim of this study was to describe the epidemiological, clinical, paraclinical, therapeutic, and evolution profile of patients infected with SARS-CoV-2 hospitalized at the CTE of Saint-Louis (Senegal) during the first two waves. Patients and Methods: We conducted a retrospective, cross-sectional, descriptive, and analytical study that included all patients hospitalized at the ETC of Saint-Louis (Senegal) with SARS-CoV-2 infection from March 2020 to April 2021. Results: A total of 358 cases were collected, 256 (71.5%) during the first wave and 102 (28.5%) during the second wave. The mean age was 49.5 years (19.5). There was a male predominance (58.4%), with a sex ratio of 1.4. Hypertension was the main comorbidity, with 87 cases (24.3%). The most common functional signs were cough in 194 cases (54.2%), dyspnea in 143 cases (40%) and ageusia in 134 cases (37.4%). Thoracic CT scans were performed on 20 patients (5.6%), with severe involvement (50% - 75%) observed in 50% of cases. Hydroxychloroquine-azithromycin was prescribed to 351 patients (98%). Overall, 338 (94.4%) recovered and 17 (4.7%) died. In multivariate analysis, factors associated with death were male sex [OR = 2.645;95% CI: 1.530 - 4.785;p = 0.011], age 60 years [OR = 1.039;95% CI: 0.564 - 1.914;p = 0.002], the presence of comorbidities [OR = 2.171;95% CI: 0.564 - 3.429;p = 0.033], SpO2 (ambient air) 95% [OR = 2.061;95% CI: 0.616 - 3.827;p = 0.03], acute respiratory distress syndrome (ARDS) [OR = 0.635;95% CI: 0.316 - 1.275;p = 0.001], severe form [OR = 1.664;95% CI: 0.298 - 2.478;p = 0.016], occurrence of complications [OR = 0.521;95% CI: 0.287 - 0.944;p = 0.032], high creatinine levels [OR = 2.061;95% CI: 1.616 - 3.827;p = 0.026], and lymphopenia [OR = 0.485;95% CI: 0.370 - 0.636;p = 0.0

Introduction: COVID-19 is a global public health emergency that can cause acute respiratory distress syndrome. In countries where tuberculosis (TB) is endemic, coinfection of COVID-19 and TB is often encountered, which increases the risk of developing severe forms of COVID-19. Objectives: The aim of this study was to determine the prevalence of COVID-19/TB coinfection at the Epidemic treatment center (ETC) in Saint-Louis (Senegal) and to describe the epidemiological, clinical, paraclinical, and outcome profile of co-infected patients. Patients and Methods: This is a retrospective, cross-sectional, descriptive cohort study based on the records of COVID-19/ TB co-infected patients who were hospitalized at the ETC in Saint-Louis (Senegal) over an 18-month period from March 2020 to September 2021. Results: Out of a total of 454 hospitalizations, we collected records of 9 patients co-infected with COVID-19/TB, resulting in a prevalence of 2%. The study included patients with a median age of 34 years (range: 10-86 years), with a male predominance (7 cases) and a sex ratio of 3.5. The majority of patients (88.9%) had severe forms of COVID-19. Dyspnea and cough were reported in all patients (100%). Pulmonary TB was the most frequent localization, with 9 cases. The diagnosis of COVID-19 was confirmed by nasopharyngeal PCR in all patients (100%). Bacilloscopy was positive in 3 out of 5 cases. One patient tested positive for GeneXpert? MTB/RIF without rifampicin resistance. All patients were prescribed the hydroxychloroquine-azithromycin combination and anti-tuberculosis treatment. Out of the nine patients, four recovered (44.4%) and five died (55.5%). Conclusion: COVID-19/TB coinfection had a low prevalence in our cohort, but was associated with a high mortality due to the frequent occurrence of severe forms of the disease.

Poisson Process and Its Application to the Storm Water Overflows

The homogenous Poisson process is often used to describe the event arrivals. Such Poisson process has been applied in various areas. This study focuses on the arrival pattern of storm water overflows. A set of overflow data was obtained from the storm water pipeline of a municipality. The aim is to verify the overflow arrival pattern and check whether the Poisson process can be applied. The adopted method is the analysis over the inter-arrival times. The exponential distribution test is conducted on the annual data set as well as the entire data set. The results show that all data sets follow the exponential distribution. With the verification of Poisson process, specific examples are also given to show how the Poisson process properties can be used in the management of storm water pipeline management. For other data that are featured with various heterogeneities, the homogenous Poisson process might not be able to be verified and used. Under such circumstances, non-homogenous survival model can be used to simulate the arrival process.

This paper develops an information theoretic estimator of wage and employment shifts that provides quantification of and inference about type of employment (full time, part time, seasonal, unemployed) and industry share of employment. It is applied to determine the effects of two United States Agency for International Development (USAID) projects on employment in villages in the Tambacounda and Kedougou provinces in Senegal. The projects support the development of local forest-based production and processing industries. The results demonstrate statistically significant and positive effects on employment and the industry composition of employment.

Studies conducted in the delta and lower valley of Senegal river have demonstrated through ethnobotanical surveys, the importance of Nymphaea lotus L. and Nymphaea micrantha Guill. et Perr in the diet and in the pharmacopoeia. The seeds are used with good appreciation by the indigenous population as a welding food. But studies addressing their biochemical and nutritional aspects are still very rare in the literature. This study was initiated in order to fill this gap and allow a better appreciation of the nutritional and energetic potentialities of these seeds. For this purpose, seeds were collected in effluent from the Senegal River, dried in the shade and put into three different batches: a batch of red seeds of N. lotus, a batch of Black seeds of N. lotus and a batch of seeds of N. micrantha. The biochemical analyses gave their moisture content (9.17% ± 0.2% to 13.36% ± 3.46%), aw (0.46% to 0.71%), protein (7.90% ± 1.25% to 8.24% ± 0.5%), lipid (2.32% ± 0.45% to 4.29% ± 1.0%), carbohydrate (74.49% ± 0.9% and 77.66% ± 1.65%), mineral matter (1.77% ± 0.06% to 2.55% ± 0.08%). All three types of seeds have high levels of potassium (481.10% ± 17.62% to 770.81% ± 42.33%), magnesium (312.71% ± 14.08% to 518.67% ± 15.23%) and calcium (188.81% ± 8.52% to 296.52% ± 16%. Their energy values (350.54 ± 15.21 kcal/100g to 375.7 ± 3.48 Kcal/100g), are closed to other cereals consumed in the human diet in Senegal. Therefore, these seeds offer the opportunity to diversify the diet in the delta and lower valley of the Senegal River.

This work proposes to compare the extraction of total polyphenols and the coloring obtained after several series of decoction at 100°C/20min, of whole or crushed leaves of Combretum micranthum. The total phenolic content of the extracts obtained after decoction was determined by Folin’s method. The color parameters were measured using a colorimeter based on the CIELAB system. The analysis of variance (ANOVA) shows significant differences (p 0.05) on different parameters evaluated. The Minitab 19 software was used to classify the extracts according to the color parameters (L, A, and B). The results showed that the maximum of polyphenols (21.67%) was extracted in the crushed leaves after three series of decoctions while with the whole leaves the maximum of 16.17% is obtained after six series of decoctions. The concentration of total polyphenols becomes low from four series of decoctions with 0.146 g·AG·100 g-1 MS. The red and yellow coloring drops respectively by 85 and 69% with crushed leaves and 64 and 21% with whole leaves. The conductivity and the brix of the extracts fall according to the series of decoctions. These results show that for optimal use of C. micranthum leaves in traditional medicine, crushed leaves and three series of decoctions are indicated and sufficient.

Highly prized by consumers, watermelon is rich in water, but also in micronutrients including lycopene, pigment responsible for the red color. Tiger nut (Cyperus esculentus) is an underutilized tuber and a non-conventional oil seed which are known for their biological effect. The transformation of tubers into nutritional and stable flour could be important for West Africa populations. Thus, roasting is a process that improves the biochemical composition of seeds. The purpose of this study was to optimize temperature and roasting time on Tiger nut’s tubers in order to produce high nutritional tiger nut flour. A response surface methodology was used to optimize the roasting process in a temperature range (130°C - 150°C) and in a duration range (20 - 35 min). The data are processed by the software Statgraphic Centurion XVI version 16.2.04. Total polyphenols and flavonoids contents, antioxidant activity, titratable acidity, browning index and Maillard reaction products absorbance were evaluated. A second-order polynomial model was established to predict optimal values, included temperature and time. The contents of polyphenols and flavonoids range respectively from 0.196 to 0.891 g GAE/100g and from 0.022 to 0.051 g CE/100g, the antioxidant activity ranges from 25.21 to 57.09%, titratable acidity varies between 0.193 and 0.472 g/100g, the browning index from 28.42 to 56.20 and the absorbances at 420 nm of Maillard Reactions Products ranged between 0.365 and 0.897. The global desirability was 90%. Roasting had significant effects (p 0.05) on titratable acidity, browning index and antioxidant activity. The optimum roasting conditions were established at the temperature of 147°C for 38 minutes. Experimental values of parameter for flour obtained in optimal condition were proximate to predict values excepted titratable acidity. The model performance is acceptable for this study. The research for the optimal roasting conditions for tiger nut reveals an appropriate temperature and time combination which could improve the biochemical composition with a more attractive color.
