Effect of sodium replacement on the quality characteristics of past?rma(a dry-cured meat product)

This study aims to investigate the effect of sodium replacement on the quality characteristics of past?rma. For this purpose, past?rma production with four different salt mixtures(Ⅰ. 100% Na Cl; Ⅱ. 50% Na Cl + 50% KCl; Ⅲ. 40% NaCl + 40% KCl + 20% CaCl2; Ⅳ. 30% NaCl + 40% KCl + 20% CaCl2+ 10% MgCl2) were carried out using traditional method. The use of different salt mixtures for past?rma had no statistically significant effect on the microbial counts and residual nitrite of the final product. The a* and b* values were affected by this treatment. The salt mixture containing CaCl2or CaCl2+ MgCl2significantly decreased the p H values and sensory scores. The eighteen volatile compounds were affected by the salt mixtures. Na~+, K~+, Ca2+, and Mg2+had a certain increase depending on their ratio in the salt mixtures. The highest Cathepsin activity in all past?rma samples was observed in Cathepsin B + L. The salt mixture with NaCl + KCl + CaCl2+ Mg Cl2increased acid lipase activity. However, this mixture had no significant effect on neutral lipase activity.

Liquid-liquid interracial tension in binary and temary Al-based monotectic systems has been determined experimentally with a tensiometric method in a wide temperature interval. The temperature dependence of the interfacial tension is well described by a power law function of the type σαβ - （1 - T/Tc）δ with the critical exponent δ= 1.3 and a critical temperature Tc. Theoretical models describing the liquid-liquid interface in monotectic alloys and their applicability for calculation of the interfacial tension and its temperature dependence in binary systems are considered.

Liquid-solid phase separation of permalloy in liquid Mg results in selectively dissolved Ni,which provides a unique opportunity for the design of immiscible heterogeneous composite materials and the comprehensive metal recycling of permalloy scraps.A guideline of the alloy design for the liquid-solid phase separation system was *** effects of immersion temperature and time on the Ni extraction were studied by an experimental *** diffusion behavior of Ni from the permalloy to liquid Mg and the microstructure evolution in the permalloy during the liquid-solid phase separation were *** results show that the Ni in the permalloy was quickly extracted into the liquid Mg and formed an Mg-Ni alloy,while the other components such as Fe,Co,and Mn were held back in the phase-separated *** phase-separated permalloy with the solidified Mg exhibits a three-dimensional(3D)Fe/Mg bicontinuous composite ***,simple treatments were carried out for the reaction products such as the Fe/Mg bicontinuous composite and the Mg-Ni alloy,and the recycling strategies for functionalization of these treated reaction products were provided.A 3D porous Fe-based alloy with electromagnetic interference(EMI)shielding efficiency of 52 dB can be obtained if Mg is removed from the Fe/Mg bicontinuous *** of the complete separation of pure Ni from the recycled Mg-Ni alloy by vacuum distilling,the Mg-Ni alloy can be enriched into Mg2 Ni as an initial hydrogen storage material.
