Phytin impa.r. ga.tr.intestina. r.cover. of a.wide a.0}a. of nutr.ents, the effect va.0}ing with the nutr.ent concer.ed. On exposur. to low pH dur.ng ga.tr.c digestion, phytin dissocia.es into phytic a.id a.d solubilized Ca.2+ .
